CRANBERRY ALMOND COFFEE CAKE
"Cranberries add a delightful tartness to this coffee cake that is a Christmas morning tradition for my family," writes Anne Keenan from Nevada City, California. - In a small bowl, cream almond paste, butter and 1/2 cup sugar until fluffy. Add two eggs, one at a time, beating well after each addition. Combine 1 cup flour and baking powder; add to creamed mixture. Beat in the remaining egg and flour. Stir in extracts. Gently fold in cranberries., Spread evenly into a greased 8-in. square baking dish; sprinkle with remaining sugar. Bake at 325° for 40-50 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking pan.
- Combine flour, sugar, and salt in a bowl. Stir in cranberries and walnuts; toss to coat. Stir in butter, eggs, and almond extract. Spread batter into the prepared pan.
- Combine walnuts, brown sugar, butter, and flour for streusel in a small bowl. Crumble streusel on top of cranberry mixture.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Serve warm or cold.

- Preheat oven to 350°. In a bowl, beat cream cheese, butter, sugar and vanilla until smooth. Add eggs, one at a time, mixing well after each addition., Combine 2 cups flour, baking powder and salt; gradually add to butter mixture. Mix remaining flour with cranberries and nuts; fold into batter. Batter will be very thick. Spoon into a greased 10-in. fluted tube pan. , Bake for 65-70 minutes or until cake tests done. - Preheat oven to 350 degrees F (180 degrees C).
- Grease 13 x 9 baking pan.
- CAKE.
- In a small bowl, toss cranberries in flour to coat well, set aside.
- In a large mixer, combine cake mix, eggs, water, oil and almond extract.
- Beat for 2 minutes on medium speed.
- Stir in floured cranberries, shaking off excess flour first.
- Spread batter evenly in prepared pan.
- TOPPING.
- In a small bowl, combine almonds, brown sugar and cinnamon.
- Mix well.
- Sprinkle evenly over batter.
- Bake for 30-40 minutes or until a tester inserted in the center comes out clean.
- Cool 30 minutes in pan on wire rack.
- Serve warm or cool.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan.
- Whisk flour, baking powder, baking soda, and salt together in a large bowl.
- Beat sugar and margarine together in a bowl until creamy. Add sour cream, eggs, and 1 teaspoon almond extract to sugar mixture; beat until smooth. Pour sugar mixture into flour mixture and mix to form a smooth batter. Pour 1/3 the batter into the prepared pan.
- Pour cranberry sauce into a bowl and stir. Spread 1/2 sauce over batter in the prepared pan. Pour 1/3 the batter over cranberry sauce, and spread second 1/2 cranberry sauce over the batter. Top with remaining 1/3 cake batter.
- Bake in the preheated oven until golden and cooked through, about 40 minutes.
- Whisk confectioners' sugar and 1 tablespoon almond extract together in a bowl until smooth, adding enough water for icing to reach a drizzling consistency. Drizzle icing over cake.

- Preheat oven to 350°F. Spray two 8 inch round cake pans with flour-based baking spray, or grease and flour.
- Place the cranberries in a medium bowl and add brown sugar; toss to coat and set aside. Combine the flour, granulated sugar, baking powder, baking soda, and salt in a large bowl. Whisk together until incorporated. In the bowl of an electric mixer, combine the egg, sour cream, melted butter, and almond extract. Beat until well blended. Add the flour mixture to the wet ingredients and mix together on low speed until just combined. Use a large spatula to scrape down the bowl and fold batter together to make sure no pockets of flour or wet ingredients remain.
- Divide half of the batter between the two prepared pans. The batter will be thick and sticky, so coat a rubber spatula with cooking spray and use it to press the batter evenly into the pans (re-spray as needed). Top each pan of batter with 1/4 of the brown sugar-coated cranberries. Cut almond paste in half and crumble one half of the paste into each pan over the cranberries. Divide the remaining batter between the two pans. Spread evenly with a greased rubber spatula. Divide the remaining brown sugar-coated cranberries between the two pans; sprinkle with the sliced almonds.
- Bake for 35-40 minutes, or until the cakes are golden brown on top and a toothpick tester inserted into the centers comes out with a few moist crumbs clinging to the skewer. Allow the cakes to cool in the pan for 10 minutes before removing to a wire rack to cool completely.

- Prepare the Almond Topping: In a medium bowl, stir together the flour, sugar, cinnamon and salt. Pour in the melted butter and stir until moistened and clumpy. Pour in the flaked almonds and with fingers, mix together until crumbly. Place bowl in the fridge while you prepare the cake.
- Preheat oven to 375F. Grease and 8-inch springform pan and line the bottom with a round of parchment paper. Set aside.
- In a large bowl with an electric mixer or the bowl of a stand mixer fitted with the paddle attachment, beat together the butter and sugar until light and fluffy, about 2 minutes. Add the lemon zest and juice and mix to combine. Add the eggs one at a time, beating well after each addition and scraping down the sides of the bowl as needed.
