EASY CREAMY HOMEMADE SAUSAGE GRAVY
Easy Creamy Homemade Sausage Gravy is a step by step recipe for perfect sausage gravy every time. Delicious served over toast, pancakes, biscuits or breakfast potatoes.

Steps:
- Brown Sausage until all fat is rendered. This will take about 10 minutes at medium high heat.
- Add in the butter and allow it to melt completely. It should be completely melted and foamy.
- To the butter and sausage add the 4 tbsp. of flour. Stir to cook out flour about 1 minute.
- When the flour is mixed evenly with the butter (it will look pasty, see photos) add in 1 cup of milk. Mixture will thicken quickly. This is a good time to cut your heat back a bit. I usually reduce it to low.
- As soon as it's super thick add in the 2nd cup of milk.
- Stir really well and add remaining 1/2 cup of milk (optional replace the last 1/2 cup of milk with heavy cream). Add in the 1.5 tsp. of black pepper and stir. If you're sensitive to pepper, add it to your tastes.

- Crumble sausage into a large saucepan; cook over medium-low heat. Add onion; cook and stir until transparent. Drain, discarding all but 2 tablespoons of drippings. Stir in flour; cook over medium-low heat about 6 minutes or until mixture bubbles and turns golden. Stir in milk. Add seasonings; cook, stirring, until thickened. To serve, slice biscuits and spoon gravy over halves.

- In a large frying pan or skillet, cook breakfast sausage over medium heat, breaking apart into crumbles as it cooks.
- When cooked, approximately 10 minutes, remove meat using a slotted spoon. Remove to a paper towel lined plate. Reserve rendered pork fat.
- Reduce heat to low and stir in flour. Continue to stir until it makes a paste and turns a light brown.
- Add 1/4 cup milk, whisking or stirring well using the back of a spoon to break apart the flour clumps. Whisk until smooth. Add remaining milk in 3 stages, whisking after each to prevent lumps.
- Add reserved sausage back to the pan, tossing to combine. Taste the gravy to determine how much seasoned salt is necessary and then add slowly, tasting along to way to determine the correct amount. Follow the same guidelines with black pepper.
- Spoon over dish of your choice. Or eat with a spoon. I won't judge.

- With your finger, tear small pieces of sausage and add them in a single layer to a large heavy skillet. Brown the sausage over medium-high heat until no longer pink. Reduce the heat to medium-low. Sprinkle on half the flour and stir so that the sausage soaks it all up, then add more little by little. Stir it around and cook it for another minute or so, then pour in the milk, stirring constantly.
- Cook the gravy, stirring frequently, until it thickens. (This may take a good 10 to 12 minutes.) Sprinkle in the seasoned salt and pepper and continue cooking until very thick and luscious. If it gets too thick too soon, just splash in another 1/2 cup of milk or more if needed. Taste and adjust the seasoning.
- Spoon the sausage gravy over warm biscuits and serve immediately!

- Add sausage to a large skillet over medium-high heat. Cook and stir with a spatula, breaking apart the sausage until cooked, 5 to 7 minutes. Season with onion powder, garlic powder, chicken bouillon, and pepper. Mix until well combined and fully cooked, 5 to 7 minutes.
- Stir quick-mixing flour into the sausage. Pour in milk and stir until well combined.
- Bring gravy to a boil. Reduce heat and stir until the gravy thickens, 5 to 7 minutes. Taste for seasoning and adjust according to taste. Set aside while preparing the biscuits.
- Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish with butter and set aside.
- Cut each individual biscuit into 4 pieces. Arrange 1/2 of the biscuit pieces in the bottom of the baking dish. Completely cover biscuits with gravy. Place remaining biscuit pieces on top.
- Bake in the preheated oven until the biscuits are fully cooked and golden brown, 13 to 15 minutes.
- Remove from the oven and let stand for 3 to 5 minutes before serving.

- Put the sausage in a large, straight-sided saute pan over medium-heat.
- As the sausage cooks, crumble into small pieces using a fork.
- When the sausage crumbles are lightly browned and fully cooked, transfer them and their pan juices to a bowl; set aside.
- Add the shortening to the hot pan.
- When the shortening has melted, add the flour, stirring it in slowly with a whisk.
- Stir constantly and cook the mixture until the flour is slightly browned (about 3-4 minutes).
- The mixture should smell nutty, not burned.
- Add in the milk, stirring constantly with a whisk until the gravy comes to a boil.
- Lower the heat to medium-low and simmer gently for 15 minutes.
- Add the reserved sausage and pan juices to the gravy.
- Mix well with a wooden spoon, seasoning to taste with salt and pepper.
- The gravy should be a medium-thick sauce; if needed, the gravy can be thinned by adding warm milk.
- Split the biscuits in half; place the halves, split side up on individual plates.
- Cover generously with warm gravy and serve immediately.
CLASSIC SAUSAGE GRAVY
A staple in Southern households, this sausage gravy can be served over grits but goes beautifully with biscuits too.

- In a small frying pan, heat 1 tablespoon of oil over medium-high heat for about 30 seconds. Add Jimmy Dean sausage and cook for 8 to 10 minutes until browned, stirring frequently to break up the sausage into small pieces, then drain.
- Add flour and mix well with the sausage. Reduce heat to medium and add 1 cup of milk, stirring to prevent any flour lumps. Add the remaining milk and the salt and pepper. Bring heat up to medium-high for 2 to 3 minutes, or until the sauce bubbles up to the top of the pan (do not allow it to boil over).
- Reduce heat to medium-low, stirring the sauce frequently until it thickens, about 5 minutes.
- Serve over cooked grits or biscuits, and top with green onions.
CREAMY COUNTRY SAUSAGE & GRAVY
The original version of this recipe was passed down from my Grandmother back in Missouri. I've made some improvements. I'll let you figure out what you want to put it on; biscuits are my favorite but this is great on just about anything you might want to put gravy on. I also use Jimmy Dean Sage Sausage and add a pinch of crushed red pepper flakes but those are entirely optional.

- Heat 1 tablespoon butter in large skillet, add finely chop onions and cook over medium-high heat until they become translucent.
- Add sausage and cook until done; drain excess, and remaining 2 tablespoons butter and remaining dry ingredients.Mix evenly and cook until golden, stirring occasionally.
- Slowly stir in Worcestershire sauce and milk; bring to boil.
- Reduce heat to low and cook until gravy reaches desired thickness, stirring frequently.
