BLUE CHEESE-BACON FOCACCIA

2 1/4 teaspoons (1 package) active dry yeast
1/2 teaspoon honey
4 1/2 cups (or more) all-purpose flour
1 tablespoon kosher salt
1/2 teaspoon freshly ground black pepper
8 tablespoons extra-virgin olive oil, divided, plus more for brushing
1 cup riced or mashed boiled russet potatoes
5 ounces bacon (about 4 thick-cut strips), cut crosswise into 1/2" pieces
2 ounces blue cheese, crumbled (1/2 cup)
1 tablespoon fresh rosemary sprigs

Steps:

  • Dissolve yeast and honey in 1/2 cup warm water (110°F-115°F) in a small bowl. Let sit until foamy, about 10 minutes. Combine 4 1/2 cups flour, salt, and pepper in a large bowl. Add the yeast mixture, 6 tablespoons oil, potatoes, and 1 cup warm water. Mix with a wooden spoon until almost incorporated, then finish mixing with your hands. Transfer dough to a floured work surface and knead until smooth, 4-6 minutes, adding more flour by tablespoonfuls if dough seems very sticky (dough should be soft and elastic).
  • Brush a large bowl with oil; place dough in bowl. Cover with plastic wrap and place in a warm, draft-free area. Let rise until doubled, about 1 hour.
  • Meanwhile, heat a large skillet over medium-high heat. Add bacon and cook until it is light golden but not crisp. Transfer to paper towels to drain.
  • Preheat oven to 425°F. Brush a 17x11x1" baking sheet with oil. Press dough into pan. Press with your fingertips all over, forming dimples. Drizzle remaining 2 tablespoons oil over.
  • Bake focaccia for 10 minutes. Sprinkle cheese over, then bacon and rosemary. Return to oven and bake until golden brown, 12-15 minutes longer. Let cool for 10 minutes in pan. Slide bread onto a wire rack to cool completely. Slice into 2x1" pieces.

1 recipe basic focaccia
2 ounces sliced smoked bacon
2 tablespoons chopped scallions
5 to 6 ripe plum tomatoes
1 tablespoon olive oil
1/2 tablespoon chopped Italian parsley
Freshly ground black pepper

Steps:

  • Prepare the basic focaccia, setting it to rise as in Step 4 above.
  • While the dough is rising, fry the bacon until it is golden. Set aside to drain on paper towels. When the bacon has cooled, crumble it coarsely.
  • Once the focaccia has risen and has been placed in the pan ready to bake, as in Step 6 above, sprinkle it with the bacon.
  • Preheat oven to 500 degrees.
  • Sprinkle the focaccia with the scallions. Slice tomatoes one-fourth-inch thick and arrange them on the surface, over the bacon and scallions. Brush them with the olive oil.
  • Bake 20 to 25 minutes, until the bottom is browned and the top is puffy and lightly browned. Sprinkle with parsley and pepper and serve.

2 1/2 cups all-purpose flour
3 large egg yolks
1/4 cup cake flour
Kosher salt
1/2 cup cooked, crumbled bacon
3 tablespoons olive oil
Roasted vegetables, such as onions, garlic, and squash (optional)
Sea salt, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F. In a metal bowl, whisk together milk, water, and sugar. Stir in yeast and 1 cup all-purpose flour; let stand in a warm place until bubbly, about 5 minutes. Stir in eggs, remaining 1 1/2 cups all-purpose flour, cake flour, 1 tablespoon salt, and cooked bacon. Using a stand mixer fitted with a dough hook, knead for 8 minutes. Work dough into a ball and let rise in a warm place until doubled in size, about 1 hour.
  • Pour 2 tablespoons olive oil onto a metal 9 by 13-inch baking dish. Transfer dough to baking dish and flatten with your fingers (make sure dough reaches edge of pan). Evenly scatter the roasted vegetables on top and gently press them into dough. Place in a warm spot and let rise again until doubled, about 20 minutes. Sprinkle with sea salt.
  • Bake until evenly golden and, when turned out of the pan, bottom is browned, 12 minutes. Let cool completely 5 minutes in pan; remove to a wire rack to cool completely. Cut into squares to serve.

This is my mother-in-law's recipe. It's easy and delicious. You can make it with an olive oil topping or tomato sauce topping.

3 cups all-purpose flour
3 tablespoons white sugar
1 (.25 ounce) package instant dry yeast
1 teaspoon salt
1 ½ cups warm water (115 degrees F/46 degrees C)
1 tablespoon olive oil, or as needed
⅛ teaspoon garlic salt, or to taste
½ cup grated Parmesan cheese
1 tablespoon dried basil

Steps:

  • Whisk together 3 cups flour, sugar, yeast, and salt in a mixing bowl. Add warm water and mix well. If dough is too sticky, mix in another 1/2 cup flour.
  • Oil a bowl. Fill another, larger bowl halfway with hot water.
  • Turn dough onto a floured surface and knead until smooth. Form into a ball and place in the oiled bowl, turning to coat all sides with oil. Place the oiled bowl in the bowl of hot water. Cover and let rise until doubled in size, about 1 hour.
  • Preheat the oven to 375 degrees F (190 degrees C). Oil a 9x13-inch baking pan.
  • Turn dough out onto a floured surface and let rest for 5 minutes. Transfer dough to the prepared baking pan. Press and dimple with your fingers to even out the thickness and work it into the corners to fit. Brush lightly with olive oil, then sprinkle with garlic salt, Parmesan cheese, and finally basil.
  • Bake in the preheated oven until deep golden brown, 25 to 30 minutes. Cut into 8 squares.

