MOM'S CORNY PORK CHOPS
Mom used to make this all the time, and there were hardly any leftovers. Easy to make baked dish that goes great with fresh bread and mashed potatoes.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Heat olive oil in a large skillet over medium heat, and stir in the garlic. Season chops with salt and black pepper. Pan fry until browned on both sides, about 5 minutes per side. Place the chops into the prepared baking dish, and scatter the onions over the chops.
- Pour water into the skillet, and bring to a boil over medium heat. Scrape up and dissolve all the juices and browned flavor bits from the skillet into the water. Pour the mixture over the pork chops. Spread creamed corn evenly over the pork chops.
- Bake the pork chops in the preheated oven until the pork is tender and no longer pink in the middle, about 45 minutes. An instant-read meat thermometer inserted into the center of a chop should read 145 degrees F (63 degrees C).

BUTTERMILK PORK CHOPS WITH CORN RELISH
If you're seeking a super-juicy pork chop recipe for the grill, look no further. Tender chops are bathed in a zesty, flavorful buttermilk brine infused with garlic, herbs and spices. Buttermilk tenderizes the pork and keeps it moist on the grill. A simple corn relish adds a summery flourish.

- Make the brine: Combine the buttermilk, brown sugar, 2 tablespoons olive oil, 3 tablespoons salt, the garlic, bay leaves, hot sauce and peppercorns in a large bowl. Remove 4 wide strips of lemon zest with a vegetable peeler and add to the brine; squeeze in the juice of half of the lemon. Pierce both sides of the pork chops a few times with a paring knife. Add the pork to the brine, turning to coat. Cover and refrigerate at least 4 hours and up to overnight.
- Remove the pork chops from the refrigerator 30 minutes before grilling. Preheat a grill to medium high and lightly brush the grates with vegetable oil. Remove the pork from the brine, letting the excess drip off, and transfer to the grill. Cover and cook until marked, about 7 minutes. Flip and continue cooking, uncovered, until the other side is marked, about 7 more minutes.
- Meanwhile, rub the corn with 1 tablespoon olive oil and season with salt. Wrap each ear in foil and place on the grill. Grill, turning occasionally, until charred, about 10 minutes.
- Remove the pork from the grill; let rest 5 minutes. Cut the corn kernels from the cobs. Combine the corn, the juice of the remaining 1/2 lemon, the remaining 1 tablespoon olive oil, the parsley and chives in a bowl and toss; season with salt. Serve with the pork chops.

- Melt butter in a large skillet over medium heat. Season pork chops with salt and pepper, and arrange in a single layer in pan. Pan-fry for 2 minutes on each side to brown. Pour in wine, and continue cooking for 6 minutes. Remove chops from pan.
- Pour cream into the skillet, and then add mushrooms. Increase heat to high; cook for 5 minutes, stirring frequently, until sauce reduces and thickens. Return chops to pan to warm before serving.

- Preheat oven to 325°. Season pork chops with 1/2 teaspoon salt and 1/8 teaspoon pepper. - Season chops with salt, pepper, garlic salt; brown chops in skillet.
- Drain the chops of grease and then add 1/2 cup water. Cover and simmer 45 minutes; add can(s) of cream corn to cover chops and salt and pepper corn to taste.
- Cover and simmer for at least 15 minutes more or until pork is done.
- You can bake these puppies in oven if you want at 350° for the same amount of time. I cook longer cause I like my pork really done.
CREAMY PORK CHOPS
This is a very homey comforting pork dish. It doesn't take a lot of work or ingredients. I was looking for something that would just taste good and have a wonderful gravy. The onions and garlic add a really nice mellow sweetness to the dish. I used yellow onions which are sweeter than white, but almost any kind of onion would work. I would not use red onions though because the flavor is much too strong. My family loves garlic so I used more, but make it to your tastes. My 2 year old gobbled it up. Left overs are delicious!

- Preheat oven to 375 degrees.
- Sprinkle pork chops with salt and pepper.
- Brown pork chops over medium-high heat.
- When chops are browned, but not cooked through, place in a 13x9 baking dish.
- In the same skillet you browned the chops saute the sliced onions until caramelized, sprinkling with a little salt to add flavor and bring out the sugars.
- When the onions are starting to get a little color add your garlic cloves.
- When onions and garlic are nicely caramelized pour over pork chops.
- In the same skillet add the can of cream of chicken soup, milk, salt and pepper to taste, and parmesan cheese. Whisk until all the lumps are gone.
- When this reaches a creamy texture (you may need to add a little water if it's too thick) pour over pork chops and onions.
- Bake uncovered for 45 minutes, depending on the thickness of the chops.
PORK CHOPS WITH CORN DRESSING
As a new bride, I came across the original version of this recipe in a newspaper. I changed it around some and tried it out on my groom. It became a family favorite-not to mention a great easy main course for unexpected company! With our children both grown, my husband's still my "guinea pig". I love to experiment with new dishes...family and friends say I never follow a recipe!

- In a bowl, combine the egg, bread crumbs, corn, water, green pepper, onion and Worcestershire sauce; set aside. , In a large ovenproof skillet or a Dutch oven, heat oil over medium heat. Lightly brown pork chops on both sides. Season with salt and pepper. Top with corn dressing mixture. Add enough water to cover bottom of pan. , Bake, uncovered, at 350° for about 1 hour or until pork is tender. Add additional water to pan if necessary. Remove pork chops and dressing to a serving platter; keep warm. Skim fat from drippings. Add soup and milk to pan drippings. Cook and stir over medium heat until hot and bubbly. Serve with pork chops.
