STUFFED APPLES WITH CUSTARD SAUCE

- In a blender, combine the walnuts, raisins and sugar; cover and process until blended. Stir in butter; set aside. Core apples and remove enough pulp to leave a 1-in. shell. Fill each apple with about 1/4 cup nut mixture. , Place in a greased shallow 3-qt. baking dish. Pour water around apples. Bake, uncovered, at 375° for 50-60 minutes or until tender. , Meanwhile, for custard sauce, combine the sugar, flour and salt in a saucepan. Gradually stir in milk and cream until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir a small amount of hot milk mixture into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat; stir in vanilla. Cool. Serve with warm apples. Refrigerate leftovers.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 7x11 inch baking dish.
- In a large bowl, combine bread, raisins, and apples. In a small saucepan over medium heat, combine 1 cup brown sugar, 1 3/4 cups milk, and 1/4 cup margarine. Cook and stir until margarine is melted. Pour over bread mixture in bowl.
- In a small bowl, whisk together cinnamon, 1/2 teaspoon vanilla, and eggs. Pour bread mixture into prepared dish, and pour egg mixture over bread.
- Bake in preheated oven 40 to 50 minutes, or until center is set and apples are tender.
- While pudding is baking, mix together sugar, 1/4 cup brown sugar, 1/2 cup milk, and 1/2 cup margarine in a saucepan. Bring to a boil, then remove from heat, and stir in 1 teaspoon vanilla. Serve over bread pudding.

- Place half the apples in a buttered shallow dish.
- Spread marmalade on buttered bread; use half to cover the apples.
- Sprinkle with half the raisins/sultanas and 2 tablespoons of the sugar.
- Beat eggs and milk together; pour into dish.
- Let stand for 40 minutes.
- Sprinkle with cinnamon and remaining sugar.
- Bake in preheated oven for about one hour or until well risen and golden brown.
- Serve hot or cold with cream custard.

Steps:
- Preheat the oven to 190°C, 375°F, Gas Mark 5.
- Place a saucepan over a moderate heat.
- Add the butter, apples and cinnamon and cook gently for 3-4 minutes.
- Pour the custard into the saucepan and heat through, stirring occasionally.
- Remove from the heat.
- Lay half the cake slices into a 1litre ovenproof dish and pour over the apple custard.
- Spread the marmalade over the remaining cake slices and cut each piece in half, diagonally.
- Lay the slices down the centre of the dish.
- Cover the dish with foil.
- Place on a baking sheet and bake in the preheated oven for 50 minutes.
- Heat a grill to a hot setting.
- When the pudding is cooked, place under the hot grill for 1 minute to colour the surface.
- Serve hot or cold with cream or ice cream.
