1 cup whole-berry cranberry sauce
3/4 cup unsweetened apple juice
3/4 cup barbecue sauce
1 teaspoon salt
1 tablespoon cornstarch
2 tablespoons cold water
1 boneless rolled pork loin roast (4 pounds)

Steps:

  • In a small saucepan, combine the cranberry sauce, apple juice, barbecue sauce and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Combine the cornstarch and water until smooth; stir into cranberry mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Set aside 1 cup sauce., Place roast in a shallow roasting pan. Bake, uncovered, at 350° for 1 hour. Spoon a third of the remaining glaze over pork. Bake 20-30 minutes longer or until a thermometer reads 145°, basting twice. Let stand for 10 minutes before slicing. Serve with reserved sauce.

1/2 teaspoon salt
1/4 teaspoon pepper
1 can (14 ounces) whole-berry cranberry sauce
1/4 cup honey
1 teaspoon grated orange zest

1/8 teaspoon ground nutmeg

1 boneless rolled pork loin roast (2-1/2 to 3 pounds)
1 can (14 ounces) jellied cranberry sauce
1/2 cup sugar
1/2 cup cranberry juice
1 teaspoon ground mustard
1/4 teaspoon ground cloves
2 tablespoons cornstarch
2 tablespoons cold water
Salt to taste

Steps:

  • Place pork roast in a 5-qt. slow cooker. In a small bowl, mash cranberry sauce; stir in the sugar, cranberry juice, mustard and cloves. Pour over roast. Cover and cook on low for 6-8 hours or until meat is tender. , Remove roast and keep warm. Skim fat from juices. Pour into a 2-cup measuring cup; add water if necessary to measure 2 cups. 1 (1 1/2-pound) boneless pork loin roast
1 (16 ounce) can jellied cranberry sauce
¼ cup white sugar
½ cup cranberry juice
1 teaspoon dry mustard
¼ teaspoon ground cloves
salt to taste
2 tablespoons cold water
2 tablespoons cornstarch

Steps:

  • Place pork roast in a slow cooker. Mash cranberry sauce in a bowl; stir in sugar, cranberry juice, mustard, cloves, and salt. Pour cranberry mixture over pork roast.
  • Cook on Low for 6 to 8 hours. Transfer roast to a plate; cover and keep warm.

1 (16 ounce) can whole berry cranberry sauce
1/3 cup orange juice
1/4 teaspoon cinnamon
2 tablespoons cornstarch
salt and pepper (optional)
4 -5 lbs pork roast (any cut)
1 tablespoon bistro gravy mix
1/3 cup water

Steps:

  • In a saucepan, cook first 4 ingredients, until thickened (ingredients may be doubled if desired for more sauce).
  • In a roaster or oven-proof casserole dish, place in the roast.
  • Spread the sauce ingredients over the pork roast.
  • Bake in 350 degree oven, until roast is done, basting frequently.
  • Remove roast to serving platter.
  • Let sit for 15 minutes before slicing.
  • Meanwhile,in the same roaster, with the pan juices, add the gravy with the 1/3 cup water; mix to combine.

This dish has been one we have often made during the Christmas holidays. It is a family favorite. The recipe came from the Frugal Gourmet - Jeff Smith The only thing we changes is to double the amounts for the Cranberry sauce as we love having extra sauce on the side to serve over the roated pork.

4 lbs pork roast
salt & pepper
1 (16 ounce) can whole sweetened cranberries
1/4 cup peeled and chopped yellow onion
3/4 cup orange juice
ground cinnamon and ginger

Steps:

  • Rub the roast with salt and pepper, and place on a rack in a baking pan. Roast at 325 deg. for 2 1/2 to 3 hours, or until an inserted meat thermometer registers 175 deg.
  • In the mean time, combine all the remaining ingredients in a stainless-steel saucepan and bring to a boil. Remove from the heat.
  • Halfway through the roasting process, begin basting the roast every 15 minutes with the cranberry mixture. The remaining sauce can be served on the side with the thinly sliced pork.
  • Serve along with Wild Rice with mushrooms and onions for a wonderful meal.
