TRADITIONAL SWISS FONDUE

The closest you can get to traditional Swiss fondue, without boarding a plane. Say cheese!

Number Of Ingredients 23

1 large garlic clove, halved
1 cup dry or off-dry white wine, we like Pouilly-Fuissé
3 TBSP lemon juice
1 cup shredded gruyère cheese
1 cup shredded Emmentaler cheese
2 tsp cornstarch
1 TBSP Kirsch (optional, see note below*)
Salt and white pepper
32 oz broth (beef chicken or vegetable, you choose!)
1 head garlic sliced in half
1/2 cup water
1 tbsp soy sauce
1 tbsp Worcestershire sauce
1 bay leaf
1 tsp ground black pepper
Sliced RAW accompaniments (see below!)
1/2 cup heavy whipping cream
1 bag of semisweet chocolate chips
1 TBSP unsalted butter
3 TBSP unsweetened cocoa powder
1/4 tsp vanilla extract
1/4 tsp ground cinnamon

Steps:

  • Step 1 Rub the inside of a small saucepan with the cut garlic cloves, and then discard them. Adjust the saucepan to medium heat. Add the wine and lemon juice, and bring to a simmer. Step 2 Gradually add the cheese and the cornstarch, stirring constantly. Step 3 Add the Kirsch, if using, and stir constantly with a wooden spoon in a "figure eight" motion until the mixture has thickened, about five minutes. Step 4 Preheat your fondue pot, season the cheese with salt and pepper to taste, and then transfer to the fondue pot. Serve with cubed bread and assorted accompaniments (see below for ideas!)
  • Step 1 In a fondue pot, combine all broth, garlic, water, soy sauce, Worcestershire, bay leaf, and black pepper. Bring to a simmer. Step 2 Dip meats and seafood and leave in broth until fully cooked thru. Pair with sauces, suggestions below.
  • Step 1 Heat 1/2 cup cream in a heavy saucepan over medium heat until cream comes to a low boil. Remove the pan from the heat and whisk in chocolate. Stir in butter, cocoa powder, vanilla and cinnamon. Step 2 Transfer to a fondue pot Step 3 keep warm, stirring occasionally. If fondue becomes too thick, stir in more cream, 1 tablespoon at a time, to desired consistency. Step 4 Serve with your favorite dessert dippers, see below for suggestions.

8 ounces raclette or Swiss cheese, grated
8 ounces Gruyere cheese, grated
2 tablespoons cornstarch
1 cup sauvignon blanc or other dry white wine
1 clove garlic, pressed
Zest of 1 lemon
1 tablespoon kirsch
1/2 teaspoon freshly ground black pepper
1/4 teaspoon dry mustard
Crusty Bread, recipe follows, for serving
2 Granny Smith apples, sliced, for serving
2 pears, sliced, for serving
1 loaf crusty bread

Steps:

  • Combine the raclette and Gruyere in a bowl and add the cornstarch. Toss well to coat the cheeses in the cornstarch; set aside.
  • In a pot over medium heat, warm the wine, garlic and lemon zest. Do not allow this to come to a boil or the fondue may be grainy in the end.
  • Slowly add the cheese mix a handful at a time, stirring and allowing each handful to melt completely before adding the next. Repeat until all the cheese is in the pot. Once completely smooth, stir in the kirsch, pepper and mustard. Pour the mixture into a fondue pot with a burner underneath to keep warm. Serve with Crusty Bread, apples and pears.
  • Preheat the oven to 350 degrees F.
  • Put the loaf of bread on a baking sheet and bake for 15 minutes to crisp. Allow to cool, then tear into chunks for serving. Set aside.

CLASSIC FONDUE WITH FRUIT, VEGETABLES AND BREAD

1 garlic clove
1 1/2 cups dry white wine
1 pound Gruyere, grated
1 tablespoon cornstarch
1 scratch fresh nutmeg
1 teaspoon sea salt
1/2 teaspoon black pepper
1/2 pound assorted fruit, cleaned
1/2 pound assorted vegetables, cleaned
1/2 loaf baguette, cut in cubes

Steps:

  • Preheat fondue pot.
  • Rub the inside, bottom and sides of a medium saucepan with the clove of garlic. Set the garlic aside. Heat the pan over medium-high heat. Pour in the white wine and turn the heat to high. Bring to a boil and turn heat down to simmer the wine. In a bowl, toss the cheese with the cornstarch until the cheese is completely coated. Slowly add in the cheese and stir with a wooden spoon until the cheese is melted thoroughly, about 3 to 4 minutes. With a fresh nutmeg and a nutmeg grater or box grater, scratch a pinch of nutmeg into the melted cheese and stir. Season with salt and pepper and pour into the fondue pot. Serve immediately with the fruit, vegetables and bread.

  • Rub the inside of a saucepan with a garlic clove; leave the garlic in the pan. Add 1 cup dry white wine and 1 tablespoon plus 2 teaspoons lemon juice; bring to a simmer over medium heat. Toss 1 pound shredded gruyere or other melting cheese (see below) with 2 tablespoons flour or cornstarch; gradually add the cheese to the pan, stirring until melted before adding more. Discard the garlic and season the fondue with nutmeg and cayenne pepper. Transfer to a fondue pot or a slow cooker set to low. Serve with bread or other dippers.

4 slices extra-lean bacon, finely chopped
1 small sweet onion, finely chopped
1 tablespoon all-purpose flour
1 cup lager beer
1 cup grated havarti cheese
1 cup grated gouda cheese
sweet and sour gherkin, rye bread cubes

Steps:

  • Melt butter in a medium-sized heavy saucepan. Saute bacon and onion together until bacon is crisp and onion is golden. Add flour and cook for 2 minutes, stirring often. While continuing to stir, slowly add the beer and cook until sauce is smooth and thickened.
  • Add Havarti and Gouda cheeses to the sauce, stirring until melted. Transfer Danish fondue to a fondue pot and serve with dippers.
