- Preheat the oven to 350 degrees.
- In a large bowl, whisk together the sugar, cocoa and salt. Add the melted butter and blend until combined.
- Add the eggs to the mixture and beat with an electric mixer at medium speed for 3 minutes.
- Gently stir in the evaporated milk and vanilla until incorporated..
- Fit the unbaked pie crust into a 9-inch pie pan and flute the edges or crimp with a fork.
- Pour the batter into the pie shell and bake for 1 hour, until the top is almost set. Remove from the oven and cool completely. Dust with confectioner's sugar and serve with whipped cream, if desired.

Steps:
- Place a rack in the center of the oven and preheat to 350F.
- Slowly melt the butter so that it remains creamy. It should stay emulsified and not separate into clear yellow, runny butter. I melted mine in the microwave in short bursts at medium power until it was mostly melted, then I whisked it until all the butter was melted. Pour the creamy melted butter into a medium-sized bowl.
- Add the dark brown sugar,* making sure there are no lumps in it, the cocoa powder, eggs, cornmeal, epsresso powder, vanilla and salt.
- Whisk very well to make a smooth batter. Scrape the bowl a couple of times to make sure all the ingredients are evenly incorporated in the batter.
- Pour the batter into the frozen pie crust.
- Bake for 35-45 minutes or until the entire pie is puffed up but is still a little jiggly in the center. You may have to cover the crust with foil after the first 20 minutes or so to prevent over-browning, so keep an eye on it.
- Remove the pie from the oven and let cool to room temperature. Serve warm or cold, with or without ice cream or whipped cream.

- Preheat oven to 425°F and adjust oven rack to lowest position. Roll pie crust and fit into a 9 inch pie plate. Refrigerate and chill for 15 minutes.
- Line the bottom of the crust with foil or parchment paper. Place pie weights or dried beans on top of liner. Bake on the bottom rack for 5 minutes. Lower the temperature to 325°F and bake 4 minutes longer. Remove the liner and weights and bake 3-4 minutes longer. Remove from oven and set aside to cool.
- In a large bowl whisk together sugar, cocoa powder, cornmeal, flour, and salt. Add softened butter, eggs, evaporated milk, and vanilla extract to the bowl. Use a mixer to beat until well combined.
- Pour filling into prebaked pie crust and bake at 325°F on the lowest rack for 55-60 minutes. The top layer should be set and underneath will have a slight jiggle, but not a liquidy one. Insert a toothpick to make sure it isn't liquidy. Place on a wire rack to cool 1-2 hours before slicing and serving. Either serve at room temperature or chill.

- On a lightly floured piece of parchment, roll out dough into a 13-inch round, about 1/8 inch thick. Fit into a 9-inch pie dish. Using kitchen shears, trim to a 1-inch overhang; fold under. Crimp edges or decorate as desired. Lightly prick bottom of dough with a fork. Refrigerate 30 minutes.
- Preheat oven to 375 degrees with a rack in lower third. Line dough with parchment; fill with dried beans or rice. Bake until edges begin to turn golden, 20 to 25 minutes. Remove beans or rice and parchment; bake until bottom and sides are golden brown, about 20 minutes more. Transfer to a wire rack; let cool completely. Refrigerate, uncovered, at least 2 hours and up to 2 days. Serve with whipped cream.
DOUBLE-CHOCOLATE CHESS PIE

- Crust: Pulse flour and salt in a food processor to combine. Pulse in butter until mixture resembles coarse meal, 8 to 10 seconds. Pulse in egg yolks.
- While pulsing, add ice water, 1 tablespoon at a time. Pulse until mixture holds together as a soft but not crumbly or sticky dough. Shape dough into a disk and wrap in plastic; refrigerate until firm and evenly moist, about 30 minutes.
- Lightly flour clean work surface and a rolling pin. Place dough in center of floured surface. Roll out dough, starting in center and rolling up to, but not over the edge. Give dough a quarter turn and continue rolling, repeating quarter turns until you have a disk about 1/8 inch thick.
- Transfer dough to a 9-inch pie dish. Gently tuck dough into pie dish, being careful not to stretch or pull dough. Let dough settle into bottom of pie dish. Take a small piece of dough and shape it into a ball. Use ball as a tool to press around bottom edges of pie dish, snugly shaping dough to pie dish without tearing it. Crimp or flute edges as desired. Prick bottom of dough all over with the tines of a fork to help prevent shrinkage during baking. Refrigerate until firm, about 30 minutes.
- Preheat oven to 425 degrees. Line dough with parchment, pressing it into corners and edges, then fill with dried beans, rice, or pie weights. Bake until sides are golden, 25 minutes. Remove beans and parchment; continue baking until crust is light golden-brown, 5 minutes more. Reduce oven temperature to 325 degrees.
- Filling: In a heatproof bowl set over (not in) a pan of simmering water, melt butter and chocolate. In a separate bowl, whisk eggs until smooth. Add sugar, cocoa, cornmeal, and salt; whisk well to combine. Add butter-chocolate mixture, buttermilk, and vanilla; whisk well to combine. Pour into warm crust.
- Bake until set and not wiggling, 45 minutes (cover with parchment-lined foil if pie is getting too dark during the last 15 minutes of baking). Transfer to a wire rack; let cool completely, at least 2 hours.
