KETO HAM AND BROCCOLI CASSEROLE
This low carb broccoli ham casserole is an easy and delicious recipe to make with leftover ham, especially for a busy weeknight dinner. Only 5 ingredients needed to make this tasty low carb casserole and each serving has 5.1g net carbs.

- Preheat oven to 400 degrees F. Prepare a baking or casserole dish by spraying with nonstick cooking spray.
- Chop and steam both the broccoli and cauliflower separately. You can do this anyway you wish. I like to use microwave steamer pot. But you can do it with boiling water or even use frozen. No matter which way you do it, make sure to drain off any excess liquid as that will make the casserole watery.
- Add the cooked cauliflower, cream cheese and 1/2 cup of cheddar cheese to a high speed blender and blend until smooth and creamy. If it's too thick add a tablespoon of 2 of water. It should be thick and creamy though.
- Add the ham and broccoli to a baking pan then mix it with the cream sauce. Top with the remaining cheddar cheese. Bake for 15-20 minutes until browned well on the top.

- Preheat oven to 400°
- Layer broccoli in a large casserole dish. Drizzle with olive oil and sprinkle with a little salt and pepper.
- Roast broccoli for 15-20 minutes.
- While the broccoli is roasting, combine heavy cream, chicken stock, 1 cup cheddar cheese, mozzarella cheese, cream cheese and garlic in a medium sauce pan over medium-low heat. Stir frequently.
- Once the broccoli is done, top with cubed ham. Pour cheese sauce over top and mix everything together.
- Sprinkle remaining 1 cup of cheddar cheese over top.
- Bake for an additional 15 minutes.

- Place broccoli in a large skillet with ½ cup water. Cover and simmer 4-6 minutes or until tender crisp. Drain well.
- Meanwhile, melt butter in a medium skillet over medium heat. Add onion powder, cream, broth, and cream cheese. Cook until smooth and slightly thickened, about 5 minutes.
- Remove from heat and stir in ¾ cup cheddar cheese and ¼ cup Swiss cheese until melted. Season with salt and pepper.
- Toss broccoli and ham with the cheese sauce. Place in a greased 2 quart casserole dish and top with remaining cheese.
- Bake 25-30 minutes, or until cheese is melted and bubbly.
