CREAMY TAHINI DRESSING {VEGAN, GLUTEN FREE, PALEO, KETO}
Tahini dressing is thick, rich and deliciously creamy, uses only three store cupboard ingredients and goes with everything. Perfect for lifting vegan and dairy-free dishes, it will rapidly become an everyday staple.

Steps:
- Stir the tahini well, as it separates in the jar over time. Mix the the tahini, olive oil and garlic powder (if used) together. Season.
- Slowly start to add the water, mixing in with a whisk.
- The mixture will initially thin. It will then thicken dramatically and look curdled. DON'T WORRY. Keep adding the water, whisking all the time.
- Eventually the thick, curdled mixture will magically transform to a creamy dressing. For thick tahini dressing you will need about 80% of the volume of the tahini in water (200 ml).
- The thin tahini dressing will have about the same volume of tahini and water and should have a coating consistency.

Steps:
- Add all of the ingredients together in a bowl and whisk together, starting with ⅓ cup water and adding more until you reach your desired consistency.
- Alternatively you can skip mincing the garlic and add all of the ingredients to your high speed blender and process until smooth and creamy. Adding more water as needed. A hand blender also works great.
- This Lemon Tahini Dressing will keep up to 7 days in the refrigerator.

- Mix thick tahini dressing, sweet white miso, tamari, and finely chopped nori, or other seaweed. If you want a stronger flavour, use a different style of miso. To ensure a gluten free dressing, use tamari rather than regular soy sauce.
- Mix thin tahini dressing, curry powder or paste, turmeric and chili sauce. Adjust the amounts to taste. If the sauce it too spicy, add some Greek yogurt.
