CREAMY MISO GINGER DRESSING



Creamy Miso Ginger Dressing image

My attempt to replicate a delicious salad dressing from our favorite Japanese restaurant. A dressing for any green salad, but my family loves it on cole slaw.

Number Of Ingredients 9

1/2 cup canola oil
1 tablespoon sesame oil
2 tablespoons honey
2 tablespoons white miso
1/4 cup rice vinegar
2 tablespoons white vinegar
2 medium garlic cloves, chopped
1 inch piece ginger, chopped
3 tablespoons water

Steps:

  • Blend all ingredients with a blender or hand blender until creamy, but over-blending makes it too thick.
  • Stores well in refrigerator. Shake well before serving.

2 teaspoons fresh grated ginger
1/3 cup orange juice
1 teaspoon soy sauce
1 teaspoon brown sugar
1 teaspoon dark sesame oil

Steps:

  • Combine all of the ingredients in a blender or food processor and puree until smooth.
  • Covered and refrigerated, this dressing will keep for about a week.

Miso is a fermented soy bean paste that is loaded with all things savory, sweet, and deliciously right about East Asian cuisine. I know it may feel a bit like an over-commitment when you pick up that tub from the grocery store, but go with me on this one. The further down the miso rabbit hole you dig, the more you'll wonder just how it is you got so far, for so long, without it.

1/3 cup miso
3 tablespoons honey
1 1/2 tablespoons soy sauce
1 tablespoon sriracha
1 tablespoon peanut or canola oil
1 pound medium shrimp, peeled and deveined
1 clove garlic, finely chopped
1 red bell pepper, seeded and sliced
1 cup shredded carrots
1 cup snow peas, sliced in half
3 cups steamed white rice
1 1/2 cups mung bean sprouts

Steps:

  • In a medium bowl, whisk together the miso, honey, soy sauce and sriracha. Set aside.
  • Place a large skillet over high heat with the oil. Add the shrimp to the skillet and stir-fry until the shrimp just begin to turn pink, 2 to 3 minutes. Add the garlic, bell pepper, carrots and snow peas to the pan and continue stir-frying until the vegetables just begin to tenderize, about 1 minute. Add the reserved sauce to the skillet and stir-fry until the shrimp is cooked through and the sauce has thickened, 2 to 3 minutes.
  • Adjust the seasoning with soy sauce and sriracha. Serve the stir-fry over the steamed rice garnished with the bean sprouts.

This is an approximation of the Genji brand ginger miso dip that Whole Foods used to sell next to their sushi. It's my favorite dip for fresh vegetables.

1/2 cup plus 2 tbsp white miso
3 tablespoons rice vinegar
1 small garlic clove
1 teaspoon sugar
1/4 cup water
1/4 cup vegetable oil

Steps:

  • Peel and thinly slice ginger. Peel garlic clove.
  • Combine all ingredients in a blender and liquefy on highest setting until mixture is very smooth, 1-2 minutes.

1 tablespoon butter
1 lb raw shrimp, tails removed
5 garlic cloves, minced
1/2 teaspoon chili powder
1/2 teaspoon cayenne
2 avocados, pitted peeled and cut into cubes
1 cucumber, sliced
1/2 cup shredded carrot
1/2 cup edamame
6 cups chopped lettuce, of choice
1 tablespoon fresh cilantro, for serving
1/3 cup peanuts, for topping
1 inch piece of fresh peeled ginger
3 tablespoons oil
4 tablespoons lime juice
2 tablespoons Agave
2 tablespoons white miso
3 garlic cloves
1/2 teaspoon sesame oil
2 teaspoons soy sauce
1/2 teaspoon salt and pepper, to taste

Steps:

  • Heat a large skillet and 1 tablespoon of butter over medium heat. Once hot, add raw shrimp and garlic. Stir. Sprinkle shrimp with chili powder and cayenne pepper. Continue to cook, stirring occasionally, until shrimp are no longer transparent and are golden on the outside, approximately 3 minutes each side.
  • Prepare the salad bowls. Divide lettuce, avocado, cucumber, carrots and edamame between your bowls (2 bowls for very large salads, or 4 bowls for lighter salads). Top with fresh cilantro and peanuts and last, the prepared shrimp.
  • Prepare the salad dressing- Place all of the salad dressing ingredients in the bowl of a food processor or high powered blender and process until smooth and creamy. Taste and add any additions you feel necessary (lime juice, agave, salt).
  • Pour the miso dressing over the salad, toss and serve immediately.
