This chipotle dressing is a creamy and delicious salad dressing recipe that's ideal for pasta salad, potato salad, or on your favorite greens. It also goes well as a dip for raw veggies or drizzled over roasted veggies. You'll LOVE it!

½ cup fresh squeezed lime juice
¼ cup avocado oil (or another neutral-flavored oil)
3 tablespoons adobo sauce (the sauce that comes in jars of chipotle peppers)
1 teaspoon sea salt
1 teaspoon oregano
½ teaspoon black pepper
1 garlic clove (finely minced)

Steps:

  • Add all the Chipotle Lime Dressing ingredients to a 2-cup mason jar and shake to mix.
  • Keeps well for 5-6 days in your fridge.

2 Tbsp. white wine vinegar
1/4 cup water
2 Tbsp. oil {I use grapeseed oil}

Steps:

  • 1.Place all ingredients in your Blendtec blender {if you don't have a Blendtec, your normal blender will work fine} and pulse until all ingredients are blended well. 2.Use on your favorite salad recipe or as a dipping sauce.

3/4 cup mayonnaise
1/4 cup sour cream
1/2 cup fresh cilantro

Steps:

  • Process lime juice, shallot, garlic, chipotle, sugar, cumin, 1/2 teaspoon salt, and 1/2 teaspoon pepper in blender until shallot and garlic are finely chopped, about 15 seconds.
  • Add mayonnaise, sour cream, and cilantro; continue to process until smooth, about 15 seconds.
  • Makes about 1 1/2 cups.
  • Store in the refrigerator.

A weeknight single-skillet dinner that packs a huge amount of flavor and just the right smoky heat. My family is lactose-intolerant and we adhere to a low fodmap diet. The small amount of garlic in the adobo works for us, but your mileage may vary. You can tone down the heat by serving this dish with a side of yellow rice or kick it up by adding in cayenne. Adding in the optional chipotle chilies approximately doubles the heat of the recipe.

1 teaspoon garlic powder
1 ½ pounds boneless skinless chicken breasts, diced
1 small onion, diced
¼ cup roughly chopped fresh cilantro
3 tablespoons adobo sauce from chipotle peppers
1 tablespoon dried oregano
1 tablespoon dried sage
½ tablespoon ground cumin
½ tablespoon ground paprika
1 (15 ounce) can no-salt-added black beans, drained
1 (8 ounce) package sliced fresh mushrooms
1 bunch asparagus, trimmed and cut into 1/2-inch pieces
1 large bell pepper, diced
1 cup chicken stock
2 peppers chipotle peppers in adobo sauce, drained and diced
1 cup fat-free half-and-half
4 ounces crumbled cotija cheese

Steps:

  • Heat a skillet over medium-high heat for 2 minutes. Mix together olive oil and garlic powder in a small bowl and drizzle into the hot skillet. Add diced chicken; cook and stir for 3 minutes. Add onion, cilantro, and adobo sauce, then immediately add oregano, sage, cumin, and paprika. Stir and cook for 5 minutes.
  • Add beans, mushrooms, asparagus, and bell pepper; stir. Add chicken stock; bring to a simmer and cook until liquid is mostly gone, 10 to 15 minutes. Add chipotle peppers, pour in half-and-half, and return to a simmer. Add cotija cheese and gently stir until cheese melts, 1 to 2 minutes. Serve immediately.

I made this up the other night because I ran out of fat free yogurt for a raita. It was great on our grilled Thai chicken, and I'm sure it would be great with grilled fish or shrimp, on grilled veggies, etc. Very refreshing, but with a kick! Add an extra chipotle if you love spicy... If you have fresh tomatoes or cucumber, de-seed them and finely chop and add them in, for a great relish!

16 ounces fat free sour cream
3 garlic cloves
1 large chipotle chile in adobo
1 cup fresh cilantro, loosely packed
2 spring onions
2 teaspoons sea salt
2 teaspoons ground cumin
2 tablespoons lime juice

Steps:

  • Roughly chop all the veggies, from garlic to onions, and add to a mini-chopper (or blender, but my mini-chopper works soooo much better).
  • Add the sour cream, salt, cumin and lime juice.
  • Blend until well mixed, but with a little texture.
  • Cover and chill for at least an hour before serving. Check for seasoning and add ground pepper and salt if needed.
