My mom and I developed this recipe to see if there was a carrot dish that even people who don't care for carrots would enjoy. So far, I haven't met anyone who hasn't liked this casserole. -Laurie Heward, Fillmore, Utah

1-1/2 pounds carrots, sliced or 1 package (20 ounces) frozen sliced carrots, thawed
1 cup mayonnaise
1 tablespoon grated onion
1 tablespoon prepared horseradish
1/4 cup shredded cheddar cheese
2 tablespoons crushed Ritz crackers

Steps:

  • Preheat oven to 350°. Place 1 in. of water in a large saucepan; add carrots. Bring to a boil. Reduce heat; cover and simmer until crisp-tender, 7-9 minutes. Drain, reserving 1/4 cup cooking liquid. Transfer carrots to a 1-1/2-qt. baking dish., In a small bowl, combine the mayonnaise, onion, horseradish and reserved cooking liquid; spread evenly over carrots. Sprinkle with cheese; top with cracker crumbs. Bake, uncovered, for 30 minutes.

2 pounds fresh carrots, thinly sliced
1/4 cup butter, cubed
1/4 cup finely chopped onion
1/4 cup all-purpose flour
1/4 teaspoon ground mustard
2 cups 2% milk
1 cup shredded Monterey Jack cheese
1 cup shredded sharp cheddar cheese
1 tablespoon prepared horseradish
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon celery salt
1 cup soft bread crumbs
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350°. In a Dutch oven, bring 1 in. of water to a boil. Add carrots; cook, covered, 5-7 minutes or until crisp-tender. Drain; set aside., In same pan, heat butter over medium heat. Add onion; cook and stir 1-2 minutes or until tender., Stir in flour and mustard until blended; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Add cheeses, horseradish and seasonings; cook and stir until cheese is melted. Stir in carrots., Transfer to a greased 11x7-in. baking dish. In a small bowl, toss bread crumbs with melted butter; sprinkle over top. Bake, uncovered, 25-30 minutes or until heated through and bread crumbs are lightly browned.

5 cups sliced carrots
3 tablespoons butter
1 onion, chopped
1 (10.75 ounce) can condensed cream of celery soup
salt and pepper to taste
½ cup cubed processed cheese
2 cups seasoned croutons
⅓ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
  • Bring a pot of water to a boil. Add carrots and cook until tender but still firm, about 8 minutes; drain.
  • Melt 3 tablespoons butter in a medium saucepan. Saute onions and stir in soup, salt, pepper and cheese. Stir in cooked carrots. Transfer mixture to prepared dish.
  • Toss croutons with 1/3 cup melted butter; scatter over casserole.
  • Bake in preheated oven for 20 to 30 minutes, or until heated through.

1 (8 ounce) package cream cheese, softened
¼ cup white sugar
1 large egg, beaten
2 cups all-purpose flour
1 ¾ cups white sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
1 cup vegetable oil
3 large eggs, beaten
3 cups shredded carrots

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan (such as Bundt®).
  • Combine cream cheese, sugar, and egg in a bowl for filling, mixing until well blended. Set aside.
  • Combine flour, sugar, baking soda, cinnamon, and salt for cake in a bowl. Add oil and eggs; mix until moistened. Fold in carrots. Reserve 2 cups of batter; pour remaining batter into the prepared pan. Pour cream cheese mixture over batter. Spoon reserved batter carefully over cream cheese mixture, spreading to cover.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 55 minutes. Cool for 10 minutes; remove from the pan. Sprinkle with powdered sugar.

3 lbs carrots, peeled and sliced or 2 (20 ounce) bags of sliced frozen carrots, thawed
2 cups mayonnaise
3 tablespoons grated onions
2 tablespoons prepared horseradish
1/2 cup shredded cheddar cheese
1/4 cup dry breadcrumbs
1 tablespoon margarine

Steps:

  • In a sauce pan, cook carrots just until cripsp-tender and then drain reserving 1/2 c of the cooking liquid.
  • Place carrots in a 3 quart lightly greased casserole.
  • Combine the mayonnaise, onion, horseradish and reserved cooking liquid.
  • Spead evenly over carrots.
  • Sprinkle with cheese.
  • Toss bread crumbs with butter.
  • Sprinkle over cheese.
  • Bake uncovered at 350 for 30 minutes.

2012-12-11 Preheat oven to 350°. Grease a 9x13” glass casserole dish. Bring a pot of water to a boil. Add carrots and cook until tender; drain. Melt 3 tablespoons butter in a medium saucepan. Sauté onions about 5 minutes; stir in soup, salt, pepper, parsley and cheese. Stir in cooked carrots. Transfer mixture to prepared dish.
