Pizza and quesadillas are both fun kid foods, but combining them makes for a fun dinner on the go.

Number Of Ingredients 5

8 flour tortillas
8 ounces of shredded mozzarella cheese
6 ounces sliced pepperoni
1 (16-ounce) jar of pizza sauce
butter for pan

Steps:

  • Heat a medium skillet over medium heat and fry the pepperoni until crisp. Transfer onto a paper towel to drain.
  • Brush each tortilla with a thin layer of pizza sauce. You want the layer so thin that if you turned it over, none would drip.
  • Sprinkle cheese on top of the sauce on the bottom tortilla. Top with pepperoni and other toppings, if desired. Sprinkle with another layer of cheese and place the other tortilla on top (sauce side in).
  • Preheat a medium cast-iron skillet over medium heat. Add a little butter if desired and melt.
  • Gently place quesadilla in the pan and cook for 3-5 minutes on each side, until cheese is melted and tortillas are crispy.
  • Slice into quarters and serve with a little bowl of warm pizza sauce for dipping.

0.333 cup finely chopped pepperoni
3 tablespoon sliced pitted ripe olives
Marinara sauce and/or ranch dressing (optional)

Steps:

  • Spread some of the pizza sauce on half of each tortilla. Sprinkle Monterey Jack cheese atop pizza sauce on each tortilla. Top with pepperoni and olives. Fold tortillas in half; press down edges gently.
  • In a large skillet or griddle cook tortillas, 2 or 3 at a time, over medium heat about 4 minutes or until cheese melts, turning once.
  • Cut each tortilla into three triangles. If desired, serve with marinara sauce or ranch dressing for dunking. Makes 9 appetizer servings.

2 teaspoons butter, softened
4 flour tortillas (10 inches)

12 flour tortillas (fajita size)
3 cups shredded mozzarella cheese
1 cup pepperoni slices
3 cups pizza sauce (divided)
Optional parsley for serving

Steps:

  • Preheat a skillet or griddle to medium high heat.
  • Spray the surface with cooking spray and place one tortilla on the heated surface.
  • Top the tortilla with ¼ cup of the shredded cheese and allow to melt.
  • Once the cheese is melted, top with sliced pepperoni and ¼ cup of sauce.
  • Sprinkle another layer of cheese, top with a second tortilla and flip once the bottom layer is crispy and golden.
  • Cook the opposite side until golden brown.
  • Use a pizza slicer or knife to slice and serve. Serve with remaining marinara for dipping.

I threw this together for lunch because I was tired of making sandwiches. It was really easy to make and my kids loved it. You can substitute different toppings or cheeses with whatever you have around the house.

4 burrito-size flour tortillas
4 ounces cheddar cheese
4 ounces monterey jack cheese
1 cup spaghetti sauce (more or less to taste) or 1 cup pizza sauce (more or less to taste)
8 ounces mozzarella cheese
4 -6 ounces ham (or other toppings)

Steps:

  • Preheat oven to 350 degrees.
  • Lay 2 tortillas side by side on a greased cookie sheet.
  • Mix shredded cheddar and monterey jack and cover tortillas. Then place the other two tortillas on top.
  • Spread tomato sauce on.( I recommend Ragu Chunky Mushroom spaghetti sauce).
  • Cover with mozzerella and toppings.
  • Bake at 350 for 5 to 10 minutes. Watch these closely as ovens vary. They are done when all of the cheese is melted.

1 Tablespoon Butter
1/8 Cup Pizza Sauce, Spaghetti Sauce or Tomato Sauce
1/4 Cup Mozzarella Cheese
1/4 Cup Cheddar Cheese
Favorite Toppings

Steps:

  • Heat griddle or skillet to medium low heat. Butter one side of each tortilla. Place one tortilla, buttered side down, onto hot griddle or skillet. Sprinkle a light layer of cheese. Spoon sauce on to cheese, leaving 1/4" edge sauce free around tortilla. Place a thin layer of favorite ingredients (ours is pepperoni!). Top with remaining cheese. Place second tortilla butter side up onto cheese. Allow to cook until bottom tortilla is golden and crispy. Flip and cook second side until golden and crispy and cheese has melted. Remove from heat, slice and devour!
