Steps:
- Whisk the vinegar, mustard, lemon juice, garlic, olive oil, salt, and pepper in small bowl to blend. Combine the vinaigrette and chicken pieces in a large resealable plastic bag; seal the bag and toss to coat. Refrigerate, turning the chicken pieces occasionally, for at least 2 hours and up to 1 day.
- Preheat the oven to 400 degrees F. Remove chicken from the bag and arrange the chicken pieces on a large greased baking dish. Roast until the chicken is just cooked through, about 1 hour. If your chicken browns too quickly, cover it with foil for the remaining cooking time. Transfer the chicken to a serving platter. Place the baking dish on a burner over medium-low heat. Whisk the chicken broth into the pan drippings, scraping up any browned bits on the bottom of the baking sheet with a wooden spoon and mixing them into the broth and pan drippings. Drizzle the pan drippings over the chicken. Sprinkle the lemon zest and parsley over the chicken, and serve.

BALSAMICO ROAST CHICKEN AND POTATOES
This delicious pairing comes from "The Italian Country Table" by Lynne Caspar. It's become a family favorite in my house, as well as a dish we frequently use for entertaining. Don't let the ingredient list scare you - it's minced together and rubbed into the chicken. Roasting is largely unattended.

- In a large bowl, toss the potatoes with the olive oil, rosemary, and garlic. Season with salt and pepper to taste. Once well coated, transfer the potatoes onto the baking sheet. Bake, tossing, once or twice, until they are tender and golden, about 30 to 35 minutes.
- While the potatoes are cooking, heat the oil in a large skillet over medium-high heat. Season the chicken with salt and pepper to taste. Arrange the chicken in the skillet and cook until it is golden, and releases easily from the pan, about 5 to 7 minutes. Season the remaining side of the chicken with salt and pepper. Flip the chicken and continue to cook until the remaining side is golden, and releases easily from the skillet, about 3 to 4 minutes. Remove the chicken from thepan and set it aside.
- Reduce the heat to medium and add the chicken broth, balsamic vinegar, honey, garlic, and fresh rosemary. Cook, stirring, until the mixture comes to a simmer. Reduce the heat to medium-low. Return the chicken to the skillet, and cook, flipping the chicken often, until the chicken reaches an internal temperature of 165ºF, about 8 to 10 minutes.
