CRISPY "FRIED" ICE CREAM



Crispy

"Fried" ice cream with no frying involved. Just like what they serve in some Mexican restaurants.

Number Of Ingredients 6

18 ounces corn flake cereal ((1 box))
1/2 cup unsalted butter ((1 stick), melted)
1/2 cup granulated sugar
2 tablespoons cinnamon
36 cups vanilla ice cream ((3 - 1.5 quart tubs))
Toppings (optional): sauces (Caramel or Cajeta, Hot Fudge, Strawberry Sauce, Honey, Maple Syrup, etc), whip cream, cherries

Steps:

  • Preheat oven to 425 degrees F.
  • Place cereal in a food processor and process until finely crushed (or place cereal in batches in sealable plastic bags and crush with rolling pin or pan). Place crushed cereal in a large mixing bowl and mix in butter. Stir in sugar and cinnamon until well blended.
  • Place cereal mixture on baking sheet(s) in thin layer and bake at 425 degrees F for 10-15 minutes or until golden brown, stirring after every 3-5 minutes. Remove from oven and cool completely.
  • Line some baking sheets or plates with wax paper (or parchment paper). Make about 36 (1/2 cup) or 18 (1 cup) scoops of ice cream and place on baking sheets. Don't worry if they're not round scoops, just divide out the ice cream and get the scoops back in the freezer fast! Freeze about 30 minutes or until hard.
  • Working in batches (leave some of the ice cream scoops in the freezer so that it doesn't melt), roll ice cream into balls (I like to use disposable plastic gloves), roll in crushed cereal then put balls back in freezer. Freeze another 30 minutes or until hard or ready to serve. Serve with your favorite toppings.

1/2 cup butter, cubed
2 cups crushed cornflakes
1-1/2 teaspoons ground cinnamon
3 tablespoons sugar
1-3/4 cups heavy whipping cream
1/4 cup evaporated milk
1/8 teaspoon salt
1 can (14 ounces) sweetened condensed milk
2 teaspoons vanilla extract
Optional: Honey, whipped cream and maraschino cherries

Steps:

  • In a large skillet, melt butter over medium heat. Add cornflakes and cinnamon; cook and stir until golden brown, about 5 minutes. Remove from heat; stir in sugar. Cool completely., In a large bowl, beat cream, evaporated milk and salt until it begins to thicken. Gradually beat in condensed milk and vanilla until thickened., Sprinkle half the cornflakes onto bottom of a greased 9-in. square baking pan. Pour filling over crust; sprinkle with remaining cornflakes. Cover and freeze overnight. Cut into bars. If desired, serve with honey, whipped cream and cherries.

Vanilla ice cream with a crunchy coating. Serve with whipped cream, honey, and cherries.

Number Of Ingredients 5

1 quart vanilla ice cream
3 cups crushed cornflakes cereal
1 teaspoon ground cinnamon
3 egg whites
2 quarts oil for frying

Steps:

  • Scoop ice cream into 8 - 1/2 cup sized balls. Place on baking sheet and freeze until firm, about 1 hour.
  • In a shallow dish, combine cornflakes and cinnamon. In another dish, beat egg whites until foamy. Roll ice cream balls in egg whites, then in cornflakes, covering ice cream completely. Repeat if necessary. Freeze again until firm, 3 hours.
  • In deep fryer or large, heavy saucepan, heat oil to 375 degrees F (190 degrees C).
  • Using a basket or slotted spoon, fry ice cream balls 1 or 2 at a time, for 10 to 15 seconds, until golden. Drain quickly on paper towels and serve immediately.

RICE KRISPIES ICE CREAM DESSERT

This always bring's back chilhood memories. It's an old time dessert that my mom made quite frequently. You may also use CornFlakes or RiceChex instead of the Krispies.

Number Of Ingredients 6

1 cup brown sugar
1/2 cup butter, softened
2 1/2 cups Rice Krispies, crushed
1/2 cup nuts, chopped
8 ounces shredded coconut
1/2 gallon vanilla ice cream or 1/2 gallon butter pecan ice cream

Steps:

  • Mix all together. (omitting the icecream).
  • Spread 1/2 the mixture in a buttered 9x13 inch baking pan.
  • Slice icecream (softened) on top.
  • Sprinkle with remaining crumbs over the top.
  • Refreeze.
  • It's already quite sweet, but if you're so inclined, drizzle with a little of your favorite ice-cream topping. Butterscotch, caramel, or hotfudge all work.

1/4 cup packed brown sugar
1 tablespoon butter, melted
1 teaspoon ground cinnamon
2 cups crushed cornflakes
Optional: Whipped cream and caramel ice cream topping

Steps:

  • Preheat oven to 350°. Using a 1/2-cup ice cream scoop, place 8 scoops of ice cream on a baking sheet. Freeze until firm, about 1 hour. Meanwhile, combine brown sugar, butter and cinnamon. Stir in cornflakes. Transfer to an ungreased 15x10x1-in. baking pan. Bake until lightly browned, 4-6 minutes. Cool completely., Roll ice cream balls in crumb mixture. Cover and freeze until firm, at least 1 hour. If desired, serve with toppings.
