Number Of Ingredients 15

1 medium garlic clove, minced
½ teaspoon sea salt
Freshly ground black pepper, to taste
½ teaspoon Dijon mustard
2 teaspoons pure maple syrup or raw honey (not vegan)
2 tablespoons apple cider vinegar
6 tablespoons extra-virgin olive oil
8 cups baby spinach leaves (about 5 ounces)
1½ cups cooked quinoa*
2 cups finely chopped red cabbage
1 cup blueberries or pomegranate seeds (whichever is in season)
¼ cup chopped Brazil nuts
1 cup broccoli sprouts or sprouts of choice (about 2 ounces)
1 (6- to 7-ounce) can wild salmon, preferably without bones (optional; omit for vegan/ vegetarian)
1 large avocado, peeled, pitted, and cubed

Steps:

  • Put all of the dressing ingredients in a medium-size bowl and whisk to combine. Alternatively, put them in a jar with a screw-top lid and shake to combine.
  • Add all of the salad ingredients to a large bowl. Drizzle on the salad dressing and toss to evenly coat.

Full of great veggies and high-fibre quinoa, this easy-to-make salad is nutritious, delicious and super-satisfying. Top with juicy pomegranate seeds for a great burst of flavour.

Number Of Ingredients 18

2 sweet potatoes, (350g each)
1 pinch of dried chilli flakes
1 pinch of ground coriander
1 small pinch of ground cinnamon
olive oil
200 g quinoa
320 g broccoli
35 g mixed nuts, such as walnuts, almonds, Brazils
1 pomegranate
extra virgin olive oil
1 splash of balsamic vinegar
2 limes
40 g mixed sprouts
1 punnet of salad cress, (use a mixture of varieties, if possible)
1 bunch of fresh coriander, (30g)
1 fresh red chilli
1 ripe avocado
20 g feta cheese

Steps:

  • Preheat the oven to 200°C/400°F/gas 6.
  • Scrub and chop the sweet potatoes into 2.5cm chunks. Place into a roasting tray with the chilli flakes, ground coriander and cinnamon, a drizzle of olive oil and a little sea salt and black pepper, then toss well.
  • Spread out into an even layer and place in the hot oven for 15 to 20 minutes, or until golden and crisp.
  • Meanwhile, cook the quinoa in boiling salted water according to the packet instructions.
  • Slice the broccoli into small florets, then halve and finely slice the stalk. Place into a heatproof colander and rest it over the quinoa pan. Cover and steam for 3 minutes, or until just tender.
  • Once cooked, drain and rinse the quinoa under cold running water, then leave to cool along with the broccoli. Remove the sweet potato from the oven and leave it to cool, too.
  • Meanwhile, toast the nuts in a dry frying pan over a medium-high heat for 2 to 3 minutes, then transfer to a pestle and mortar and crush lightly.
  • Halve the pomegranate and squeeze half the juice into a large bowl. Add 3 times as much extra virgin olive oil, the lime juice and balsamic vinegar. Whisk well and season to taste.
  • Add the cooled broccoli and sprouts to the dressing, then snip in the cress. Roughly chop the coriander (stalks and all), finely slice the chilli and add to the bowl along with the quinoa and sweet potato.
  • Toss well, spread out on a serving platter, then scoop out and dot over the avocado flesh.
  • Bash the reserved pomegranate half with a wooden spoon so the seeds come tumbling out and scatter these over the platter along with the nuts, snip the cress on top, then serve with the feta crumbled over the top.

2 sprigs fresh tarragon, leaves stripped from stems
3 tablespoons (3 splashes) tarragon vinegar or white wine vinegar
1 teaspoon sugar
1 small shallot, peeled and halved
2 teaspoons Dijon mustard
1/2 cup extra-virgin olive oil
Coarse salt and black pepper
2 hearts romaine, from pre-washed 3 pack, available in produce section

Steps:

  • Combine tarragon, vinegar, sugar, shallot, and mustard in a processor bowl. Turn the food processor on and pour oil into the food processor in a slow stream. When dressing is combined and emulsified, turn off the processor and pour the dressing over romaine hearts.

