DUTCH OVEN EASY LASAGNA

½ lb ground beef
½ lb pork sausage
18 fresh wonton wrappers
1 beaten egg
1 cup ricotta cheese
8 oz. shredded Mozzarella cheese
½ cup grated Parmesan cheese
1 1 lb. 8 oz. jar spaghetti sauce

Steps:

  • Lightly oil or spray an 8 inch dutch oven.
  • Brown sausage and hamburger over Drain well.
  • Combine egg, ricotta cheese, Parmesan and browned sausage.
  • Cover bottom of dutch oven with a layer of sauce. Place 6 Wonton wrappers in a layer over sauce.
  • Spoon half of sausage and hamburger mixture over wrappers. Cover evenly with sauce and half of Mozzarella cheese.
  • Repeat layers ending with a layer of wrappers covered with sauce.
  • Bake in the dutch oven for 25-30 minutes at 375 degrees. About 10 minutes before it is done, add a handful of Mozzarella. Cover and cook for 10 minutes or until cheese is brown and melted.
  • Let sit for 20 minutes in dutch oven.

1 large can tomato sauce

Steps:

  • Cook lasagna noodles according to package directions. Brown beef and onion. Place 1/2 in bottom of Dutch oven. Add 1/2 each of cottage cheese, noodles, tomato sauce basil, oregano, and wine. 15 lasagna noodles
2 cups broccoli florets
2 cups cauliflower florets
1 cup green peas
1 cup corn
2 cups shredded mozzarella cheese
1 cup shredded Cheddar cheese

Steps:

  • Pour about 1/2 cup of spaghetti sauce into the bottom of a large, cast-iron Dutch oven with lid. Spread the sauce around evenly.
  • Place down a layer of three lasagna noodles, and spread about 3/4 cup of spaghetti sauce over them. Lay in the broccoli and sprinkle with 2/3 cup of mozzarella cheese. Repeat this layering of noodles, sauce, vegetables, and cheese using the cauliflower, green peas, and corn.
  • Cover the corn with the last three remaining lasagna noodles, and spread the remaining spaghetti sauce on top. Sprinkle with the Cheddar cheese.
  • Place the lid on the Dutch oven, and place 12 hot coals underneath and 12 coals on top. Cook for 75 minutes or until noodles are soft and tender. Remove the coals, and allow to stand for about 10 minutes to firm up a bit before serving.

1/2 medium onion, diced
1 lb ground turkey Italian sausage
2 cups chopped kale
3 garlic cloves, minced
1 1/2 tablespoons italian seasoning
1/4 teaspoon crushed red pepper flakes
1 (24 ounce) jar marinara sauce
1 (16 ounce) container cottage cheese
2 large eggs
1 teaspoon coarse salt
1/2 teaspoon ground black pepper
9 whole grain no-boil lasagna noodles
2 cups shredded mozzarella cheese
1 cup shredded parmesan cheese
2 tablespoons chopped flat-leaf Italian parsley

Steps:

  • Preheat oven to 375ºF.
  • On the stovetop, heat olive oil in a Dutch oven to medium-high heat. Add onion and cook 2-3 minutes, until starting to soften. Add turkey sausage and kale and sauté until sausage is browned and kale is wilted, about 5-6 minutes. Stir in garlic, Italian seasoning, and red pepper flakes. Remove from heat.
  • In a medium mixing bowl, whisk together marinara sauce, cottage cheese, eggs, salt, pepper, and the sausage/kale mixture.
  • In the same Dutch oven, spoon some of the sausage mixture into the bottom. Place 3 noodles on top, breaking them up to fit the pot, if necessary. Top with 1/3 of the sausage mixture then top with 1/3 of the mozzarella and Parmesan cheese. Repeat with remaining ingredients, finishing with a layer of cheese.
  • Bake in the oven for 35 minutes with the lid on. Remove the lid and bake for an additional 12 minutes. Turn the oven on a low broil and broil for 3-4 minutes, until cheese is bubbly and browned. Remove from the oven and allow to cool about 10 minutes.
  • Slice and serve with chopped parsley.
