CRANBERRY APPLE PORK CHOPS WITH ROASTED BABY CARROTS AND HERBED POTATOES

Cranberry Apple Pork Chops with Roasted Baby Carrots and Herbed Potatoes image

Apples, cranberries, baby carrots, potatoes, onion, and parsley: that's not a shopping list for your next trip to the produce market. It's all the fruit and veg bounty that's in this recipe. So you can rest assured that your family will get their fill of their five-a-day with this dinner, plus a hearty serving of protein from the succulent, sauce-drizzled pork chops.

Provided by HelloFresh

Categories     main course

Time 40m

Number Of Ingredients 14

12 ounce Yukon Gold Potatoes
8 ounce Carrot
1 tablespoon Fall Harvest Spice Blend
12 ounce Pork Chops
1 unit Apple
1 unit Yellow Onion
¼ ounce Parsley
1 ounce Dried Cranberries
1 unit Chicken Stock Concentrate
1 teaspoon Cinnamon
5 teaspoon Vegetable Oil
1 tablespoon Butter
Kosher Salt
Pepper

Steps:

  • Adjust racks to middle and upper positions and preheat oven to 450 degrees. Wash and dry all produce. Cut potatoes into ½-inch-thick wedges, like steak fries. Halve carrots lengthwise.
  • Toss potatoes on a baking sheet with a large drizzle of oil, half the Harvest Spice (use all the spice for 4 servings), salt, and pepper. Toss carrots on a second baking sheet with a large drizzle of oil, salt, and pepper. Roast potatoes on upper rack and carrots on middle rack until tender, about 30 minutes for potatoes and 20-25 minutes for carrots.
  • Meanwhile, pat pork dry with paper towels and season all over with salt and pepper. Heat a drizzle of oil in a large pan over medium-high heat. Add pork and cook until browned and cooked through, 4-5 minutes per side. Turn off heat; remove from pan and set aside.
  • Meanwhile, halve, core, and dice apple. Halve, peel, and dice onion. Finely chop parsley.
  • Melt 1 TBSP butter in pan used for pork over medium heat. Add onion and cook until softened, 2-3 minutes. Add apple and cranberries and cook, stirring, until slightly softened, 2-3 minutes. Stir in stock concentrate, ¼ tsp cinnamon (½ tsp for 4 servings), and ⅓ cup water (½ cup for 4 servings). Simmer, stirring, until apple is tender and mixture has a thick, saucy consistency, about 4 minutes. (TIP: If mixture seems dry, stir in another splash of water.) Season with salt and pepper.
  • Stir any resting juices from pork into apple mixture. Divide pork, carrots, and potatoes between plates. Top pork with apple mixture. Sprinkle everything with parsley and serve.

PORK CHOPS WITH CRANBERRY BEANS AND THYME

Pork Chops With Cranberry Beans and Thyme image

Fresh shell beans have a firm, creamy texture that soaks up savory sauces with ease. This recipe calls for cranberry beans, which are beige-colored with beautiful red streaks, although you can substitute almost any variety of shell bean, such as borlotti, flageolet, cannellini or lima. The fresh thyme in this recipe infuses the beans with flavor and echoes the herbaceous notes in the Hirsch Pinot Noir. Tomato paste provides a bridge to the wine's acidity and sweetness and adds depth to the sauce. Williams-Sonoma

Categories     Pork

Time 45m

Yield 4 serving(s)

Number Of Ingredients 12

4 pork chops, each 8 oz. and 1 inch thick
4 pancetta or 4 bacon, slices
sea salt & freshly ground black pepper, to taste
4 tablespoons extra virgin olive oil, plus more for drizzling
4 garlic cloves, crushed
1 shallot, minced
3 cups chicken stock
2 cups shelled fresh cranberry beans
1 tablespoon minced fresh thyme
2 tablespoons tomato paste
2 tablespoons whole grain mustard
1/2 cup coarsely chopped fresh flat-leaf parsley

Steps:

  • Working with 1 pork chop at a time, wrap a pancetta slice around the outer edge of each chop. Secure with a toothpick, season the chop with salt and pepper, and set aside.
  • In a saucepan over medium heat, warm 2 Tbs. of the olive oil. Add the garlic and shallot and sauté until lightly golden, about 2 minutes. Add the stock and bring to a boil. Add the cranberry beans and thyme and simmer until the beans burst, about 10 minutes. Stir in the tomato paste and mustard, and season well with salt and pepper. Turn off the heat but leave the saucepan on the burner to keep warm.
  • In a large sauté pan over medium-high heat, warm the remaining 2 Tbs. olive oil until shimmering. Add the pork chops and cook, turning once, until they are golden brown on both sides and the pancetta is crispy, 4 to 6 minutes per side. If the chops are browning too fast, reduce the heat to medium.
  • Divide the warm beans among individual plates, top each portion with a pork chop and sprinkle with the parsley. Drizzle with a little olive oil and serve immediately.

