GRANDMA PEGGY'S LEMON ICE
This is a secret recipe from my husband's grandmother Peggy. I have never tasted anything else quite as good. It is super easy and amazingly delicious.

Steps:
- Mix half-and-half, sugar, lemon juice, and lemon zest together in a bowl. Freeze mixture until ice crystals form, about 1 hour. Remove mixture from freezer, stir to distribute ice crystals, and return to freezer until ice crystals form again, about 1 hour.
- Repeat freezing and stirring process twice. Cover the bowl with a lid and freeze until solid, about 2 hours.

LEMON DUMP CAKE
This easy cake is the perfect balance of tart, creamy, and sweet, and the texture is soft with just the right amount of crispness.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with nonstick cooking spray.
- Spread the lemon pie filling onto the bottom of the prepared baking dish in an even layer with a spatula.
- Sprinkle half of the cake mix in an even layer over the lemon pie filling. Add the pieces of the cream cheese evenly over the cake mix, then top with the remaining cake mix in an even layer. Add the butter pieces, spaced out evenly over the top of final cake mix layer.
- Bake in the preheated oven until the topping is browned and the cake mix powder has all absorbed and baked, 35 to 45 minutes.
- Serve topped with Cool Whip®.

PEGGY'S LEMON CAKE
This was a favorite recipe in our house, given to my Mom from her best friend, Peggy Wall. They used to be school bus drivers together, and this recipe was a tried and true favorite at every bus driver potluck that I can remember...My Nana loved this recipe too, and gave out this recipe many times herself...Very simple to make, but packed with a perfect blend of sweet & tart lemony flavor!

Steps:
- Preheat oven to 350°.
- Grease & flour bundt cake pan.
- Mix all ingredients (except the glaze), spread in bundt cake pan, and bake for 40 to 50 minutes until lightly golden on top.
- Let cake cool JUST ENOUGH to invert it and take it out of the pan onto a serving plate. (Still warm).
- While still as warm as possible, drizzle glaze over the top and let it run down the sides.
- SIMPLE GLAZE: 1 1/2 cup powdered sugar, plus.
- the juice of 2 fresh lemons.
- Mix well. Then Drizzle over the top of the warm cake.
