Steps:
- Line 2 cookie sheets with parchment paper. With a hand mixer, beat frosting, powdered sugar, and vanilla in large bowl until smooth. Using a tablespoon measuring spoon or a 1-ounce cookie scoop, form into balls and place on cookie sheet. Dust truffles with cocoa powder. Cover and refrigerate truffles until ready to serve.
NO BAKE CHEWY TRUFFLE COOKIES
These chewy sweet cookies start with dried dates for a natural sweetness, instead of the traditional combination of milk and sugar, and then get mixed with some cocoa, reduced-fat peanut butter and ground whole wheat graham crackers for a quick satisfying treat.

Steps:
- 1. Combine the dates, water, and lemon juice in a medium saucepan. Simmer over medium heat breaking up any large pieces of dates with a spoon, until the mixture resembles a thick paste, 15 to 20 minutes. Stir in the honey, peanut butter, cocoa powder, butter and salt until evenly combined. Stir in the graham crackers and oats. Remove from heat.
- 2. Lightly mist a baking sheet with cooking spray. Drop level tablespoons of the cookie mixture onto the prepared pan. Refrigerate until just chilled and set, about 20 minutes.
- 3. Put desired optional toppings in small bowls. Roll each cookie in desired topping and flatten slightly into a plump disk. Cover and refrigerate until firm. Serve chilled.

These taste like Peanut Butter cups. They are fun to make and kids really get a kick out them. A bit time consuming, but the end-product is worth it.

- Beat the peanut butter and butter with an electric mixer in a large bowl until smooth. Beat in the sugar and vanilla. Cover and refrigerate for 30 minutes. Roll chilled dough into small, eyeball-sized balls and place on 2 baking sheets lined with wax paper. Refrigerate for another 30 minutes.
- Melt the white chocolate and shortening in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1 to 3 minutes (depending on your microwave). Do not overheat or chocolate will scorch. Dip each eyeball into the white chocolate and transfer to the waxed paper until the chocolate has set. You can chill them in the refrigerator.
- Stir a few drops of blue food coloring into the remaining melted white chocolate. Make a round "iris" on the top of the cooled eyeball and press a mini chocolate chip in the center for a "pupil." For an extra spooky bloodshot eyeballs take a toothpick dipped in red food coloring and make squiggly lines on the eye.

- Pour the cream into a pan and bring just to the boil. Put the chocolate in a large bowl, then pour over the hot cream. Stir until the mixture is smooth and all the chocolate has melted. Leave to cool, then transfer to the fridge and chill for 2 hrs, or until solid.
- Scoop out a teaspoonful of the mixture, poke a caper, sweet or piece of olive into the centre and roll into a walnut-size ball with your hands. Repeat with the remaining fillings, then roll the remaining mixture into balls without any filling. Roll the truffles in cocoa or sprinkles. Chill until ready to serve.

- Preheat oven to 420 degrees F. Thaw puff pastry in refrigerator
- For the filling: Melt butter in a pan. Add the apples and toss so they are covered with the melted butter. Add brown sugar, rum extract, pumpkin pie spice and apple cider. Stir over heat until thick.
- Lay 1 sheet of puff pastry flat on a cutting board. Cut puff pastry with Halloween shaped cookie cutters like bats, pumpkins and ghosts. Place cutout shapes on an ungreased cookie sheet. Make sure there is enough room between shapes for them to puff-up. Bake in the oven for 20 minutes.
- When puff pastry has been baked carefully cut each shape in half like a sandwich. Spread apple butter on bottom half of puff pastry. Layer apple filling on top of the apple butter. Put whipped topping on top of apple filling. Place top half of puff pasty on whipped cream to complete the sandwich. Sprinkle with powdered sugar.
