2/3 cup reduced-fat mayonnaise
1/2 cup chopped sweet onion
1 celery rib, chopped
1 teaspoon minced fresh parsley or 1/4 teaspoon dried parsley flakes
3/4 teaspoon pepper
1 can (12 ounces) albacore white tuna in water, drained and flaked
4 medium tomatoes, cut into wedges

Steps:

In a small bowl, combine mayonnaise, onion, celery, parsley and pepper. Stir in tuna. Serve with tomato wedges.

Ingredients

1 can (12 ounces) tuna, drained and flaked
4 ounces cheddar cheese, cut into 1/4-inch cubes
1/2 to 3/4 cup mayonnaise
1/2 cup chopped celery
1/4 cup chopped onion
2 tablespoons chopped dill pickle
1 tablespoon dill pickle juice
1/4 teaspoon salt
1/8 teaspoon each celery seed and pepper
5 medium tomatoes, cored
Bacon bits, optional

Steps:

In a bowl, combine tuna, cheese, mayonnaise, celery, onion, pickle, pickle juice, salt, celery seed and pepper. Chill. Cut tomatoes, not quite through, into quarters; place on individual plates and spread apart. Spoon 1/2 cup salad into each. Garnish with bacon bits if desired.

1 can (5 oz.) white tuna in water, drained, flaked
1/4 tsp. dill weed
2 green onions, sliced, divided
1 tomato, cut into 4 slices

Steps:

Combine cottage cheese, tuna, dill and half the onions.
Place 2 tomatoes on each of 2 salad plates.
Top with tuna mixture and remaining onions.

1 (12 ounce) can albacore tuna in water, drained and flaked
2 green onions, chopped
1 stalk celery, diced
¼ cup pimento-stuffed green olives, chopped
2 tablespoons capers, chopped
¼ cup blanched slivered almonds
1 dash Worcestershire sauce
½ cup mayonnaise
¼ cup sour cream

Steps:

In a mixing bowl, combine tuna, green onions, celery, green olives, capers and almonds.
In a small bowl, whisk together mayonnaise, sour cream and Worcestershire sauce.
Blend together dressing and tuna mixture. Serve on bed of lettuce or with croissant as a tuna salad sandwich.

This was something I made up while living on a student budget in Paris, France. This is another example of how the greatest things that come out of the kitchen are not a result of planning. I just looked around at what I had in the cupboard, put them together and it worked! It is a great starter or side dish. One rule though...you MUST add the blue cheese! It is what brings everything together. I kind of think of this as the French version of a caprese salad.

Ingredients

2 medium tomatoes, sliced
50 -100 g canned tuna
2 tablespoons blue cheese
1 -2 tablespoon vegetable oil
1 small lemon, juiced
1/8 teaspoon dried thyme
1/8 teaspoon ground pepper

Steps:

Arrange the tomato slices on a plate.
Take the tuna out of the can and arrange on top of the tomato slices.
For the dressing: If you buy tuna packed in oil, use a few teaspoons of that from the can and add the lemon juice. Otherwise use any vegetable oil or even olive oil, (vegetable oil is obviously more budget friendly) No need to add salt because the cheese is plenty salty.
Crumble the blue cheese on top of the tuna and tomato. I used Roquefort, which is A-M-A-Z-I-N-G! But any strong blue cheese will work.
Dress the salad simply with the lemon and oil and sprinkle over the thyme and pepper.

1 lemon, juiced
½ small red onion, diced
1 small yellow bell pepper
1 small red bell pepper
3 celery stalks, diced
2 carrots, grated, tops reserved for dressing
12 oz solid white canned tuna in water, drained
8 oz dried farfalle pasta, cooked acording to package instructions
¼ cup celery, finely chopped
½ teaspoon whole cumin seeds, lightly toasted
¼ teaspoon ground turmeric
2 ½ tablespoons white vinegar
1 tablespoon dijon mustard
⅓ cup Hellmann's® Mayonnaise
1 teaspoon kosher salt
¼ teaspoon red pepper flakes
½ teaspoon freshly ground black pepper
4 large fresh basil leaves, finely chopped
¼ cup fresh chives, finely chopped
reserved carrot tops and stem, finely chopped

Steps:

In a large bowl, combine the lemon zest, lemon juice, and red onion. Let pickle for about 15 minutes.
Remove the stems from the yellow and red bell peppers. Cut off the sides of the peppers, keeping the seeds and tops intact in the centers, then slice into strips and dice into small pieces. Transfer the bell peppers to the bowl with the pickled onion, along with the diced celery, grated carrots, tuna, and pasta. Toss to combine.
Make the herb mayo dressing: In a small bowl, combine the cumin seeds, turmeric, white vinegar, Dijon mustard, Hellmann's® Mayonnaise, salt, red pepper flakes, black pepper, basil, chives, and carrot tops. Whisk until smooth.
Pour the dressing over the pasta salad and toss until well coated.
Garnish with the celery leaves and serve immediately.

I developed this recipe after I tasted cream cheese in a salmon salad sandwich at a funeral lunch in Canada many years ago. Add baby spinach or lettuce leaves, and serve on your favorite bread or as a wrap in a tortilla.

3 pints cherry tomatoes (about 2 pounds), halved
1/2 cup olive oil, plus more for drizzling
1 large shallot, thinly sliced
3 garlic cloves, thinly sliced
2 to 3 sprigs fresh oregano
2 tablespoons red wine vinegar
Kosher salt and black pepper
1 pound casarecce or other short pasta
2 (6-ounce) jars tuna packed in olive oil, drained

Steps:

Toss cherry tomatoes, olive oil, shallot, garlic, oregano and vinegar in a large bowl. Season with 1 teaspoon salt and 1 teaspoon black pepper and let marinate for at least 15 minutes.
Bring a large pot of water to a boil and season generously with salt.
Add pasta to the boiling water and cook until al dente, 8 to 10 minutes, depending on the shape and brand of pasta. With a spider or slotted spoon, strain pasta directly into tomato mixture and toss to combine. Season to taste with more salt and pepper.
Stir in flakes of tuna and serve with a drizzle of olive oil on top. The pasta can be served hot or at room temperature.
