CRANBERRY CHOCOLATE CHIP BLONDIES

Cranberry Chocolate Chip Blondies image

Super soft, buttery bars packed with chewy cranberries! And there's a chocolate overload in every bite!!

Provided by Averie Sunshine

Categories     Bars & Blondies

Time 1h30m

Number Of Ingredients 8

1/2 cup unsalted butter (1 stick), melted
1 large egg
1 cup light brown sugar, packed
1 tablespoon McCormick Pure Vanilla Extract
1/2 teaspoon McCormick Ground Cinnamon
1 cup all-purpose flour
3/4 cup dried cranberries (I used orange-scented cranberries from Trader Joe's)
3/4 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350F. Line an 8-by-8-inch baking pan with aluminum foil, spray with cooking spray; set aside.
  • In a large, microwave-safe bowl melt the butter, about 1 minute on high power.
  • Wait momentarily before adding the egg so you don't scramble it. Add the egg, brown sugar, vanilla, cinnamon, and whisk until smooth.
  • Add the flour and stir until just combined, don't overmix.
  • Stir in the cranberries and chocolate chips.
  • Turn batter out into prepared pan, smoothing the top lightly with a spatula.
  • Bake for about 24 to 26 minutes, or until done (I baked 24 minutes because I prefer very soft blondies). A toothpick inserted in the center should come out clean (as long as you're not hitting chocolate), or with a few moist crumbs, but no batter.
  • Allow blondies to cool in pan for at least 1 hour before slicing and serving.

WALNUT CHOCOLATE CHIP BLONDIES

Walnut Chocolate Chip Blondies image

Scrumptious bars filled with nuts and chocolate chips. These blondies are simple to whip up and quick to bake.

Provided by Laura

Categories     Dessert

Number Of Ingredients 7

2 large eggs at room temperature
2 cups dark brown sugar, firmly packed (15 oz/426 g)
1 teaspoon vanilla
1 cup all purpose flour sifted (4 & 1/4 oz/120 g)
1/4 teaspoon baking soda
2 cups walnut halves (8 oz/230 g)
3/4 cup chocolate chips (heaping cup) or chunks (5 & 1/2 oz/ 160 g. See note about types of chocolate to use.)

Steps:

  • Preheat the oven to 325 degrees F. Generously coat a 9 by 13-inch pan with cooking spray, oil, or butter.
  • Lightly beat the eggs in a stand mixer with a paddle attachment. Add the brown sugar and vanilla. Beat those ingredients together, beginning at low speed then working up to medium speed, until they are well combined.
  • Whisk the flour and baking soda together, then add them to the egg/brown sugar/vanilla mixture and beat again until well combined. If needed, scrape the sides of the bowl once or twice.
  • Add the nuts and beat at low speed or mix by hand just until combined, then add the chocolate chips or chunks and mix again.
  • The final mixture is thick. Spoon it into the pan and even out the top with a knife, making sure that the batter is in the corners and relatively smooth on the top.
  • Bake for 20-25 minutes, until the blondies are turning golden and beginning to come away from the sides of the pan. Cool them in the pan. Cut once completely cooled. They are quite sweet, so pieces should be no larger than 3 x 4-inches (12 to a pan) and smaller if you prefer.

WHITE CHOCOLATE CRANBERRY BLONDIES

White Chocolate Cranberry Blondies image

Although this recipe comes from Taste of Home Best Holiday Recipes, 2008, it has been tweaked to better suit my preferences -- After all, I LOVE CRANBERRIES! [NOTE of 7 Dec 08: I appreciate chef NurseJaney bringing to my attention (AFTER she'd tried making this recipe) that there MIGHT be an error in an ingredient amount! Sure enough, instead of the correct 2 1/4 cups of flour, I'd inadvertantly stated it as 1 1/4 cups! My sincere apologies!]
