This Buffalo Chicken Sandwich recipe has a juicy chicken breast coated in buffalo sauce with lettuce, tomato and a creamy blue cheese sauce.

1 1/2 pounds boneless, skinless chicken cutlets (4 cutlets)
1 teaspoon paprika
1 teaspoon chili powder
Salt and pepper
2 tablespoons olive oil
1/2 cup Frank's Red Hot Buffalo Sauce
2 tablespoons butter (melted)
1/2 cup sour cream
1/2 cup ranch dressing
4 ounces blue cheese crumbles
2 green onions (chopped)
4 Large sandwich buns (Brioche or other thick, sturdy buns)
8 Lettuce leaves (optional)
1 ripe tomato (sliced)
Celery and carrot sticks (for serving (optional))

Steps:

  • Place chicken between two large pieces of plastic wrap and gently pound the larger end to even thickness.
  • Melt olive oil in a large skillet over medium heat. Pat chicken dry and season with paprika, chili powder and salt and pepper to taste. Cook chicken in the skillet, about 4 minutes per side or until no longer pink in the center.
  • In a small microwave-safe bowl, melt the butter with the hot sauce. Stir to combine. When chicken is finished cooking, coat with the hot sauce mixture.
  • In another small bowl, combine sour cream, Ranch dressing, crumbled blue cheese and sliced green onions.
  • Split the buns and spread dressing mixture on both the tops and bottoms.

2/3 cup Frank's Hot Sauce
1/2 cup butter (, melted)
8 oz pkg cream cheese (, cubed)
buns ((or ciabatta rolls sliced in half))
ranch dressing

Steps:

  • Place your chicken in the bottom of your 6-quart slow cooker (I used Sir Hamilton, my Hamilton Beach Programmable Insulated Slow Cooker).
  • Mix together you melted butter and Frank's and pour over your chicken
  • Place your cubed cream cheese evenly on top (make sure the cubes are not touching the sides of the crock pot)
  • Cover and cook on low for 4-6 hours, stirring occasionally
  • Serve on buns/rolls with ranch dressing

I threw this together one night with some leftover ingredients in the fridge. This is great with leftover grilled chicken or a rotisserie chicken. I HIGHLY recommend slightly overcooking your chicken while preparing this dish; BEFORE adding the wet ingredients. Sounds strange but its much better to have slightly dry chicken than moist! The toasted chicken will be more substantial with all of the wet ingredients in this dish! Also, I toast our hamburger buns to give it some substance as well....no one likes soggy buns!! My hubby loves this (and he is extremely picky) and requests this at least once a week! Enjoy!!

2 cups chicken, Shredded (I shred pretty big pieces, not fine)
1/4 cup hot sauce (your preference)
1/4 cup ranch dressing (bottled, your preference)
1/4 cup cream cheese, softened

1 teaspoon onion powder

1 teaspoon sweet paprika, 1 /3 palm full
1 teaspoon chili powder, 1/3 palm full
A drizzle extra-virgin olive oil
2 tablespoons butter
1/2 cup, 4 ounces, cayenne pepper sauce, preferred brand Frank's Red Hot
Bib or leaf lettuce leaves
4 crusty rolls, split
2 cups sour cream
4 scallions, thinly sliced

8 ribs celery, cut into sticks

Steps:

  • Heat a large nonstick skillet over medium high heat. Season chicken with salt, pepper, paprika and chili powder. Drizzle breast with a little extra virgin olive oil to coat. Pan grill chicken breasts 5 minutes on each side.
  • Heat a metal or oven safe glass bowl over low heat and melt butter in the bowl. Add hot sauce to the butter and combine. When the chicken breasts are done, remove from pan and add to the bowl and coat evenly with hot sauce mixture.

1 cup buttermilk
1/2 cup ranch dressing
1 1/2 ounces blue cheese, crumbled (about 1/3 cup)

Vegetable oil, for frying

Steps:

  • Place the chicken in a shallow bowl. Cover with the buttermilk, turning to coat. Combine the ranch dressing and blue cheese in a small bowl and refrigerate. ⅔ cup buttermilk
1 tablespoon Buffalo sauce
1 ½ teaspoons garlic powder

1 teaspoon poultry seasoning

¼ cup canola oil, or as needed
6 roll (blank)s hamburger buns
2 tablespoons Buffalo sauce, or to taste

Steps:

  • Slice each chicken breast horizontally into 2 thin fillets. Place 6 fillets in a resealable zip-top bag with buttermilk, 1 tablespoon Buffalo sauce, and garlic powder. Seal the bag and shake to blend ingredients and evenly coat the chicken. Refrigerate for at least 2 hours or overnight.
