CREAMY BROCCOLI SLAW

And when the temperatures rise, it's always nice to have a new way to serve the traditional salad recipe. Let's be honest, the same old greens can get tired and boring. That's why we were thrilled to taste the Test Kitchen's new spin on the broccoli slaw. Whether you're prepping for a potluck or planning a casual backyard luncheon, this recipe, which serves ten, is sure to please. The base of this easy-to-prepare salad is a slaw mix that you can pick up in the produce aisle at the local supermarket. Our Test Kitchen suggests the broccoli slaw mix or a standard cabbage, carrot, and red cabbage slaw combination. We love the addition of the toasted pecans and scallions for adding a nice savory touch, and that satisfying crunch, and the golden raisins add an unexpected hint of sweetness. Our secret ingredient is the lemon zest which keeps the slaw vibrant and extra fresh. If you want to make this salad a main meal, we recommend tossing grilled chicken into the mix. - Mix mayonnaise, vinegar, sugar, celery seed, and ramen noodle seasoning packet in a bowl; chill in refrigerator.
- Heat olive oil and sesame oil in a skillet over medium heat; cook and stir ramen noodles and almonds until toasted, stirring frequently, 3 to 5 minutes. Remove from heat and cool.

CREAMY BROCCOLI SLAW

- If using regular yogurt, place it in a strainer lined with paper towel and set the strainer over a bowl. Let the yogurt drain and thicken for 20 minutes.
- Preheat oven to 300 degrees F. Place sunflower seeds and 1/4 teaspoon salt on a rimmed baking sheet and shake to combine. Toast seeds until aromatic, about 10 minutes. Cool and reserve.
- Combine yogurt, buttermilk, lemon juice, mayonnaise, mustard, 1/2 teaspoon salt and pepper. Whisk to incorporate and reserve.
- Peel tough outer layer of broccoli stalks and trim off 1/4 inch from bottoms of stalks (should be about 3/4 of a pound. tender broccoli stalks remaining). Shred stalks in food processor, then shred carrots. Combine shredded broccoli and carrots with dressing and toss to combine. Sprinkle with sunflower seeds and serve.
THE BEST CREAMY COLESLAW
We made our cool, crunchy slaw with just the right amount of tang from sour cream and vinegar. A bit of honey balances the acidity. This classic summer side dish would be welcome at any picnic or backyard BBQ.

CREAM OF BROCCOLI, SWEET POTATO, AND ZUCCHINI SOUP
This is a lovely creamed soup, thick with veggies and flavor. It is something to serve company with a loaf of homemade bread and a salad. A country inn near us serves a soup similar to this, and has for years attracted people with it. This is the closest to it that I can get. Sometimes I think that this is better. I think the unique flavor is the cumin. It is delicious.

- Note before you start; the basil, tarragon, and cumin are added to taste--keep tasing till you get it the way you want it.
- Break up the broccoli into flowerettes and simmer alone in another pan; set aside.
- Cover the bottom of a large pot with butter and saute onions till golden, but not brown.
- Add the sweet potato and zucchini.
- Stir till veggies are hot and then cover with the chicken stock.
- Put a colander down into the pot of liquid so that the liquid is up through the holes.
- Measure the stock because this determines how much Creamora to put in (1 teaspoon of Creamora to 1 cup of liquid) and with a whisk, whisk in the Cremora.
- Add the celery seed, nutmeg, basil, tarragon, cumin, salt and pepper.
- Bring to a boil.
- Add the Potato Buds to the colander whisking all the time till it is thick.
- Then gently take out the colaner and stir. You can use more or less depending on the thickness that you like.
- Add the cream for extra richness (or a small can of evaporated milk would also do).
- Then add the broccoli using as much as you like.
- Do not boil this soup.
