MEATLOAF WITH A CREOLE SAUCE

Meatloaf with a Creole Sauce image

This is a perfect entree for a comfort meal! Add some mashed potatoes, a green vegetable or salad! Beautiful and perfect. Meatloaf is so easy and absolutely delicious. I like to add a "creole sauce" (that's what I call it) while serving. This makes it even more deliciouis.

Provided by Becky Spoon

Number Of Ingredients 21

1 small 0nion, diced
1 small/medium Belll pepper/diced
1 tbsp Olive oil
1 tbsp Butter
1 1/2 lb Ground beef or combination of ground pork and beef
1 cup Bread crumbs or more if needed
1/4 cup Tomato sauce
2 eggs
1 tsp salt
1/2 tsp pepper; dried or fresh thyme
1/2 cup Ketchup
2 tbsp Worcestershire sauce
2 tbsp Brown sugar
1/4 cup tomato sauce
1/4 cup Ketchup
1 tsp Worcestershire sauce
2 tbsp brown sugar
1/2 cup bell pepper/diced
1/2 cup onion/diced
1 14.5 ounce stewed or diced tomatoes
salt and pepper to taste...add a pinch of sugar if tomatoes are too acidic.

Steps:

  • For the Meatloaf:Preheat the over to 350 degrees. Sauté the onion and bell pepper in the olive oil and butter combination until tender and set aside to cool. Meanwhile place the ground meats in a bowl, add the egg, breadcrumbs, tomato sauce, seasons and the onion and bell pepper once cooled. Combine all the ingredients. I use my hands...add more bread crumbs if needed. You want the meatloaf to hold together.....not too loose.....you want it to form a nice loaf in a pan or in a sheet pan. Mold into a loaf, place on a sheet pan, top with the topping sauce coating the top and sides, bake 30 or 45 minutes until center is firm or internal temperature reaches 160. Let the meatloaf rest a few minutes and top with the creole sauce. Slice and Serve!!

CREOLE MEATLOAF

Creole Meatloaf image

I don't care for Weetabix cereal as a cereal itself, but the recipe on the box I saw years ago for using the cereal in meat loaf is insanely yummy! I figured, people put corn flakes in meat loaf, so why not try this. I add green bell peppers as well as the red called for.

Provided by mysticchyna

Categories     Meat

Time 1h5m

Yield 6 serving(s)

Number Of Ingredients 9

2 lbs ground beef
1 egg
4 Weetabix (crushed)
1 cup chili sauce, divided (I use Heinz)
1/2 red bell pepper, finely chopped, divided
1/2 green bell pepper, finely chopped, divided
1 small onion, finely chopped, divided
1 teaspoon vegetable oil
1 teaspoon chopped garlic

  • Place in a large loaf pan, pat firmly.
  • Bake at 375°F, for 35 minutes.
  • Meanwhile, fry the remaining peppers, onion, and the garlic in the oil until tender. Stir in the remaining 1/2 cup chili sauce, and simmer about 5 minutes.

CREOLE MEAT LOAF

Creole Meat Loaf image

This meat loaf is not spicy, despite the name. It is a mix of ground beef and pork, with a nice creole sauce on top. It originally came from an old Southern Living cookbook, but the recipe has been changed significantly since its publication. If you would like, put the cheese of your choice on the meatloaf before adding the creole sauce. Also, feel free to substitute creole seasoning for the salt and pepper!

CREOLE MEATLOAF WITH TOMATO GRAVY RECIPE - (4.4/5)

Creole Meatloaf with Tomato Gravy Recipe - (4.4/5) image

Provided by kimvess

Number Of Ingredients 19

1-1/2 pounds of very lean ground beef*
1 tablespoon of butter
1 medium onion, chopped fine
1/2 cup of green bell pepper, chopped fine
1 stalk (rib) of celery, chopped fine
3 cloves of garlic, minced
1/4 cup of canola oil
2 tablespoons of all purpose flour (for the roux)
1 (15 ounce) can of tomato sauce
1 can of water
1 tablespoon of Worcestershire sauce
1/2 cup of evaporated milk
1 large egg
1/2 cup of seasoned bread crumbs
1/2 teaspoon of kosher salt
1/4 teaspoon of freshly cracked black pepper
Pinch of cayenne
Additional flour, for coating
1 tablespoon of canola oil, for browning

Steps:

  • Preheat the oven to 350 degrees F. Place the ground beef in a large bowl; set aside. Heat the butter over medium and cook the onion, bell pepper and celery until tender; add the garlic, cook for another minute, transfer to a plate to cool. Wipe out the skillet, and add the 1/4 cup of canola oil. Heat over medium high heat and stir in the flour. Cook and stir until it is browned, remove from the heat, and let cool slightly. Slowly whisk in the tomato sauce, water and Worcestershire and return to the heat. Bring to a boil, reduce heat and simmer for 15 minutes. Whisk together the milk and egg; stir in the bread crumbs and add that mixture to the ground beef. Add the salt, pepper, cayenne and cooked veggies; mix gently and shape into a loaf. The mixture should be firm. If it is breaking apart, return to the bowl and additional bread crumbs until it holds together. In a large, oven safe skillet, heat the tablespoon of oil over medium high heat. Carefully transfer the meatloaf to the skillet and sear on all sides, turning carefully. Pat any cracks that form back together. Note: You can skip the searing process if you prefer. Once all sides have browned, pour the tomato gravy over the meatloaf and transfer the entire skillet to a 350 degree F oven for about 1 hour, basting occasionally. When an instant read thermometer reads 160 degrees F the meatloaf is done. Allow to sit for about 10 to 15 minutes before slicing. Serve slices with a bit of the tomato gravy spooned over the top. Cook's Notes: This works best with an extra lean ground beef, so don't be tempted to try a higher fat ground beef because it just won't hold together for the searing process
