Cracker Barrel Old Country Store Carrot Cake Recipe

  1. english walnuts
  2. carrots
  3. crushed pineapple
  4. coconut
  5. raisins
  6. vegetable oil
  7. sugar
  8. brown sugar
  9. eggs
  10. flour
  11. baking powder
  12. baking soda
  13. vanilla
  14. ground cinnamon
  15. ground nutmeg
  16. ground cloves
  17. salt
  18. cream cheese frosting
  19. cream cheese
  20. butter
  21. powdered sugar
  22. pecans

Steps:

  1. mix together flour , baking powder , baking soda , salt , cinnamon , nutmeg and cloves
  2. set aside
  3. in a large bowl mix with beater oil , sugars , vanilla and eggs until smooth and fluffy
  4. add pineapple , walnuts , coconut , carrots , and raisins and blend well
  5. gradually add flour mixture a half at a time until blended through
  6. pour batter into a greased and floured 9"x13" pan and bake at 350 for about 40-50 minute test with toothpick for doneness
  7. when cool frost with cream cheese frosting
  8. frosting:
  9. blend cream cheese and butter until light and fluffy
  10. add vanilla and a little powder sugar at a time until all has been blend well
  11. turn mixer on high and beat until frosting is light and fluffy
  12. spread frosting over the cooled cake and sprinkle with pecans
