CREAMY PASTA SAUCE
Rustle up a quick and comforting pasta dish any night of the week with this creamy pasta sauce recipe. For vegans, swap in plant-based cream and vegan cheese.

Steps:
- Half fill a large saucepan with water, add plenty of salt and bring to the boil. Add the pasta and cook for 10-12 minutes, or according to the packet instructions, until just tender, stirring occasionally.
- Just before the pasta is ready, pour the double cream into a small saucepan, add the garlic and bring to a very gentle simmer, stirring constantly. Add around 100ml/3½fl oz of the pasta cooking water and the grated Parmesan and stir until melted. Season with salt and pepper.
- Drain the pasta in a colander, then return it to the pan it was cooked in. Add the sauce and mix well. Serve topped with extra cheese.
DOUBLE CREAM PASTA SAUCE (CHEAT)
This quick sauce is a brilliant starting point for a pasta sauce. It's fine as it stands and superb if cheese is added too ( see Variations below)

Steps:
- Heat the double cream in a small pan until it begins to boil.
- Immediately reduce to a simmer.
- Add the butter, stir and simmer for 10 minutes whilst the pasta cooks
- Drain the pasta (not too thoroughly, try and retain some of the cooking water), return to its pan and pour the sauce over the pasta. Season and mix well.

Steps:
- Cook the pasta according to package directions. Reserve ¼ cup of the cooking liquid, drain the pasta and return it to the pot.
- Meanwhile, heat the oil in a large skillet over medium-low heat. Add the onion and 1/4 tsp each salt and pepper and cook, covered, stirring occasionally, until very tender, 6 to 8 minutes. Stir in the garlic and cook for 1 minute.
- Whisk in the milk and bring to a simmer. Whisk in the cream cheese, Parmesan and nutmeg and simmer, stirring occasionally, until slightly thickened, 2 to 3 minutes. Toss with the pasta, adding some of the reserved cooking liquid if the pasta seems dry.
