SODA CRACKER COOKIES



Soda Cracker Cookies image

Crackers topped with chocolate and nuts. Try using almonds in place of the walnuts.

35 soda crackers
1 cup butter
1 cup semisweet chocolate chips
¾ cup finely chopped walnuts
1 cup packed brown sugar

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a 15 x 10 inch baking pan with foil and grease it well. Line the pan with soda crackers.
  • In a medium saucepan, melt the butter. Add the brown sugar and cook stirring it until it dissolves. Bring to a boil and cook about 3 minutes, stirring constantly. Immediately pour mixture over the soda crackers.
  • Bake for 3 to 5 minutes or until the mixture starts to bubble. Spread the chocolate chips over the hot cookies. Let set for a minute. Spread the chocolate evenly. Sprinkle with nuts. Let cool, then cut into bars.

1/2 cup sugar
2 tablespoons canola oil
1 ounce unsweetened chocolate, melted and cooled
1/2 teaspoon vanilla extract
1 large egg
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon salt
Confectioners' sugar

Steps:

  • In a bowl, beat sugar, oil, chocolate and vanilla until blended. Beat in egg. In another bowl, whisk flour, baking powder and salt; gradually beat into sugar mixture. Refrigerate, covered, 2 hours or until firm enough to handle., Preheat oven to 350°. With sugared hands, shape dough into 1-in. balls; roll in confectioners' sugar. Place 2 in. apart on greased baking sheets. Bake 10-12 minutes or until set. Remove from pans to wire racks to cool.

2 cups rolled oats
1 cup flaked coconut
2 cups crispy rice cereal

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Combine the flour, baking powder, baking soda, cinnamon and nutmeg; gradually stir into the creamed mixture. Finally, stir in the oatmeal, coconut, crisp rice cereal and chocolate chips. Drop by rounded spoonfuls onto the prepared cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

1 can Eagle Brand Condensed Milk
townhouse cracker
1/4 cup melted butter

  • Mix first 3 ingredients together.
  • Put in double boiler, cook till thick.
  • Cool.
  • Spread on Townhouse crackers.
  • Place on greased cookie sheet.

I usually do half now and it makes 48 cookies. I vary the optional with coconut or chocolate chips or raisins. Sometimes I separate the batches and mix in chocolate chips in one and raisins in another.

8 tablespoons (1 stick) unsalted butter, room temperature
1/2 cup plus 2 tablespoons packed light-brown sugar
1 large egg
1 cup unsweetened cocoa powder
1/2 cup plus 3 tablespoons all-purpose flour, plus more for dusting
1/2 teaspoon salt
1 teaspoon grated orange zest (optional)
1/4 cup granulated sugar

Steps:

  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter and brown sugar until light and fluffy, about 3 minutes. Add egg; mix until well combined.
  • In a large bowl, whisk together cocoa powder, flour, salt, and orange zest, if using. Add flour mixture to egg mixture; continue mixing until the ingredients are just combined, scraping down sides of the bowl.
  • Scrape dough onto a piece of plastic wrap; flatten into a disk. Wrap, and chill at least 1 hour or overnight.
  • Heat oven to 350 degrees. Line 2 baking sheets with parchment paper. Place granulated sugar in a small bowl.
  • On a lightly floured work surface, roll out dough to a 1/4-inch thickness. Using a 2-inch-round cutter, cut out cookies. Carefully press each cookie into granulated sugar. Transfer cookies to sheets, spaced 1/2 inch apart.
  • Bake until cookies are firm, about 12 minutes. Cool on a wire rack. Wrap in foil.

1 lb butter flavored cracker (Ritz preferred)
4 cups peanut butter
1 (7 ounce) jar marshmallow cream
2 1/2 lbs chocolate bark (Ghirardelli preferred)
6 ounces white chocolate (optional)

Steps:

  • Spread approximately 1 tablespoon peanut butter, then a teaspoon of marshmallow cream onto a Ritz cracker and sandwich with another cracker.
  • Melt chocolate bark (I like Ghirardelli the best) on low heat in microwave, stirring often or over a double boiler.
  • Dip sandwiched cookies into chocolate, covering both sides.
  • Place cookies on waxed paper and allow to harden. I find that if you put the paper or silpat on a cookie sheet and place it in the freezer for 5 minutes, the cookies harden up faster.
  • Can be drizzled with melted white chocolate to make pretty.
  • Store in airtight container. Enjoy!
