4 (1 1/4"-thick) bone-in pork chops
1/2 teaspoon kosher salt, plus more
Freshly ground black pepper
2 tablespoons olive oil
3 medium crisp, sweet apples (such as Honeycrisp, Fuji, or Gala), cut into 2" wedges
10 sage leaves

Steps:

  • Preheat oven to 400°F. Season pork chops on both sides with salt and pepper. Heat oil in a large skillet over medium-high. Sear pork chops, turning occasionally (including outside edge of fat cap), until browned all over, 8-10 minutes. Transfer chops to a roasting pan.
  • Cook apples, sage, and 1/2 tsp. salt in same skillet over medium heat, turning apples, until browned on all sides, about 3 minutes. Transfer apples and sage to roasting pan, nestling around chops.
  • Transfer roasting pan to oven and roast until chops are cooked through and an instant-read thermometer inserted into center of chops registers 160°F, 8-10 minutes.
  • Divide chops among plates and serve with apples and sage alongside.

4 (4-oz.) boneless smoked pork chops
2 tablespoons apple jelly

Steps:

  • Spray 8-inch square (2-quart) glass baking dish with nonstick cooking spray. Melt butter in large skillet over medium heat. Add onion and celery; cook 3 to 4 minutes or until crisp-tender, stirring occasionally.
  • Add apple, raisins and apple juice; cook 2 to 3 minutes or until mixture comes to a boil. Remove from heat; stir in stuffing mix. Spread mixture in sprayed baking dish. Top with pork chops. Cover with foil; refrigerate at least 8 hours or overnight.
  • Heat oven to 350°F. Bake covered for 30 minutes.
  • Uncover baking dish; brush pork chops with jelly. Bake uncovered an additional 15 to 20 minutes or until pork chops are thoroughly heated.

4 boneless pork loin chops (6 ounces each)
Coarse salt and ground pepper
1 tablespoon olive oil
1 tablespoon butter
1 medium shallot, minced
1 teaspoon chopped fresh sage or 1/4 teaspoon dried
1/4 teaspoon dried thyme leaves
1/2 cup dry white wine

Steps:

  • Season pork generously with salt and pepper. In a large skillet, heat oil and butter over medium; add pork. Cook until browned and opaque throughout, 3 to 4 minutes per side. Transfer to a plate, and cover loosely with aluminum foil to keep warm.
  • Make sauce: Add shallot to skillet; cook over medium, stirring until softened, 1 to 2 minutes. Add sage, thyme, and wine. Simmer until sauce is reduced to about 1/3 cup, 2 to 3 minutes; stir in any accumulated juices from plate with meat. Transfer chops to plates, drizzle with sauce, and serve with Parmesan Rice.

1 ½ teaspoons dried sage
1 teaspoon minced garlic
1 teaspoon ground thyme

Steps:

  • Mix flour, sage, garlic, thyme, salt, allspice, and paprika together in a bowl. Sprinkle about 1 tablespoon of the flour mixture over both sides of each pork chop.
  • Heat olive oil in a large skillet over medium-high heat. Cook pork chops in hot oil until browned completely, 2 to 3 minutes more side. Remove pork chops to a platter.
  • Cook and stir onion in the oil and drippings retained in the skillet until tender, about 3 minutes; add apple slices and continue cooking until the apple slices are tender, about 2 minutes.   • In large resealable food-storage plastic bag, mix 2 cups of the apple juice, 1/2 cup brown sugar and the salt. Add pork chops; seal bag. Refrigerate 8 hours, turning bag occasionally.
  • Drain pork chops, discarding marinade. Pat pork dry; sprinkle with 1/4 teaspoon of the pepper. In 12-inch nonstick skillet, heat oil over medium-high heat. 1 large garlic clove, minced (about 1 tsp)
1/2 teaspoon salt

4 3/4 in thick pork loin chops with bone, about 8 ounces each
2 teaspoons olive oil
2 teaspoons olive oil
1 large onion, cut in half and then into half-moons
1 large granny smith apple, coarsely shredded
1 teaspoon chopped fresh sage or 1/2 teaspoon dried sage
1/2 head green cabbage, coarsely shredded (about 9 cups)
3 large carrots, coarsely shredded (about 3 cups)
2 tablespoons cider vinegar

Steps:

  • Chops: combine the sage, garlic, salt and a few grinds of fresh black pepper in a small bowl. Rub all over the chops and let them stand at room temperature for ten minutes.
  • Heat the oil in a large non-stick frying pan over medium-high heat. Add the chops and brown, 1 to 2 minutes per side. Transfer to a plate.
  • Slaw: Wipe out the frying pan, add fresh oil and heat over medium heat.
  • Add the onion, apple and sage and cook, stirring a few times, until softened and golden brown, 4 to 5 minutes.
  • Add the cabbage, carrot, vinegar and salt and continue cooking until the veggies start to soften, about 4 to 5 minutes.
  • Add the broth to the pan, then return the chops, burying them in the vegetables.

2 medium Fuji apples, cored, quartered, cut into 1/8-inch matchstick-size strips
1 cup apple cider
2 tablespoons apple cider vinegar
2 1-pound pork tenderloins
4 tablespoons canola oil, divided
24 whole fresh sage leaves, divided
1/2 cup (1 stick) butter, cut into 8 pieces

Steps:

  • Toss apples in bowl with cider and vinegar. Cut each pork tenderloin crosswise into 6 pieces; place between 2 sheets of plastic wrap. Using meat mallet, pound to 1/3-inch thickness. Sprinkle with salt and pepper.
  • Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Lay 6 sage leaves in bottom of skillet. Place 1 pork medallion on each sage leaf, pressing down lightly with back of spatula. Reduce heat to medium; cook until underside of pork is golden, about 3 minutes. Place 1 sage leaf on top of each pork medallion and carefully turn each piece to keep sage in place. 2 slices white bread
handful of sage leaves
25g parmesan , finely grated
1 egg , beaten
1 tbsp oil
½ white cabbage , core removed, finely shredded
4 tbsp buttermilk or low-fat natural yogurt
2 red-skinned apples , halved and sliced
lemon wedges, to serve (optional)

Steps:

  • Lay the pork steaks between two sheets of cling film or baking paper and bash with a rolling pin until approx 1cm thick. Whizz the bread in a food processor to make breadcrumbs. Add the sage and pulse a few more times to roughly chop the leaves. Mix in the Parmesan and spread over a large plate. Season with black pepper.
  • One by one, dip each steak into the beaten egg, allow the excess to drip off, then press into the breadcrumb mix on both sides. Set aside.
  • Heat the oil in a large non-stick frying pan and fry the steaks for 3-4 mins on each side until cooked through. Meanwhile, mix the cabbage, buttermilk or yogurt and apple, then season. Serve the steaks with the coleslaw and a lemon wedge, if using, for squeezing over.
