1 package yellow cake mix (regular size)
1-1/4 cups mayonnaise
4 large eggs
1/4 cup orange juice
FILLING:
1/3 cup whole-berry cranberry sauce
1/4 cup cranberry juice
4 teaspoons cranberry gelatin powder
1/2 cup whipped topping
1/2 teaspoon grated orange zest
FROSTING:
1 package (8 ounces) cream cheese, softened
1 jar (7 ounces) marshmallow creme
1/8 teaspoon almond extract
1-1/2 cups whipped topping

Steps:

  • In a large bowl, beat the cake mix, mayonnaise, eggs and orange juice until well blended. Transfer to two greased and floured 9-in. round baking pans., Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pans to wire racks to cool completely., For filling, in a large saucepan, bring cranberry sauce and juice to a boil; cook and stir until blended. Stir in gelatin powder until dissolved. Cool slightly; transfer to a small bowl. Refrigerate for 30 minutes or until mixture begins to thicken. Fold in whipped topping and orange zest., For frosting, in a large bowl, beat cream cheese until fluffy. Add marshmallow creme and extract; beat until smooth. Beat in whipped topping., Place one cake layer on a serving plate; spread with half of the filling. Top with remaining cake layer. Spread 2 cups frosting over top and sides of cake. Spread remaining filling over top of cake to within 1 in. of edges. Pipe remaining frosting around edge of cake. Store in the refrigerator.

1 medium navel orange, zested
2 tablespoons dried cranberries, or more to taste
½ cup white sugar
2 tablespoons water

Steps:

  • Cut off both ends of the zested orange, and cut orange in half. Peel halves and remove the white core.
  • Place orange sections and cranberries in a food processor. Pulse until orange is mostly pulp, using roughly 5 three-second pulses.
  • Combine the orange-cranberry mixture, zest, sugar, and water in a medium saucepan. Bring to a gentle boil and simmer, stirring frequently, for 15 minutes. Let marmalade cool.
  • Pour marmalade into a glass jar with a tight-fitting lid. Chill completely in refrigerator before serving.

1 cup granulated sugar
2 cups fresh cranberries, or frozen, thawed
2 cups superfine sugar
Two 2-inch strips lime zest
Two 2-inch strips orange zest
1/2 cup fresh cranberries, or frozen, thawed
2 tablespoons sugar
1 cup silver tequila
1/2 cup freshly squeezed orange juice
Juice of 1 lime
2 tablespoons orange liqueur

Steps:

  • For the cranberries: Combine the granulated sugar and 1 cup water in a saucepan, and bring to a boil. Cook until the sugar is dissolved. Add the cranberries and weight with a plate to submerge them in the liquid. Cover the pot and refrigerate for at least 8 hours and up to 48 hours.
  • Drain the cranberries, reserving the syrup. (Yields about 1 1/2 cups syrup; store leftover syrup in the refrigerator in an airtight container for up to 1 month.)
  • Put the superfine sugar on a baking sheet, and toss the cranberries in the sugar. Refrigerate the cranberries, uncovered, for 1 hour, then toss again in the sugar. Refrigerate in an airtight container. (Makes about 2 cups.)
  • For the margarita: In a cocktail shaker, muddle the lime and orange zests with the cranberries, 1/4 cup of the cranberry syrup, and the sugar.
  • Add the tequila, orange juice, lime juice and orange liqueur; stir until combined. Fill 4 glasses with ice cubes, and strain some of the margarita mixture over each. Garnish each glass with 6 sugared cranberries.

Number Of Ingredients 11

3 large eggs
120g caster sugar, plus an extra 1 tbsp
1 tbsp light muscovado sugar
½ tsp vanilla bean paste
150g unsalted butter, melted, plus extra for the tin
150g plain flour, plus extra for dusting
1 tsp baking powder
1 tsp ground ginger
1 orange, zested and juiced (you'll need 4 tsp juice)
50g fresh or frozen cranberries (defrosted if frozen)
crème fraîche, to serve (optional)

Steps:

  • Put the eggs in a large bowl and whisk for 2-3 mins until light and fluffy. Alternatively, do this in a stand mixer fitted with the whisk attachment. Add both sugars and continue to whisk until thick and frothy, about 4-5 mins. Combine the vanilla and butter in a small bowl, then slowly whisk into the eggs.
  • Sift the flour, baking powder, ginger and pinch of salt into a bowl, then fold into the egg mixture until smooth. Fold in 3 tsp of the orange juice and all the zest. Cover and chill for at least 3 hrs, or overnight.
  • Tip the cranberries into a small pan set over a low heat with the remaining 1 tsp orange juice and extra caster sugar. Cook for 5 mins, or until the berries have softened but still hold their shape. Heat the oven to 200C/180C fan/gas 6.
  • Butter and flour a madeleine tin. Spoon 1 tbsp of the chilled batter into each of the indents, then push a couple of the cranberries into each madeleine (you'll likely have enough batter to bake a couple of batches). Bake for 8-10 mins, until the edges are golden and crisp and there's a raised hump in the middle of each. Remove from the oven and sharply tap the tin on the work surface to loosen the madeleines. Cover to keep warm while you continue baking the rest of the batter. Serve warm with crème fraîche, if you like.
