1/2 cup white grape juice
2 sticks cinnamon
1 pared lemon, rind of
3/4 lb green cooking apple, peeled, cored and diced
3/4 lb pear, peeled, cored and diced
1/2 lb seedless green grape, peeled
3/4 cup Dijon mustard
1/2 teaspoon dark mustard seeds

Steps:

  • Place wine, grape juice, cinnamon sticks and lemon rind in a saucepan.
  • Bring to a boil. Simmer for 5 minutes.
  • Discard lemon rind. Simmer for a further 5 minutes. Discard cinnamon sticks.
  • Add fruit. Simmer for 15 to 20 minutes or until just tender. carefully blend in mustard and seeds.
  • Simmer for further 2 to 3 minutes. Pour into warm sterilized jars. Seal.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix oats, flour, 3/4 cup brown sugar, and butter together in a bowl until crumbly.

2 pounds firm Macoun apples (6 apples)
1 teaspoon grated orange zest
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed orange juice
2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
3/4 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1 cup old-fashioned oatmeal
1/2 pound (2 sticks) cold unsalted butter, diced

Steps:

  • Preheat the oven to 350 degrees F.
  • Peel, core, and cut the pears and apples into large chunks. Place the fruit in a large bowl and add the zests, juices, sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch oval baking dish.
  • For the topping: Combine the flour, sugars, salt, oatmeal, and butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed for 1 minute, until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.

Steps:

  • Heat oven to 200 degrees. Place a Silpat (French nonstick baking mat) or parchment paper on a baking sheet. Using a mandoline or a very sharp knife, slice apple and pears into very thin translucent rounds (slice pears lengthwise). Do not remove seeds or cores.
  • Place sugar on a plate; dip both sides of fruit slices into sugar to coat. Transfer slices to baking sheet.
  • Bake until edges begin to ruffle, about 1 hour. Turn slice over and continue baking until golden brown, about 1 hour more.
  • Transfer chips in a single layer to a wire rack to cool and harden.

1 large Bartlett pear - peeled, cored and diced
¼ cup brown sugar
1 tablespoon vanilla extract
2 teaspoons cornstarch
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
1 pinch salt
1 egg
1 tablespoon water
1 recipe pastry for a 9-inch double crust pie
2 tablespoons coarse granulated sugar, or as needed
½ cup dark chocolate chips

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Stir apple, pear, brown sugar, vanilla extract, cornstarch, cinnamon, nutmeg, cloves, and salt together in a bowl. Whisk egg and water together in a small bowl.
  • Roll pastry out on a lightly floured surface; cut into circles with a 3- to 4-inch round cookie cutter. Spoon a small amount of apple mixture onto center of each pastry circle; fold circles in half and press firmly to seal edges. Crimp with a fork, if desired. Place pies on prepared baking sheet.
  • Cut 3 small slits in top of each hand pie with a sharp knife. Brush surface of pies with egg mixture; sprinkle with decorating sugar.

1 large egg, beaten
2 tablespoons coarse sugar, optional

Steps:

  • In a large skillet, bring apple juice and maple syrup to a simmer over medium heat. Split vanilla bean lengthwise. Using the tip of a sharp knife, scrape seeds from the center into skillet; add bean. Cook until liquid has reduced slightly, 1-2 minutes. Add apples and pears; cook and stir until fruit is just tender, 7-9 minutes. Remove from heat; add lemon zest and juice. Cool completely. Remove vanilla bean pods., Preheat oven to 400°. On a lightly floured surface, unroll pastry sheets. Roll each sheet into a 12-inch square; cut each sheet into 4 equal squares. Spoon 1/4 cup apple mixture diagonally over half of each square to within 1/2 in. of edges. Moisten pastry edges with water. Fold one corner over filling to the opposite corner, forming a triangle; press edges with a fork to seal. , Transfer to greased baking sheets. Brush tops of pastries with beaten egg; prick tops with a fork. If desired, combine coarse sugar and cinnamon; sprinkle over pastries. Bake until golden brown, 18-20 minutes.
