SOUTHERN-STYLE BUTTERMILK FRIED CHICKEN
This is a down home recipe that I have used for years, and thought I would share it! The buttermilk marinade is terrific and is such a comfort food. However this is not a recipe that can be done quickly, but the wait is WELL worth it!

Steps:
- Whisk together buttermilk, mustard, salt and pepper, and cayenne in a bowl, and pour into a resealable plastic bag. Add the chicken pieces, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 2 to 8 hours.
- When you are ready to cook the chicken, combine the flour, baking powder, garlic powder, and onion powder in the other plastic bag. Shake to mix thoroughly. Transfer one marinated chicken piece at a time into the dry ingredient bag, and shake well to ensure complete coverage. After all chicken pieces are coated, repeat the process by dipping them in the buttermilk marinade and shaking in the dry coating again.
- Heat oil in a large frying pan over medium-high heat, making sure not to burn the oil. When oil is hot, fry chicken in batches until golden brown and juices run clear, turning chicken to brown evenly.

MISSISSIPPI SLUGBURGER
I'm showing you my take on one of America's strangest hamburgers, and certainly the hamburger with the strangest name. But don't worry, this is 100% mollusk free. The name comes from the fact that these used to cost a nickel-and in the past, the slang term for nickel was "slug."

- Preheat the oven to 175 degrees F (80 degrees C). Line a baking sheet with parchment paper.
- Cut the crusts off the bread slices. Place slices on the prepared baking sheet.
- Bake in the center of the preheated oven until dry and toasted, about 45 minutes.
- Transfer toasted bread to the bowl of a food processor and pulse until you reach coarse crumbs.
- Place ground chuck, salt, pepper, garlic powder, and onion powder into a bowl. Add bread crumbs. Combine with your fingers, breaking apart the meat.
- Dampen your fingers with water and form mixture into hamburger patties.
- Heat ¼ to ½ inch vegetable oil in a skillet over medium-high heat. Place a patty into the pan and turn heat down to medium. Cook until well browned and crusty, 3 to 4 minutes per side. Repeat with remaining patties, adding more oil if needed.
- Remove from the pan and serve on hamburger buns with mustard and pickles; sprinkle tops of patties with chili powder and/or cayenne if you like prior to serving.

TRADITIONAL SOUTHERN FRIED CHICKEN
IN MEMORY OF MY MOM. This chicken, taught to me by my Mom when I was about 12 years old, was the way everyone I knew did it in Mississippi and Georgia. I hope you like it. It has a crispy, huge thick coating with the southern "touch" (the magical ingredients being the vinegar and baking powder) and tender inside. Oh ! my ! never a chicken like this.

Steps:
- Marinate chicken in vinegar for a minimum of 1 hours -- overnight is better.
- Mix flour, spices, and baking powder.
- Heat oil to 350 degrees Fahrenheit.
- Coat chicken in flour mixture.
- Brown on both sides; cover.
- Fry 15 minutes one side.
- Fry 15 minutes other side.
- Take off lid.
- Fry 5 minutes extra to crisp.
- Thanks for keeping the southern tradition alive.

MISSISSIPPI FRIED CHICKEN

- In colander, rinse chicken breasts. Salt and pepper. Let stand to drain. In plastic sack, combine flour, salt, pepper, and baking powder. Shake chicken in this mixture until well coated. Put chicken in refrigerator for 1/2 - 6 hours. Put 1 inch cooking oil in large skillet. Heat to medium high. Place chicken pieces in skillet. When they are hot and cooking well, turn heat to medium low. Cook 7-10 minutes on each side or until well browned.

I found this in a cookbook that I bought for a dime back in the 80s at a garage sale. The book eventually fell apart, but I did write the recipe down.

Steps:
- Heat the oven to 425°F.
- Lightly oil a large, shallow baking pan.
- Combine the breadcrumbs, salt and paprika. Brush each piece of chicken with oil and then roll in crumb mixture.
- Arrange the chicken pieces in the prepared baking pan, skin side up.
- Bake the coated chicken pieces in the preheated oven for about 35 to 45 minutes, or until chicken is tender and juices run clear.

CRAIG CLAIBORNE'S FRIED CHICKEN
This fried chicken is classic Mississippi picnic fare, and goes hand in hand with a cold repast of deviled eggs, coleslaw and frosty drinks. A well-seasoned cast iron pan is best for cooking it, but you can do all that work the day before your feast. Drain it on a paper bag and cover it tightly with plastic wrap. - Put the chicken pieces in a mixing bowl and add enough milk to cover. Stir in the Tabasco sauce and refrigerate for at least one hour, or overnight.
- Combine the flour, salt and pepper in a flat baking dish or, preferably, in a large, heavy paper bag or strong plastic bag. Drain the chicken pieces, but don't pat them dry. Put them in the dish or the paper or plastic bag with the flour. Turn the pieces or shake to coat them thoroughly.
- Heat the lard or oil with the butter in a heavy skillet, preferably cast-iron, large enough to hold half of the chicken pieces in one layer so they don't touch. Add half of the chicken pieces, skin side down, in one layer. Turn the heat to high and cook uncovered until golden brown.
- Turn the pieces and reduce the heat to medium low. Cook until golden brown. The total cooking time should be 20 to 25 minutes. Remove the cooked pieces of chicken and drain on paper towels. Repeat the process with the remaining chicken. (If this is made the day before, you do not have to refrigerate overnight.)

MISSISSIPPI STATE CHICKEN-ON-A-STICK

- Cut chicken breasts into bite-size cubes, and salt to taste. Quarter onions. Chop pepper into bite-size pieces. Place chicken, onions, bell pepper, dill pickles, and potatoes on wooden skewers. (Use proportions that suit your family-some like more vegetables, and some like loads of chicken!) Combine eggs and milk in a plate. Combine flour, paprika, and red pepper in a plate. Dredge skewer of chicken and vegetables in flour. Then, drench in egg-milk mixture. Dredge in flour again. Fry skewer in deep, hot fat until golden brown. Variation: For more heat, place some hot sauce in egg-milk mixture and increase red pepper in flour. Also, add some whole jalapeño peppers for a real spice!
