Easy to make, these special low-fat burritos taste awesome! You don't eat red meat, but love burritos? Well, you can't taste the difference here. These are medium spicy, not fire hot!

Steps:
- In a large skillet over medium high heat, brown ground turkey. Stir in tomato sauce, corn and onion. Reduce heat to medium and let simmer, stirring occasionally, until liquids reduce (about 20 minutes).
- In a separate medium skillet, heat beans over medium-low heat. Prepare sour cream and cheese for sprinkling into burritos. One by one, heat tortillas over stove burner for 1 to 2 minutes, flipping a few times. Top with beans, then meat mixture, then sour cream and cheese. Fold over and serve while still warm.

Turkey burritos are a lighter version of our favorite beef burritos. My husband actually prefers these over the local Mexican restaurant! Optional toppings: lettuce, fresh spinach, avocado, salsa, tomatoes, black olives, fat-free sour cream, low-fat Cheddar cheese, etc.

- Heat a large skillet over medium-high heat. Cook and stir turkey and onion in the hot skillet until turkey is browned and no longer pink, 5 to 7 minutes. Add corn, black beans, tomatoes, red bell pepper, lime juice, garlic powder, chili powder, and cumin. Reduce heat to medium-low and simmer until flavors combine, 15 to 20 minutes.
- Place tortillas on a microwave-safe plate. Heat in the microwave until warmed, 15 to 20 seconds. Divide turkey mixture over the warmed tortillas.

- Preheat oven to 300°F. Heat oil in large nonstick skillet over medium-high heat. Add onions and bell peppers; sauté until tender and golden, about 15 minutes. Add turkey, salsa, and cumin; stir until heated through, about 5 minutes. Stir in cheese and cilantro; season generously with salt and pepper. Remove from heat; cover to keep warm.
- Working with 1 tortilla at a time, heat tortilla directly over medium-high gas flame (or in dry skillet over medium-high heat) until warm, softened, and browned in spots, about 30 seconds per side. Place tortilla on work surface. Spoon 1 cup warm turkey mixture along center of tortilla; fold sides in over filling, then roll up tortilla to enclose filling. Place burrito seam side down on baking sheet, and place in oven to keep warm. Repeat with remaining tortillas and filling.
GROUND TURKEY BURRITOS THAT WILL FOOL YOUR KIDS
Great burritos that your kids will eat and ask for more. Ground turkey, crushed tomatoes, rice, onions, garlic, and celery wrapped in red cabbage within a white tortilla shell. We go to a lot of evening swim meets and our kids love them. If we told them what was inside they would say Eww! Without cheese, this is a lighter dinner alternative on the go.

- Bring water and brown rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 45 to 50 minutes.
- Cut off the stem of the red cabbage. Peel leaves off gently, being careful not to tear. Place individual leaves gently into a large pot of water and bring to a boil. Cook for 5 minutes; reduce heat and simmer until tender but still crunchy and red, 8 to 10 minutes more. Drain.
- Heat olive oil in a large skillet over medium-high heat. Saute onion, celery, and garlic until softened, 5 to 7 minutes. Mix in turkey meat and season with salt. Cook and stir until browned and crumbly, 5 to 7 minutes. Add crushed tomatoes and cooked rice. Cook, stirring occasionally, until flavors combine, 10 to 15 minutes more.
- Place 1 cabbage leaf on top of each tortilla. Fill with the turkey-rice mixture. Fold the bottom end up and roll into a tight burrito.
- Heat a grill pan over medium heat. Add burritos in batches; cook, flipping as necessary, until outsides are crunchy, about 5 minutes.

- Set oven or toaster oven to 400 degrees and heat while cooking filling.
- Slice sausage into 1/8-inch-thick rounds and cut each in half. Saute in hot, nonstick skillet along with the ground turkey, until ground turkey begins to color. Be sure to break it up as it cooks.
- Chop onion and mince garlic.
- Add oil to turkey pan, and saute onion until it begins to soften.
- Add garlic, cumin, cinnamon and cloves and saute another 30 seconds.
- Wrap two tortillas in aluminum foil and heat in oven or toaster oven about 2 or 3 minutes, until softened.
- Add the tomatoes to the filling. Reduce heat and cook while mincing jalapeno. Add jalapeno, raisins and corn and cook about 3 minutes, until corn is heated through.
- Spoon a quarter of the filling onto each of the two tortillas; roll and serve. Heat remaining two tortillas when ready for seconds.

LEFTOVER TURKEY BURRITOS
I made this recipe while trying to figure out what to do with leftover holiday turkey. Very delicious! Prep time includes time to marinate.

- Combine turkey, tequila, lime juice, onion, garlic and 1 tbsp oil in a medium bowl.
- Add salt, garlic and onion powder, black and red pepper, cumin, and chili powder to turkey mixture and stir until everything is well coated.
- Cover and let sit in the refrigerator for no more than 1 hour.
- Heat 1 tbsp canola oil in skillet over medium heat.
- Wrap tortillas in foil and let heat in 300 degree oven for about 10 minutes.
- Add turkey mixture to skillet and cook until onions are soft and mixture is thoroughly heated through(about 10 minutes).
- Remove tortillas from the oven and sprinkle pepper-jack cheese down the middle of each tortilla.
- Add hot turkey filling on top of cheese, wrap, and serve!
