Provided by Damaris Phillips

Categories     side-dish

Time 13h50m

Yield 6 to 8 servings

Number Of Ingredients 17

2 tablespoons coconut oil
4 leeks, white parts only, sliced thin and washed to remove dirt
2 medium carrots, chopped
2 stalks celery, chopped
8 ounces shiitake mushrooms, chopped
4 cloves garlic, diced
4 sprigs fresh thyme, chopped, or 2 teaspoons dried thyme
2 bay leaves
1 tablespoon Creole seasoning blend (should be spicy)
5 cups mushroom broth
One 12-ounce bottle dark beer
One 14-ounce can diced tomatoes with juices
2 cups dried pinto beans, soaked overnight and drained
2 to 4 tablespoons red miso paste (depending on saltiness)
Coarsely ground black pepper
Sour cream, for garnish
Sliced green onions, for garnish

Steps:

  • Heat the coconut oil in a Dutch oven set over medium heat. Add the leeks, carrots and celery, and saute until soft, about 5 minutes. Add the mushrooms, garlic, thyme, bay leaves and creole seasoning; stir, and saute 2 more minutes.
  • Add the mushroom broth, beer, tomatoes and pinto beans. Bring to a simmer, then cover with a tight-fitting lid and cook until the beans are tender, about 1 hour.
  • Uncover the pot and cook until the liquid is reduced by one-third, about 15 minutes. Season with 2 tablespoons of the miso paste and some pepper. Taste and add more miso as needed.

SPICY CREAMY CHICKPEAS WITH RUNNY EGGS AND PROSCIUTTO

Spicy Creamy Chickpeas with Runny Eggs and Prosciutto image

A fragrant tomato-cream bath gives humble chickpeas a taste of the good life.

Provided by Andy Baraghani

Categories     Bon Appétit     Chickpea     Dinner     One-Pot Meal     Prosciutto     Milk/Cream     Paprika     Rosemary     Egg

Yield 2 servings

Number Of Ingredients 12

2 Tbsp. extra-virgin olive oil
2 garlic cloves, thinly sliced
1 sprig rosemary (optional)
1 (15-oz.) can chickpeas, rinsed
1 Tbsp. tomato paste
1 tsp. sweet smoked paprika
1 cup heavy cream
Kosher salt, freshly ground pepper
2 large eggs
4 thin slices of prosciutto
Flaky sea salt (optional)
Flatbread (for serving)

Steps:

  • Heat oil in a medium skillet over medium. Cook garlic and rosemary (if using), tossing, until garlic is golden brown and rosemary crisps up slightly but isn't browned, about 30 seconds for rosemary and 2 minutes for garlic. Transfer rosemary to a plate.
  • Add chickpeas, tomato paste, and paprika to skillet and cook, stirring often, until coated, about 1 minute. Mix in cream, season with kosher salt and lots of pepper, and bring to a simmer.
  • Crack eggs into chickpea mixture and season them with kosher salt. Cover (a baking sheet works great if you don't have a matching lid) and cook until white parts of eggs are set but yolks are still runny, about 2 minutes. Remove from heat and drape prosciutto around eggs. Crumble rosemary on top and sprinkle with sea salt, if desired, and more pepper. Serve with flatbread.

RED'S PRIZE WINNIN' PINTOS

Red's Prize Winnin' Pintos image

Make and share this Red's Prize Winnin' Pintos recipe from Food.com.

Provided by Nimz_

Categories     Beans

Time 6h15m

Yield 6-8 serving(s)

Number Of Ingredients 8

6 canned jalapeno peppers (or suit yourself)
1/2 teaspoon cayenne pepper
1 teaspoon black pepper
1 tablespoon chili powder
2 lbs dried pinto beans
1/2 lb salt pork (cubed 1x1x1/4-inch)
2 medium onions (chopped)
2 garlic cloves (minced)

Steps:

  • Soak the beans overnight.
  • Drain, place in a pot, and refill with water to cover the beans and add everything else. Cook very slowly for 4 to 6 hours.
  • When the beans are done, test for salt and adjust to our preference.
  • **Note this is an adopted recipe so I'm not going to change it but I've made these a couple of times and would give this as an alternative.
  • Use half water and half chicken broth to cook your beans in, adding more chicken broth and water as they cook to get the right amount of liquid you want.
  • Try using chipotles 2-3 instead of the jalapeno peppers.
  • Use fresh jalapeno peppers instead of the canned.