1 medium onion, peeled and finely chopped
1 package rapid-rise or regular active dry yeast
1/2 cup warm water between 105 and 115 degrees
3 cups unbleached all-purpose flour
6 tablespoons olive oil
1 cup freshly grated Parmesan cheese
1/4 cup finely chopped fresh basil
2 teaspoons salt
2 teaspoons coarse or kosher salt
5 tablespoons olive oil
2 large cloves garlic, peeled and minced
1/2 cup finely chopped fresh basil
2 teaspoons salt
Freshly ground black pepper
3 to 4 large tomatoes, thinly sliced
3 tablespoons freshly grated Parmesan cheese

Steps:

  • Place the chopped onion in a bowl and pour boiling water over it. After 15 seconds, drain and blot dry with paper towels. Set aside.
  • Combine the yeast with the half-cup of water. Add one and a half cups of the flour and mix. Turn the dough out on a lightly floured board and knead it for about eight minutes until it is smooth and elastic. Pour one tablespoon of the olive oil in a bowl, add the dough, turning once to cover with the oil. Drape a lightly dampened towel over the bowl and let the dough rise in a warm, draft-free spot until doubled in bulk. This will take one and a half hours with rapid-rise yeast, or three hours with regular yeast.
  • Punch down the dough, add the onion, a quarter-cup of water, three tablespoons of olive oil, the cup of Parmesan cheese, the remaining flour, the basil and two teaspoons salt, and mix. Turn the dough out onto a lightly floured board and knead it for eight minutes, or until it is smooth and elastic, adding small amounts of additional flour if needed.
  • Preheat the oven to 400 degrees.
  • Roll the dough into a large circle measuring about 15 inches in diameter and about a quarter-inch thick, and transfer it to a heavy cookie sheet. Using your fingertips, make several indentations in the dough, so the surface is irregular. Brush with two tablespoons of olive oil and sprinkle on two teaspoons of coarse salt. Bake in the top half of the oven for 20 to 25 minutes, or until the focaccia is golden brown and crisp. (You may prepare the recipe ahead to this point, but leave the baked focaccia at room temperature.)
  • To prepare the topping, combine the olive oil, garlic, basil, salt and pepper. Lay the sliced tomatoes in an overlapping pattern on the focaccia and spoon the olive-oil mixture over them. Return the focaccia to the oven for two minutes. Sprinkle with three tablespoons of Parmesan and return the focaccia to the oven just until the cheese is melted and lightly browned, about one to two minutes. Remove from the oven and cut into large slices. Serve.

6 1/4 cups plus 3 tablespoons all-purpose flour

1 cup grape tomatoes, halved lengthwise
1 tablespoon fresh rosemary

Steps:

  • Stir together yeast, sugar, and the warm water in the bowl of an electric mixer fitted with the paddle attachment. Let stand until foamy, about 5 minutes.
  • Stir in 4 1/2 teaspoons oil. Add flour and 4 1/2 teaspoons salt; mix on medium-low speed until combined. Fit mixer with the dough hook; knead dough on medium speed until smooth, 5 to 7 minutes.
  • Transfer dough to a lightly oiled large bowl. Loosely cover with plastic wrap; let dough rise in a warm, draft-free spot until doubled in bulk, about 20 minutes.
  • Preheat oven to 400 degrees. Generously oil a 12-by-17-inch rimmed baking sheet. Spread out dough to fill sheet, working it into corners. Press in tomatoes; sprinkle with rosemary. Loosely cover with oiled plastic wrap; let rest 30 minutes.
  • Drizzle dough with remaining teaspoon oil, and sprinkle with salt. Bake 5 minutes. Rotate sheet; bake until golden, about 15 minutes more.

6 slices bacon
7 eggs
1/4 cup milk
1 teaspoon Dijon mustard
1 cup coarsely chopped seeded tomatoes
1 garlic clove, minced
1 cup shredded cheddar cheese

Steps:

  • Cook bacon in large skillet;remove reserving 1 tbsp drippings in skillet; break bacon into bite sized pieces; set aside.
  • In medium bowl, combine eggs, milk and mustard; blend well.
  • Heat reserved bacon drippings over low heat; add tomato and garlic; cook 2 minutes or until tomato is warm Stir in bacon.
  • Pour egg mixture into skillet; cook over low heat 4 minutes; as edges set run spatula around edge of skillet and left egg mixture to allow uncooked egg to flow to bottom of skillet Cover; cook an additional 4 to 5 minutes or until top is set but still moist.
  • Sprinkle with cheese; cover tightly; remove from heat; let stand 1 to 2 minutes or until cheese is melted cut into wedges to serve.