1 tortilla
2 tbsp hummus
1 lettuce leaf
¼ carrot , shredded or grated
4 cucumber sticks and/or 2 avocado slices
1 tbsp fresh tomato salsa or chopped tomatoes
handful grated cheddar

Steps:

  • Lay the tortilla out flat on a board, spread the hummus on the bottom third and put the lettuce on top. Arrange the carrot, cucumber and/or avocado in a bank on top of the lettuce and spoon the salsa on top. Sprinkle on the cheese.
  • Fold the bottom of the wrap up just over the filling, fold the sides in and then roll the wrap the rest of the way up. Cut in half or into pieces as shown. Either put straight into a lunchbox or if halved, wrap in wax paper first.

Boring salads no more! This colorful super salad is the perfect way to start the new year off with a bang. Carrot, broccoli, kale, cabbage, red bell pepper, and creamy avocado are just a few of the many ingredients that pack in tons of various vitamins, minerals, and antioxidants to boost your health, AND they taste delicious! Crazy! This dish will be your new staple recipe to get tons of nutrients in one meal.

3 tablespoons wole grain mustard
2 tablespoons organic maple syrup
1 tablespoon fresh ginger, grated
4 cloves garlic, grated
1 tablespoon sesame seed, toasted
¼ teaspoon cayenne pepper
¼ cup apple cider vinegar
¼ cup lemon juice
⅓ cup extra virgin olive oil
kosher salt, to taste
black pepper, to taste
2 cups lacinato kale, thinly sliced
2 large carrots, peeled and grated
2 cups broccoli floret
2 cups red cabbage, thinly sliced
1 red bell pepper, seeded and thinly sliced
1 avocado, peeled and cubed
1 cup walnut, chopped
½ cup fresh parlsey, chopped

Steps:

  • In a liquid measuring cup, combine the mustard, maple syrup, ginger, garlic, sesame seeds, cayenne, apple cider vinegar, lemon juice, and olive oil. Whisk until fully incorporated. Season to taste with salt and pepper.
  • Add the kale, carrots, red cabbage, broccoli, red cabbage, bell pepper, avocado, walnuts, and parsley to a large serving bowl.
  • Pour desired amount of dressing over the salad and toss until everything is well coated.
  • Garnish with more toasted sesame seeds
  • Enjoy!

A quinoa salad packed full of the good stuff - broccoli, soya beans, avocados, spinach, herbs, pomegranate and pumpkin seeds

Number Of Ingredients 13

250g purple sprouting broccoli , cut in half (or into bite-sized chunks)
175g frozen soya bean
2 ripe avocados
250g pouch cooked quinoa
100g bag baby spinach
handful soft herbs (parsley, basil, coriander or mint all work well), chopped
100g tub pomegranate seeds
100g bag pumpkin seed , toasted in a dry pan until they pop
zest and juice 1 lemon or lime
zest and juice 1 orange
1 tbsp white wine vinegar
2 tbsp Dijon mustard (or gluten-free alternative)
2 tbsp extra-virgin rapeseed oil

Steps:

  • Bring a saucepan of water to the boil and fill a large bowl with ice-cold water. Add the broccoli to the pan and cook for 2 mins, then add the soya beans and cook for 1-2 mins more until the broccoli is cooked but still has a bite. Drain and drop the vegetables straight into the cold water - this quickly cools them, retaining their bite and bright colour. Leave for 1-2 mins until cool, then drain and leave in the colander while you prepare the remaining ingredients.
  • Dry the large bowl. Add the dressing ingredients with some seasoning and whisk together. Halve, stone and peel the avocados, then cut into chunky dice and add straight to the dressing (this will stop the avocado turning brown). Add the quinoa, spinach, herbs, half the pomegranate and pumpkin seeds, and the cooked vegetables to the bowl, and gently toss everything together. Transfer the salad to a serving platter, scatter with the remaining seeds and serve. Any leftovers will keep in the fridge for lunch the next day.
