WALNUT TACOS
Walnuts, pulsed in a food processor with a Mexican-inspired combination of spices, form the protein base of these easy-to-assemble tacos.

Steps:
- 1 Make the filling: In a food processor, combine the walnuts, lime juice, cilantro, water, cumin, chili powders, salt and black pepper and pulse until the nuts are reduced to pebble-size, about 1 minute; do not over-process
- 2 Taste, and season with more salt, if desired
- 3 Assemble the tacos: Divide the corn tortillas among serving plates
- 4 Spoon about 2 tablespoons of the filling on each tortilla, then add some tomato, a few slivers of cabbage, a couple slices of avocado, a spoonful of salsa verde, a dollop of yogurt and some cilantro
- 5 Serve with lime wedges on the side, for squeezing

- Pulse until course and crumbly. Don't pulse for too long, or else you'll end up with butter!

Steps:
- In food processor, place walnuts and blend until finely chopped, but not into powder.
- Add in the seasonings to your taste.
- In a bowl, combine all other ingredients except greens.
- Place a collard leaf on a surface and crack the ribs remaining to flatten.
- Place an amount of the walnut mixture on top along with desired amount of tomato mixture.
- Roll up and enjoy.

- Add walnuts to a food processor and pulse until walnuts are evenly crumbled, resembling ground meat.
- Heat olive oil over medium-low heat in a medium skillet. Add onions and cook for 5 minutes, add walnuts, soy sauce, chili powder, cumin, salt, oregano, and garlic powder. Stir well to evenly coat and moisten walnuts. Cook for 2-3 minutes.
- Spoon walnut taco mixture into shells. Top with lettuce, tomato, cheese, salsa and sour cream.
