This is my spin on Alfredo sauce. We love cream cheese, mushrooms and garlic. So I decided to try different ways of creating this tasty dish! Serve with fettuccini, and sliced crusty bread for mopping!

2 tablespoons butter
2 portobello mushroom caps, thinly sliced
1 (8 ounce) package cream cheese
½ cup butter
1 ½ cups milk
6 ounces grated Parmesan cheese, or to taste
1 clove garlic, crushed
1 tablespoon minced fresh basil leaves
ground white pepper, to taste

Steps:

  • Heat 2 tablespoons of butter in a skillet over medium heat. Stir in the mushrooms; cook and stir until softened, about 5 minutes. Set aside.
  • Meanwhile, melt the cream cheese and 1/2 cup of butter in a saucepan over medium heat, stirring occasionally. Stir in the milk and Parmesan cheese, mixing until smooth. Add in the garlic, basil, and white pepper. Simmer for 5 minutes, then remove the garlic. Stir in the cooked mushrooms before serving.

1 pound ground beef
1 pound pasta cooked according to directions we used spirals, but any will do
8 ounces cream cheese room temperature
1 jar your favorite red sauce we use Simply Balanced from Target
1/2 cup shredded parmesan cheese
1 cup shredded mozzarella
1 tablespoon garlic powder
1 teaspoon paprika
1/4 to 1/2 teaspoon salt
1 teaspoon pepper

Steps:

  • Heat your oven to 350 degrees.
  • Using a large oven safe skillet, if you have one, brown your meat and season with garlic powder, paprika, salt, and pepper.
  • Bump the heat up to medium high if it isn't already and add your sauce.
  • Cook until your sauce just starts to bubble from the heat, but not boil. If it starts to boil, turn your heat down.
  • Add your cream cheese, stir until thoroughly combined.
  • Add your pasta to your skillet and stir to coat the pasta.
  • If your not using an oven safe skillet, place the meat/pasta mix into a baking dish.
  • Top with shredded mozzarella and parmesan.
  • Bake for 20 to 25 minutes or until your cheese is melted and the sauce is bubbly.

3 cups dry penne pasta (300 grams)
1 Tablespoon butter
2 medium cloves garlic (minced)
1 large yellow onion (diced)
1 (8 ounce) can tomato sauce
1 teaspoon dried oregano
1/2 teaspoon fine sea salt
1/2 teaspoon dried basil
1/2 cup chicken broth
1/2 cup milk*
4 ounces full fat cream cheese (half a brick)
1 cup freshly shredded pizza mozzarella**
1 Tablespoon chopped parsley (optional, for garnish)

Steps:

  • Bring a large pot of salted water to a boil and cook the penne pasta to al dente, according to the package instructions.
  • Heat a large non-stick skillet over medium heat, melt the butter and then add in the onions. Cook for about 5 minutes, or until they are translucent. Add the garlic and cook for another 1 - 2 minutes, or until aromatic. (Stir frequently to avoid burning your garlic and onions.)
  • Now add the tomato sauce, chicken broth, dried basil, dried oregano, salt and stir. Bring to a simmer for 2 - 3 minutes, stirring occasionally.
  • Add in the milk and cream cheese and stir until melted, then mix in the shredded mozzarella cheese and let simmer for 7 - 8 minutes (it's important to not let the sauce boil, but just simmer instead).
  • Mix the pasta in with the sauce. Garnish with the chopped parsley and a little extra mozzarella if desired then serve!

2 tablespoons minced fresh parsley

Steps:

  • In a large pot of boiling salted water add the spaghetti and cook until it is al dente. Meanwhile, in a large skillet set over moderately low heat, melt the butter, add the rosemary and cook it, stirring, for 1 to 2 minutes. As soon as the pasta is cooked, drain and add it to the pan. Add the cream, salt, pepper and nutmeg. Toss to coat and let reduce 1 to 2 minutes, gently stirring, or until lightly thickened. Add Parmesan to taste, toss to combine and transfer to serving dish. Sprinkle with parsley.
