3 cups All purpose flour
2 cups Sugar
1/2 cup baking cocoa
2 teaspoons Baking soda
1 teaspoon Salt
2 cups cold water
3/4 cup Canola Oil
1 egg
2 tablespoons White vinegar
2 teaspoons Vanilla extract
4 ounces Cream cheese, softened
1/4 cup Sugar
1/8 teaspoon Salt
2 tablespoons Beaten egg
1/2 teaspoon Vanilla extract
3/4 cup Milk chocolate chips
Confectioners Sugar

Steps:

  • Preheat oven to 350 degrees. In a large bowl, combine ingredients through salt. In another bowl, combine remaining batter ingredients. Stir into dry ingredients until moistened. For filling: Beat the cream cheese, sugar and salt until smooth. Beat on egg and vanilla. Fold in chips. Fill 12 jumbo muffin cups half full with batter. Drop heaping Tablespoonfuls of filling into center of each; cover with remaining batter. Bake 25-30 minutes or until toothpick inserted into center comes out clean. Cool for 5 minutes before removing from pan to wire rack to cool completely. Sprinkle with confectioners sugar.

Chocolate Sour Cream Muffins image

This recipe originally called for applesauce, but one time in a pinch, I substituted sour cream... it worked! Chocolate lovers can't resist these rich cake-like muffins.

Yield 2 dozen.

Number Of Ingredients 12

2-2/3 cups all-purpose flour
1-1/2 cups sugar
1/2 cup baking cocoa
1-1/2 teaspoons baking soda
1/2 teaspoon salt
3 large eggs
1 cup sour cream
1/2 cup water
1/2 cup milk
1/2 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips

Steps:

  • In a large bowl, combine the flour, sugar, cocoa, baking soda and salt. In another bowl, whisk the eggs, sour cream, water, milk, oil and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips. , Fill greased or paper-lined muffin cups two-thirds full. Bake at 325° for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
