Steps:
- Cook pasta according to package directions. Meanwhile, in a large skillet, cook pork and onion over medium heat until meat is no longer pink; drain. Add the tomatoes, tomato sauce and Italian seasoning. Bring to a boil. Reduce heat; cover and cook for 5 minutes to allow flavors to blend., Drain pasta; add to skillet. Stir in zucchini. Cover and cook for 3-5 minutes or until zucchini is crisp-tender. Freeze option: Transfer individual portions of cooled pasta mixture to freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little tomato sauce if necessary.

ZUCCHINI PORK PENNE
This easy pasta recipe is a nice change from the regular ones. The combination of zucchini and pork is deliciously different!

Steps:
- 1. Cook pasta according to package directions.
- 2. In a large skillet over medium, heat oil. Add onion and sauté for 3 minutes. Add red pepper and cook for another 3 minutes. Add garlic and sauté for 1 minute. Add pork and cook until no longer pink. Add red wine and cook it down until liquid has almost evaporated. Add diced tomatoes, tomato sauce, oregano, Italian seasoning, paprika, basil, rosemary, garlic salt and brown sugar; stir to combine. Reduce heat down to medium-low and cook for 10 to 15 minutes or until flavor blended.
- 3. Drain pasta and add to skillet. Add zucchini and sprinkle freshly ground black pepper and more garlic salt. Increase heat to medium, cover and cook until zucchini is tender, about 5 to 8 minutes. Add cheese and stir until melted. Remove from heat and sprinkle fresh parsley over. Serve immediately.

SAUTEED ZUCCHINI WITH FETA
Steps:
- In a 12-inch skillet, heat the oil on low. Slowly saute the zucchini and garlic, with a little salt, until golden and slightly caramelized, about 20 minutes. Season with salt and pepper. Mix in parsley or basil, cilantro and feta.

- Cook the pasta according to the package directions, omitting salt or fat.
- While the pasta cooks, heat the oil in a large skillet over medium-high heat.
- Add the oregano, zucchini and crushed garlic; saute 3 minutes.
- Stir in the broth, rind, juice and pepper.
- Add the pasta and cheese; toss well.
- Serve immediately.
PORK WITH GARLIC CREAM SAUCE
This is a recipe I received from a caterer in town. She served this unique dish at an event and everyone really enjoyed it. It is pork tenderloin sliced thin and broiled for 3-5 minutes on each side. The pork slices are topped with a cream cheese based sauce that is really a delicious twist. I have made this at home several times. The sesame seeds in the recipe are optional. I have had the dish with and without them and it is great either way.

- Cut pork into 1 inch slices and flatten to 1/2 thickness.
- Place sliced pork on a greased/oiled baking sheet. Brush oil over top of sliced pork. Sprinkle sliced pork with 1 teaspoon sesame seeds (optional).
- Broil 4-6 inches from the heat for 3-5 minutes; turn and sprinkle remaining sesame seeds (optional). Broil 3-5 minutes longer or until meat juices run clear.
- Meanwhile, in a saucepan, saute garlic in butter for 1 minute. Stir in milk and cream cheese. Reduce heat; cook and stir until blended and smooth. Stir in chives. Serve over pork.
- Great accompanied with buttered noodles or roasted potatoes.

- In a large skillet set over medium heat, add the garlic and olive oil and stir for a minute. Add the mushrooms, zucchini, and onion. Give a good stir and cook until soft, about 10-12 minutes, stir occasionally while cooking. When the vegetables are just about cooked, add the mustard and stir well.
- Add all the cooking wine to the vegetables, reduce heat to low and let reduce by half, about 5-8 minutes. Turn the stove back to medium heat and add all the cooking cream, and black pepper. Stir well and bring to a simmer then reduce heat to low and cover.
- In a separate grill pan set over high heat, add the remaining tablespoon of olive oil, Season both sides of the pork with the sea salt. Cook each side for just about 3 minutes. Remove from pan and add to the creamy vegetables. Stir well, cover and leave a couple of minutes before serving.
