This has been a 'trade secret' for years, but it's so good I decided to share it! It's everyone's favorite, and can even be poured over a block of cream cheese and served with crackers for a fun holiday appetizer.

1 cup water
1 cup white sugar
1 (12 ounce) package fresh cranberries
1 orange, peeled and pureed
1 apple - peeled, cored and diced
1 pear - peeled, cored and diced
1 cup chopped dried mixed fruit
1 cup chopped pecans
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg

Steps:

  • In a medium saucepan, boil water and sugar until the sugar dissolves. Reduce the heat to simmer, and stir in cranberries, pureed orange, apple, pear, dried fruit, pecans, salt, cinnamon, and nutmeg. Cover, and simmer for 30 minutes, stirring occasionally, until the cranberries burst. Remove from heat, and let cool to room temperature.

Cranberry Crunch is a wonderful bar cookie. I prefer to make mine with homemade cranberry relish, but you can make this with a store-bought version.

For the Cranberry Relish:
2 medium oranges (washed)
12-ounce bag of fresh cranberries (rinsed and drained)
2 cups sugar
1/2 teaspoon ground cinnamon
For the Bars:
1 1/2 cups uncooked rolled oats
1/2 cup flour
3/4 cup brown sugar (packed)
1/3 cup butter (chilled)

Steps:

  • Gather the ingredients.
  • Early in the day, cut unpeeled oranges into quarters.
  • Remove seeds.
  • Put oranges and cranberries into a food processor .
  • While processing, add sugar.
  • Place in the refrigerator until an hour before you plan to make this bar cookie.
  • Gather the ingredients.
  • Preheat the oven to 350 F.
  • Grease an eight-inch square baking pan.
  • In a bowl, mix together the oats, flour and brown sugar. Cut in the butter until nice and crumbly.
  • Place half of this mixture in the prepared pan.
  • Carefully spread with the bottom crust with 1 cup* of cranberry relish**.
  • Top the cranberry layer with the remaining crumb mixture.
  • Bake this cranberry crunch for 45 minutes.
  • Serve this tasty treat warm topped with ice cream.

  • Empty a 12-ounce bag of fresh or frozen cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add 1 cup sugar, 1 strip orange or lemon zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. This is for all my homies who forget about making cranberry sauce at the last minute... and all they have is dried cranberries! Don't worry. You can still have a lush, tangy scarlet sauce on the table in less time that it would take for you to get some from the store. All you need is some dried cranberries. I've woven in some Indian flavors here but feel free to make it your own. If you don't have cherry juice, you can use cranberry or orange... or just substitute with water and add some sugar or honey to sweeten it to your liking.

2 teaspoons neutral oil, such as avocado or grapeseed
1 dried red chile
1/4 teaspoon cumin seeds
1/4 teaspoon fennel seeds
Pinch hing (asafetida powder), optional
1 cup dried sweetened cranberries
1 small thumb fresh ginger, peeled and julienned
1 small green chile, such as jalapeno or serrano, pierced a few times
1 cup cherry juice
Kosher salt and freshly ground black pepper
Sugar, if needed

Steps:

  • Pour the oil into a small saucepan over medium heat. Drop in the red chile and cook until the oil starts to shimmer, then add the cumin seeds, fennel seeds and hing, if using. Stir and allow to sizzle for about 20 seconds.
  • Add the cranberries, ginger and green chile. Stir, then cook until the cranberries glisten and start to swell, a minute or so. Stir in the cherry juice and 1/2 cup water. Increase the heat to bring to a boil, then turn the heat down to a simmer. Cook, uncovered, until the cranberries soften, about 30 minutes. Remove the whole chiles and discard. Taste for seasoning and add salt, pepper and even sugar until it's just the way you like it! Serve, and enjoy feeling like the superhero you are.

Don't be tempted to skip the salt and and pepper at the end. It may seem a bit odd, but salt brings out the fruitiness of the berries while pepper gives the sauce a warm and spicy finish.

1/2 cup sugar, plus more as needed
1 strip orange or lemon zest

I took three of my favorite cranberry sauce recipes and combined them to come up with this recipe. The supreme Saigon cinnamon I used is more potent than most cinnamon brands sold in stores.

1 cup freshly squeezed orange juice
½ cup white sugar
½ cup brown sugar
1 (12 ounce) package fresh cranberries, rinsed
1 medium orange, finely zested, divided
1 crystallized ginger
¼ cup chopped pecans
⅛ teaspoon cinnamon (such as Supreme Saigon®)

Steps:

  • Combine orange juice and both sugars in a saucepan over medium heat and allow the sugar to melt down. Add cranberries, 3/4 of the orange zest, and crystallized ginger.
  • Cook sauce, mashing down berries, over medium-low heat for 10 minutes.
  • Meanwhile, toast pecans in a small skillet over medium heat until fragrant, 2 to 3 minutes. Set aside.
  • Stir cinnamon and chopped pecans into the cranberry sauce until well combined. Transfer cranberry sauce to a serving dish and top with remaining orange zest.

1 orange, peeled and pureed (plus I like some zest)
1 apple, peeled and diced

1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