PORK CHOPS WITH CRANBERRY SAUCE

Pork Chops With Cranberry Sauce image

Provided by Pierre Franey

Categories     dinner, easy, main course

Time 40m

Yield 4 servings

Number Of Ingredients 14

4 lean loin pork chops, about 1 1/2 pounds
Salt to taste if desired
Freshly ground pepper to taste
1 navel orange, about 1/2 pound
1 1/2 cups raw cranberries
2 tablespoons flour
2 tablespoons corn, peanut or vegetable oil
2 tablespoons butter
1/3 cup finely chopped onion
2 tablespoons brown sugar
2 tablespoons red-wine vinegar
1 tablespoon tomato paste
1/2 cup fresh or canned chicken broth
1 tablespoon finely chopped parsley

Steps:

  • Sprinkle the chops on both sides with salt and pepper.
  • Peel the orange and cut it crosswise into 4 slices of equal thickness. Cut each slice into 8 equal-size pieces. Put the cranberries and orange pieces into the container of a food processor or electric blender and blend well but coarsely. There should be about 1 1/2 cups.
  • Dredge the chops on both sides in flour and shake off excess.
  • Heat the oil in a heavy skillet large enough to hold the chops in one layer. When the oil is quite hot add the chops and cook until nicely brown on one side, about 8 minutes. Turn the chops and cook until browned on the other side, about 5 minutes. Reduce the heat. Cover and simmer 12 minutes.
  • Transfer the chops to a warm serving platter and pour off the fat from the skillet.
  • Add 1 tablespoon of the butter to the skillet and when it is melted add the onion. Cook, stirring, until wilted. Add the brown sugar and stir to dissolve. Add the vinegar and tomato paste and stir until blended. Add the cranberry and orange mixture and the broth. Stir to blend. Add any liquid that has accumulated around the chops. Let simmer about 1 minute. Stir in the remaining 1 tablespoon of butter. Pour the sauce over the chops and sprinkle with parsley.

Cranberry-Orange Glazed Pork Chops Recipe by Tasty image

Looking for a hearty dinner ready in less than 30 minutes? Glazed with jewel-toned cranberry sauce and orange marmalade kicked up with ginger and red pepper flakes, these pork chops taste as good as they look. Serve with your favorite side dishes for a weeknight meal that's anything but ordinary.

Provided by Chris Salicrup

Categories     Dinner

Time 25m

Yield 4 servings

Number Of Ingredients 10

1 cup cranberry sauce
¼ cup orange marmalade
2 teaspoons extra virgin olive oil
1 teaspoon fresh ginger, grated
½ teaspoon red pepper flakes
2 teaspoons kosher salt, divided
1 teaspoon black pepper, divided
4 bones in pork chops
2 tablespoons canola oil
1 tablespoon fresh parsley, chopped, for garnish

Steps:

  • Preheat the oven to 350°F (180°C).
  • In a medium bowl, mix together the cranberry sauce, orange marmalade, olive oil, ginger, red pepper flakes, 1 teaspoon of salt, and ½ teaspoon of pepper. Set aside.
  • Season the pork chops on both sides with the remaining teaspoon of salt and ½ teaspoon of pepper.
  • Heat the canola oil in a large cast-iron skillet over medium-high heat. When the oil is shimmering, sear the pork chops in batches until golden brown on both sides, about 2 minutes per side. Sear the fat side of the pork chops until lightly browned and some of the fat has rendered, about 1 minute more.
  • Turn off the heat then arrange all of the pork chops in the pan. Spoon the cranberry mixture over the chops, spreading in an even layer.
  • Transfer the pan to the oven and bake for 5-7 minutes, or until the internal temperature reaches 140°F (60°C). Let rest for 5 minutes.
  • Transfer the pork chops to plates and garnish with the parsley. Serve with your favorite sides.
  • Enjoy!

CRANBERRY PORK CHOPS

Cranberry Pork Chops image

I can't remember where I got this, but I've been making it for a few years now. A very easy pork chop preparation. One note: the ingredients call for boneless pork chops, but the instructions say to cut the chops toward the bone. I just cut toward where I think the bone might have been. :) I sometimes use dried cranberries instead of fresh (I don't chop them if I do this) and have also used apricot or peach preserves instead of marmalade when that's what I have on hand. Enjoy!
