Stuffed Apples with Custard Sauce image

Chock-full of old-fashioned goodness, this baked apple recipe is yummy...to the core. Its sauce drizzles on so smooth and creamy, it rivals the fanciest desserts.

1 cup chopped walnuts
1 cup raisins
1/2 cup sugar
1/4 cup butter, melted
8 medium unpeeled tart apples
1/2 cup water
CUSTARD SAUCE:
1/2 cup sugar
1 tablespoon all-purpose flour
1/8 teaspoon salt
1 cup milk
1 cup heavy whipping cream
4 egg yolks, lightly beaten
1/4 teaspoon vanilla extract

Steps:

  • In a blender, combine the walnuts, raisins and sugar; cover and process until blended. Stir in butter; set aside. Core apples and remove enough pulp to leave a 1-in. shell. Fill each apple with about 1/4 cup nut mixture. , Place in a greased shallow 3-qt. baking dish. Pour water around apples. Bake, uncovered, at 375° for 50-60 minutes or until tender. , Meanwhile, for custard sauce, combine the sugar, flour and salt in a saucepan. Gradually stir in milk and cream until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir a small amount of hot milk mixture into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat; stir in vanilla. Cool. Serve with warm apples. Refrigerate leftovers.

4 cups soft bread cubes
¼ cup raisins
2 cups peeled and sliced apples
1 cup brown sugar
1 ¾ cups milk
¼ cup margarine
1 teaspoon ground cinnamon
½ teaspoon vanilla extract
2 eggs, beaten
¼ cup white sugar
¼ cup brown sugar
½ cup milk
½ cup margarine
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 7x11 inch baking dish.
  • In a large bowl, combine bread, raisins, and apples. In a small saucepan over medium heat, combine 1 cup brown sugar, 1 3/4 cups milk, and 1/4 cup margarine. Cook and stir until margarine is melted. Pour over bread mixture in bowl.
  • In a small bowl, whisk together cinnamon, 1/2 teaspoon vanilla, and eggs. Pour bread mixture into prepared dish, and pour egg mixture over bread.
  • Bake in preheated oven 40 to 50 minutes, or until center is set and apples are tender.
  • While pudding is baking, mix together sugar, 1/4 cup brown sugar, 1/2 cup milk, and 1/2 cup margarine in a saucepan. Bring to a boil, then remove from heat, and stir in 1 teaspoon vanilla. Serve over bread pudding.

450 g cooking apples
4 tablespoons thick cut orange marmalade
7 -8 slices brown bread or 7 -8 slices white bread, buttered
75 g raisins or 75 g sultanas, divided
75 g demerara sugar, divided
2 eggs
450 ml milk
1 pinch cinnamon, ground

Steps:

  • Place half the apples in a buttered shallow dish.
  • Spread marmalade on buttered bread; use half to cover the apples.
  • Sprinkle with half the raisins/sultanas and 2 tablespoons of the sugar.
  • Beat eggs and milk together; pour into dish.
  • Let stand for 40 minutes.
  • Sprinkle with cinnamon and remaining sugar.
  • Bake in preheated oven for about one hour or until well risen and golden brown.
  • Serve hot or cold with cream custard.

15 g unsalted butter
4 dessert apples, peeled,cored and chopped
1/2 tablespoon ground cinnamon
1 liter ready custard
2 butter madeira poundcake, cut into slices 1 cm thick
50 g orange marmalade

Steps:

  • Preheat the oven to 190°C, 375°F, Gas Mark 5.
  • Place a saucepan over a moderate heat.
  • Add the butter, apples and cinnamon and cook gently for 3-4 minutes.
  • Pour the custard into the saucepan and heat through, stirring occasionally.
  • Remove from the heat.
  • Lay half the cake slices into a 1litre ovenproof dish and pour over the apple custard.
  • Spread the marmalade over the remaining cake slices and cut each piece in half, diagonally.
  • Lay the slices down the centre of the dish.
  • Cover the dish with foil.
  • Place on a baking sheet and bake in the preheated oven for 50 minutes.
  • Heat a grill to a hot setting.
  • When the pudding is cooked, place under the hot grill for 1 minute to colour the surface.
  • Serve hot or cold with cream or ice cream.