ENFRIJOLADAS PINTOS

Enfrijoladas Pintos image

In this take on enfrijoladas, chipotle makes the pinto bean sauce slightly smoky and spicy, perfect for dipping pan-fried blistered corn tortillas. If you don't have pinto beans on hand, use black or mayocoba beans for equally delicious results. Top this dish with quick-pickled red onion, which tastes even better if you make it the day before. For a perfect weeknight meal, garnish with a dollop of sour cream, avocado slices, and a sprinkle of toasted pepitas and cilantro leaves. Time 45m

Yield 4 servings

Number Of Ingredients 17

1 small red onion, halved and thinly sliced
1/2 cup lemon juice
1/4 teaspoon dried oregano
1/4 teaspoon red-pepper flakes
1 dried bay leaf
1 1/2 tablespoons kosher salt
Pinch black pepper
1 whole dried chipotle morita or meco chile
1 3/4 to 2 cups drained pinto beans, from 1 (15-ounce) can or homemade
1 1/4 to 3 cups vegetable broth or bean cooking liquid
Kosher salt
4 tablespoons neutral-flavored oil, plus more as needed
12 corn tortillas
4 tablespoons sour cream, vegan if you'd like
4 tablespoons roasted salted pepitas
1/4 cup cilantro leaves
2 ripe medium Hass avocados, pitted, peeled and sliced

Steps:

  • Make the pickled onion: Combine the onion, lemon juice, oregano, red-pepper flakes, bay leaf, salt and pepper in a medium bowl and mix. Let sit at room temperature for 30 minutes to allow the flavors to meld together and the onion to soften. The onion can be covered and refrigerated for up to 3 to 5 days before serving.
  • Make the enfrijoladas: Place the chipotle in a small bowl and add enough hot water to cover (see Tip). Let stand to rehydrate for 10 minutes. Once rehydrated and pliable, drain and remove the stem. To a blender or food processor, add the beans, 1 1/4 cups vegetable broth or bean cooking liquid, and the softened chipotle. Blend until completely smooth. Add more of the broth, 1/4 cup at a time as needed, to make a smooth bean sauce. Season to taste with salt.
  • Heat a medium pot over medium-low. Add 2 tablespoons oil and heat, then add the bean mixture. Stir to incorporate; the mixture may sizzle and spatter. Allow the mixture to come to a low simmer and reduce heat to low to keep warm. Add additional liquid as needed to thin to a cheese-sauce consistency.
  • Heat a comal or cast-iron skillet over medium heat. Add 2 tablespoons oil, then add 1 to 2 tortillas and lightly fry until softened and blistered, 30 to 60 seconds per side. Transfer the fried tortillas to a plate, and continue to add more oil to the comal as needed to cook all the tortillas.
  • Use tongs to slightly submerge each fried tortilla in the hot bean mixture one at a time. Flip the tortilla over to coat the second side, then fold the tortilla in half, pull out of the pot and place on a dinner plate. Continue this process until all the tortillas are coated in the enfrijolada sauce, dividing them among 4 plates. Spoon any remaining bean sauce over the top of the tortillas. Garnish with the sour cream, pickled red onion, pepitas, cilantro and avocado.

PINTO BEANS RANCHEROS

Pinto Beans Rancheros image

From Safeway Brand Pinto Beans package: "This delicious Mexican-style side dish is mild enough to compliment a variety of entrees. Try it with enchiladas and fajitas, roast chicken, hamburgers and meatloaf." I have made this recipe and my family has asked that I never serve "regular" refried beans again.

  • Gilda. Why make things more complicated than they need to be? The gilda is one of the simplest pintxo dishes in Spain, but one of the most classic. In fact, legend says it was the first pintxo ever invented!
  • Piquillo Peppers Stuffed with Tuna. Step aside, padrón peppers! When it comes to pintxos, it’s all about the piquillos. These little red peppers pack some serious flavor.
  • Smoked Salmon and Cream Cheese Pintxo. This smoked salmon and cream cheese pintxo is a Basque classic. All you need is a handful of simple ingredients: a hearty baguette, cream cheese, and smoked salmon, and you’ve got one delicious appetizer!
  • Classic Spanish Tortilla Pintxo. The good news about pintxos is that many typical tapas recipes can easily be turned into them—just add a skewer and some bread!
  • Anchovy Pintxo. Forget everything you thought you knew about anchovies. In the Basque Country, these little fish are done right: caught fresh from the Cantabrian Sea and cured to perfection in salt or vinegar.
  • Goat Cheese and Caramelized Onion Pintxo. Goat cheese and caramelized onion is one of those made-in-heaven flavor combos. The sweetness of the onion is the perfect complement to the tanginess of the goat cheese, and a great choice for vegetarians.
  • Gambas al Ajillo Pintxo. Gambas al ajillo is one of the most iconic tapas dishes in Spain. It’s one of the few recipes you’ll see all across the country, served in small clay pots filled with sizzling garlic oil.
  • Bacon-Wrapped Dates Pintxo. Everyone needs a simple go-to appetizer recipe in their back pocket for when guests come around. Whether it’s a dinner party or a pintxos feast, these bacon-wrapped dates are the perfect party pleaser!
  • Pinchos Morunos. These juicy and flavorful Spanish pork skewers aren’t actually a Basque dish—they have their roots in the south of Spain. But they’ve since made their way up north, and are now a common fixture on pintxos bar menus throughout the region.
  • Roasted Asparagus with Ham. Bright green asparagus takes an even more delicious turn in this guaranteed crowd-pleaser. Wrap each stalk in top-quality cured Spanish ham, sprinkle with Manchego cheese, and pop it in the oven for a few minutes to roast—pintxos recipes don’t get any easier than this!
