Applesauce Bars image

Moist and spicy bar cookies with frosting. An easy and quick after school snack. Also goes great at carry-ins and bake sales. You can also just sprinkle with confectioners sugar instead of frosting.

¼ cup butter or margarine, softened
⅔ cup brown sugar
1 egg
1 cup applesauce
1 cup all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon pumpkin pie spice
1 ½ cups confectioners' sugar
3 tablespoons margarine, melted
1 tablespoon milk
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • In a medium bowl, mix together the butter, brown sugar and egg until smooth. Stir in applesauce. Combine the flour, baking soda, salt and pumpkin pie spice; stir into the applesauce mixture until well blended. Spread evenly into the prepared pan.
  • Bake for 25 minutes in the preheated oven, or until edges are golden. Cool in the pan over a wire rack.
  • In a small bowl, mix together the confectioners' sugar and margarine. Stir in vanilla and milk until smooth. Spread over cooled bars before cutting into squares.

1 1/2 cups sugar
1/2 cup butter or 1/2 cup margarine, softened
2 eggs
2 tablespoons unsweetened cocoa powder
1 1/2 teaspoons salt
2 cups applesauce
1 teaspoon baking soda
1 teaspoon cinnamon
2 cups all-purpose flour
2 tablespoons sugar
1 cup semi-sweet chocolate chips
1 cup chopped walnuts

Steps:

  • Set oven to 350 degrees.
  • Grease a 15 x 10-inch jelly roll pan.
  • In a bowl, cream the 1-1/2 cups sugar with the 1/2 cup butter; beat until fluffy.
  • Add in the eggs; beat well.
  • Sift together the cocoa, baking soda, cinnamon and the flour.
  • Add to the butter mixture, alternately with the applesauce; mix well.
  • Transfer the mixture to the prepared baking pan.
  • In a small bowl, combine the 2 Tbsp sugar, 1 cup chocolate chips and 1 cup chopped nuts.
  • Sprinkle over the batter in the pan.
  • Bake for 30 minutes (do not over bake!) Cut into bars.

2 and 1/2 cups unsweetened applesauce
1/2 cup canola or vegetable oil
Frosting:
4 oz. cream cheese, softened
3 Tbls. butter, softened

Steps:

  • For the bars: In a large bowl, whisk together dry ingredients. Stir in eggs, applesauce, and oil until combined. Spread into an ungreased 15x10x1-inch baking pan (like a cookie sheet in rim or jelly roll pan). Bake at 350 for 25 to 30 minutes or until a toothpick inserted in the center comes out clean. Cool completely, then spread with cream cheese frosting. Frosting: In a large bowl, stir together cream cheese and butter until very soft and thoroughly mixed. Stir in vanilla. These are my mom's super moist dense bars full of applesauce, cinnamon, allspice, nutmeg, and cloves topped with a lucious cream cheese frosting. These were a favorite of mine as a child and I still love em'! These are baked in a half sheet pan.

1 cup shortening
2 1/4 cups sugar
3 eggs, beaten well
3 3/4 cups applesauce (I use unsweetened)
4 1/2 cups flour
3 teaspoons cinnamon
3 teaspoons allspice
1 1/2 teaspoons nutmeg
2 1/4 teaspoons cloves
2 1/4 teaspoons baking soda
3/4 cup butter, softened
12 ounces cream cheese, softened
1 1/2 lbs powdered sugar
3 teaspoons vanilla

Steps:

  • Cream shortening and sugar.
  • Add rest of ingredients and mix well.
  • Pour batter into a greased half sheet pan and bake at 375* for 20-30 min or until a toothpick inserted in the middle comes out clean. Allow to cool completely then frost.
