PAT'S STUFFED TURKEY BURGERS

Steps:
- Preheat grill over medium-high heat.
- Add the garlic, onion, turkey, mustard, soy sauce, and salt and pepper, to taste, to a large mixing bowl. Mix well with a wooden spoon. Divide the turkey into 8 equal-sized balls and flatten them into patties. Lay 2 slices of cheese on 4 of the patties and cover each with another patty. Pinch the edges to seal the patties closed, so the cheese will not melt out.
- Season the tomatoes with salt and pepper, to taste, and brush with olive oil. Grill for 2 minutes per side. Remove from the grill to a plate. Toast the buns on the grill and set aside.
- Grill the burgers until cooked through, about 5 to 6 minutes per side. Transfer the burgers to the buns and top with Spicy Mayo Sauce, lettuce and grilled tomatoes.
- Combine all the ingredients in a small bowl.
CREAM CHEESE STUFFED BURGERS

- Combine the cream cheese, cheddar cheese and bacon bits in a small bowl.
- Season your ground beef the way you like (I used salt, pepper, garlic powder and onion powder) and mix well.
- Shape the beef into patties. I made 8 patties which will make 4 HUGE burgers. If you want to make more burgers that are smaller, make more patties.
- Take one patty and put a spoonful of the cheese filling into the middle. Take another patty and put it on top of the filling, sealing the patties together.
- Preheat your grill on medium high. Grill burgers for 5-10 minutes on each side or until the meat is done to your liking.

INSIDE OUT TURKEY CHEESEBURGERS
These juicy, Turkey Burgers Stuffed with cheese are simple and delicious! Instead of topping your turkey burger with cheese, they're stuffed it stays melted and gooey.

- Set grill to medium heat. Clean and oil the grates.
- Fold each slice of cheese into quarters to create 4 short stacks.
- Divide the ground turkey into 8 equal balls then flatten into 1/4 inch thick patties.
- Place a stack of cheese in the center of 4 patties and top with the remaining 4 patties. Pinch the edges to seal, then push the up the sides so they are an even thickness. Season both sides with salt and black pepper.
- Place patties and oiled grill and cover, cook about 6 minutes per side over medium heat, or until the center is cooked through. Transfer to buns with toppings and be sure to let it cool before biting into the center so you don't burn your mouth.

- Preheat an outdoor grill for medium heat, and lightly oil the grate.
- Heat the butter in a skillet over medium-low heat, and cook and stir the onion and celery until the onion is soft and translucent, about 5 minutes.
- Place the cooked onion and celery in a large bowl with the ground turkey, stuffing mix, and eggs; mix to thoroughly combine. Form the mixture into 16 patties. Unlike hamburger, these patties will not change shape while cooking, so make them even in size.
- Grill the turkey burgers on the preheated grill until no longer pink in the center and the juices run clear, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Place each patty on a hamburger bun, and top with cranberry sauce and a dollop of whipped cream cheese to serve.

Steps:
- 1. Combine the ingredients for the filling (minus the tomato slice), and set aside.
- 2. Combine the ingredients for the dressing, and set aside.
- 3. Place 1 tablespoon of the olive oil in a sauté pan over medium heat.
- 4. Add the scallions, and mushrooms, and then sauté until soft, about 4 to 6 minutes. Do not let them burn.
- 5. Remove pan from heat and allow to completely cool.
- 6. Combine all the ingredients for the burger into a small bowl.
- 7. Chef's Note: If you want to add a bit of salt, wait until you are ready to cook it and sprinkle the salt on the outside before placing into the pan.
- 8. Chef's Note: When adding the scallion/mushroom mixture, include the olive oil from the pan.
- 9. Very gently mix the ingredients until fully combined.
- 10. Chef's Note: The more you mix the ingredients the tougher the burger will be, so be careful.
- 11. Take half of the mixture and form into a patty, about 4 inches in diameter, and 1/2 inch thick.
- 12. Chef's Tip: If presentation is important to you, then you might want to form the patty using an egg ring or large salad ring. Remember, we eat first with our eyes.
- 13. Spread the cream cheese over the top of the patty, but leave a 1/2-inch border all round.
- 14. Add the slice of tomato.
- 15. Cover with the remainder of the turkey mixture, and press to seal.
- 16. Place a rack in the middle position, and preheat the oven to 375f (190c).
- 17. Add the remaining tablespoon of olive oil to an ovenproof sauté pan over medium heat.
- 18. When the pan is heated, add the burger, and cook for 3 to 4 minutes, or until lightly browned.
- 19. Gently flip and cook for an additional 3 to 4 minutes.
- 20. Finish the burger, by placing the pan in the preheated oven for an additional 8 to 10 minutes.
- 21. Chef's Note: The internal temperature of the burger should be 165f (74c).

CREAM CHEESE STUFFED GARLIC BURGERS
I got this recipe from a grilling cookbook. I thought I was in burger heaven when I took a bite of this hamburger. The cream cheese just seeps out of these garlic burgers. Mmmm... their good!

- Put hamburger meat in a bowl and add garlic, salt and pepper.
- Mix together with your hands until just blended.
- Make 12 patties no more than 1 inch thick.
- Spread cream cheese in the center if 6 patties, approximately 1 oz. per patty. (Don't spread all the way to the edge).
- Put remaining patties on top of the cream cheese and seal the ends all the way around with your fingers. (Don't pinch too hard or the ends will be too thin).
- Grill on high to your desired taste. (About 8-10 minutes).
- Note: It takes a little longer than normal for the meat to cook inside because of the cream cheese.
