- Cut meat into 8 slices; pound to 1/2-inch thickness. Heat oil in large skillet on medium heat. Add onions; cook 4 to 5 min. or until crisp-tender, stirring occasionally. Stir in barbecue sauce, ketchup and garlic; cook 4 to 5 min. or until slightly thickened, stirring occasionally.
- Add meat; turn to evenly coat with sauce. Cover; simmer 5 min. or until done.

- Heat oven to 350°F. Spray 9 1/2-inch glass deep-dish pie plate with cooking spray.
- Place Bisquick mix in medium bowl. Cut in butter, using pastry blender (or pulling 2 table knives through mix in opposite directions), until crumbly. Add boiling water; stir vigorously until soft dough forms. Using fingers dipped in Bisquick mix, press dough on bottom and up side of pie plate, forming edge on rim of plate.
- Sprinkle ham, potatoes, cheese and 3 tablespoons onions in crust. In medium bowl, beat eggs, half-and-half and pepper until blended. Pour over ingredients in crust.
- Bake 1 hour 5 minutes or until knife inserted in center comes out clean. Let stand 15 minutes before serving. Top with bacon, sour cream and additional onions.

- Place the sliced potatoes, 1 1/2 cups water, onions, and juice from pork roast in a 12" nonstick skillet.
- Bring to a boil, cover, and boil over medium heat for 10 minutes.
- Add garlic, scallions, olive oil, Tabasco, salt, Worcestershire and pork.
- Mix well and cook, uncovered, over high heat, stirring, for about 5 minutes.
- Most of the moisture will have evaporated by now and the mixture should be starting to sizzle. Since the hash will begin to stick at this point, use a heat-resistant spatula to scrape up the crusty bits sticking to the bottom of the pan and stir them into the uncooked mixture.
- Continue to cook over medium heat for about 20 minutes, stirring every 3-4 minutes.
- The mixture will brown faster in the last 10 minutes of cooking and should be stirred every 2-3 minutes.
- Turn out onto a large platter (or just bring the skillet to the table) and serve immediately.
- Garnish with fried egg on top, if desired.

- Heat oven to 425°F. Rub pork with 1 tablespoon of the melted butter. Rub pork with 1/4 teaspoon of the salt, 1/4 teaspoon of the pepper and the thyme.
- In large bowl, toss remaining 3 tablespoons butter, 1/2 teaspoon salt, 1/4 teaspoon pepper, the potatoes and garlic.

- Combine one-third of the Peppadews, half of the parsley, the rosemary, 1 teaspoon salt and a few grinds of pepper in a bowl; rub all over the pork. Set aside while you prepare the potatoes.

- Preheat oven to 425°F.
- In an 8-inch square baking tin that has been sprayed with vegetable oil, place frozen Potatoes OBrien or hash brown potatoes.
- Sprinkle with a couple of tablespoons of vegetable oil and bake in the oven for 15 minutes.
- Meanwhile, brown the sausage, either mild or hot, and drain well.
- Grate enough cheese to make 1½ cups.
- And in a separate bowl whisk together evaporated milk and eggs, along with seasoning salt.
- When potatoes have come out of the oven, layer them with the sausage and cheese and pour the milk/egg mixture over all.
- Bake at 425°F for 30 minutes.
