Creamed Spinach image

Made with frozen spinach and heavy cream, this easy yet elegant side dish can be made ahead of time and reheated in the microwave.

Number Of Ingredients 9

3 tablespoons unsalted butter
½ cup finely chopped shallots, from 1 to 2 shallots
2 garlic cloves, finely chopped
1 pint (2 cups) heavy cream
½ teaspoon salt
¼ teaspoon freshly ground black pepper
Pinch freshly grated nutmeg, or use ground nutmeg
½ cup finely shredded Parmigiano-Reggiano
2 pounds frozen cut leaf spinach, thawed and squeezed very dry (see note)

Steps:

  • Melt the butter in a large skillet over medium-low heat. Add the shallots and cook, stirring frequently, until soft and translucent, about 4 minutes. Add the garlic and cook, stirring constantly, for 1 minute more. Do not brown. Add the heavy cream, salt, pepper, and nutmeg and bring to a gentle boil. Cook, uncovered, stirring occasionally, until the cream is thick enough to coat a wooden spoon, about 10 minutes. Add the cheese and stir until melted. Add the spinach and stir until evenly combined with the cream sauce. Taste and adjust seasoning if necessary. (If the spinach seems a little watery, cook over medium-low heat until any excess liquid evaporates.) Serve warm.
  • Note: Cut leaf spinach is not the same as chopped spinach. If your market doesn't carry cut leaf spinach, look for frozen whole leaf spinach. (Chopped spinach will work but the texture won't be as appealing.) Some markets carry 1-lb bags and some carry 10-oz boxes; if you can only find the 10-oz boxes, you'll need three of them. If you'd like to start with fresh spinach, you'll need about 2 pounds baby spinach leaves. Steam and drain the baby spinach, then roughly chop and measure out 2 packed cups.
  • Make-Ahead Instructions: This dish can be made and refrigerated a day ahead of time. Reheat in the microwave, uncovered, stirring every 30 seconds or so, until hot, a few minutes. When reheated, the spinach won't be quite as creamy-looking as it was originally (though the taste will be the same); you can add a bit of cream when reheating to get a creamier consistency, if you'd like.

2 eggs
½ cup sour cream
2 tablespoons Worcestershire sauce
1 (1 ounce) package dry onion soup mix
½ cup grated Parmesan cheese
½ cup Italian salad dressing
1 ½ cups Italian seasoned bread crumbs
1 cup chopped fresh spinach

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, mix the ground beef, eggs, sour cream, Worcestershire sauce, dry onion soup mix, Parmesan cheese, salad dressing, bread crumbs, and spinach. Transfer to a 5x9 inch pan, and cover with aluminum foil.
  • Bake 45 minutes in the preheated oven. Remove foil, and continue baking 15 minutes, to a minimum internal temperature of 160 degrees F (70 degrees C). Let stand 5 minutes before slicing.

1 lb. frozen chopped spinach
2 tablespoons unsalted butter
1 tablespoon minced fresh garlic
1/2 teaspoon Diamond Crystal kosher salt
1/4 teaspoon black pepper
1/4 teaspoon ground nutmeg
1/4 cup heavy cream (plus up to 1/4 cup more if needed)
1/4 cup grated Parmesan cheese

Steps:

  • Place the frozen spinach in a microwave-safe bowl. Cover and microwave on high just until thawed, about 4 minutes.
  • Place the spinach in a colander and press on it with the back of a large spoon to remove as much liquid as possible.
  • In a medium saucepan, melt the butter over medium heat. Add the garlic and cook for 1 minute.
  • Stir in the spinach, salt, pepper, nutmeg, heavy cream, and Parmesan.
  • Cook, stirring, just until heated through, 1-2 minutes, then serve.

Pinch of nutmeg
1/4 cup all purpose flour
1/2 cup heavy cream
1/2 cup milk
1/2 cup shredded Gruyere cheese
1/4 cup freshly grated Parmesan
Kosher salt and freshly ground black pepper, to taste
1 (16-ounce) package frozen chopped spinach, thawed and squeezed dry

Steps:

  • Melt butter in a large skillet over medium heat. Add shallot, garlic and nutmeg. Cook, stirring frequently, until shallots have become translucent, about 2-3 minutes. Whisk in flour until lightly browned, about 1-2 minutes. Gradually whisk in heavy cream and milk. Cook, whisking constantly, until the sauce has begun to thicken, about 5 minutes. Stir in cheeses until melted, about 1-2 minutes; season with salt and pepper, to taste. Stir in spinach until well combined, about 1 minute. Serve immediately.

1-2 Tablespoons cornstarch
1 teaspoon salt

12 oz spinach, washed and dried

Steps:

  • In a large skillet, melt butter over medium heat. Add onion and cook, stirring often, until translucent (about 3 minutes). Add garlic and cook an additional 2 minutes, stirring often.
  • Heat the milk in a microwave for 25 seconds; whisk in the cornstarch. Pour mixture to skillet.
  • Add salt, pepper, cream cheese, and Parmesan cheese to skillet; whisk until well combined.
  • Stir in the spinach, coating the spinach completely in the cream mixture. Serve warm.

1/2 cup wheat germ
1/2 cup shredded carrot

1/2 cup steak sauce

  • Mix EVERYTHING together.

2 tsp minced garlic
¼ cup all purpose flour
1 ½-2 cups heavy cream (or half and half)
1 tsp onion powder
¾ cup parmesan cheese
1 tsp salt
½ tsp black pepper
¼ tsp crushed red pepper

Steps:

  • Heat a large skillet over medium-high heat and add the butter. Once melted add in the frozen chopped spinach (no need to defrost prior). Stir, until heated through and no longer frozen.
  • Add in the minced garlic and cook until fragrant. Stir in the all purpose flour and cook an additional 2 to 3 minutes, until no flour is visible. Gradually stir in 1 ½ cups heavy cream and reduce heat to medium.
  • Stir in the parmesan cheese, onion powder, salt, pepper and crushed red pepper. If needed, add in up to ½ cup more heavy cream until desired creaminess is reached. Serve right away and enjoy!

1 pound frozen chopped spinach or 2 pounds fresh (see notes)
2 tablespoons butter
1/2 medium onion (chopped)
2 cloves garlic (minced)
3/4 cup heavy/whipping cream
4 ounces cream cheese (1/2 block Philly) (softened)
1 cup freshly grated parmesan cheese
Pinch nutmeg
Salt & pepper (to taste)

Steps:

  • Frozen spinach: Thaw the spinach under running water (or try microwaving it for a few minutes to speed up the process), then squeeze out as much of the excess water as you can. Fresh spinach: Boil a pot of water. Add the spinach and cook for about 1 minute. Drain it and rinse it under cool water. Squeeze out excess water. Chop if desired.
  • In a pot, sauté the butter and onion over medium heat until it's lightly browned (about 5-7 minutes).
  • Reduce heat (I keep it on medium-low for this step, but you can increase heat as needed). Stir in the garlic, followed by the heavy cream, cream cheese, parmesan, and nutmeg. It will take a few minutes for the cream cheese to melt in, especially if the cream cheese is cold. I break it up with my spoon/stir it continuously. The sauce should thicken up as it cooks.
  • Stir in the spinach and let it heat through. If you want more liquid, add in a splash more cream. If there's too much liquid, you may need to cook the spinach for a few more minutes to reduce the sauce to your liking.
  • Season with salt & pepper as needed (I am pretty generous with both).
