1 cup mayonnaise
2 teaspoons Hidden Valley® Original Ranch® Seasoning, Salad Dressing & Recipe Mix Packet
¾ cup bread crumbs
4 chicken breast halves

Steps:

  • Preheat oven to 400°F. Line a rimmed baking sheet with parchment.
  • In a medium bowl, combine mayonnaise and seasoning mix until well-blended. Place the breadcrumbs in a shallow bowl or plate.
  • Dip each breast in the mayonnaise mixture, turning on all sides until well-coated, shaking off any excess. Lay the chicken in the breadcrumbs and turn until evenly coated.
  • Arrange chicken on the prepared baking sheet and bake approximately 25 minutes, or until an internal temperature of 165°F or until juices run clear. (For chicken breasts weighing 6 to 8 ounces, increase cooking time to 40 to 45 minutes.)

1 package of Purdue Fit and Easy boneless skinless chicken breasts (3 breasts)
1 package of Hidden Valley Ranch Salad Dressing & Seasoning Mix (dry mix) 2oz. package or 56g
1 cup of Kellogg's Special K cereal (plain, original)
2tbs of a light margarine
1tbs of jarred minced garlic

Steps:

  • This recipe makes enough for 3 servings (1 breast per serving)
  • First pre-heat oven to 350 and set aside a glass baking dish
  • Start off by rinsing the chicken breasts in cool water and place on a paper towel to remove excess moisture and set aside.
  • Next, place 2tbs. of margarine and 1tbs of minced garlic in a glass or ceramic microwaveable bowl and heat in microwave for about 20sec. (or until butter is just melted). Stir mixture with a spoon and set aside.
  • In a separate glass bowl, place 1c of Special K cereal, and use a 1c plastic measuring cup to crush the flakes-be sure not to crush too much or the chicken will not be as crispy.
  • Then place the dry Ranch seasoning into the crushed cereal and stir together well with a spoon.
  • Take1 breast at a time and place chicken into bowl with margarine/garlic mixture until well coated.
  • Then place the chicken into the cereal/ranch mixture until well coated and then place into the baking dish.
  • Sprinkle any cereal mixture remains over the chicken in the baking dish.
  • Bake in oven for 35min-making sure that chicken is no longer pink.
  • Enjoy!

¾ cup all-purpose flour
2 eggs (beaten)
1 cup Panko breadcrumbs
½ cup grated parmesan cheese
1 ounce ranch seasoning mix

Steps:

  • Preheat the oven to 375°F. Spray a 9x13-inch baking dish with cooking spray. Set aside.
  • Season both sides of the chicken breasts with salt and pepper.
  • Set out 3 shallow bowls. In the first bowl, mix the flour and a pinch of salt and pepper together. Add the eggs to the second bowl. Mix the breadcrumbs, parmesan cheese, and ranch seasoning mix together in the third bowl.

I use the boxed Kellogg's cornflake crumbs for this, you can usually find them next to the Shake and Bake chicken coating mixes, if you are not able to find the boxed crumbs then you can use a processor to crush the cornflakes, reduce the baking time to 25 minutes for strips and for tenders bake only 20 minutes --- LOW-FAT OPTION use a healthy butter alternative in place of butter

1 (10 3/4 ounce) can cream of chicken soup
1/2 cup milk
1 (1 ounce) envelope ranch dressing mix, I use Hidden Valley
1 lb boneless skinless chicken breast half, about 4
1 1/2 cups tortilla chips, finely crushed
1 -2 tablespoon margarine or 1 -2 tablespoon butter, melted

Steps:

  • In a shallow dish mix soup, milk and dressing mix.
  • Reserve 1 c for sauce.
  • Dip chicken into soup mixture ( I let marinate over night, but not necessary).
  • Coat with tortilla chips.
  • Place chicken on a greased baking sheet.
  • Drizzle with margarine or butter.
  • Bake at 400 degrees F for 20 min or until chicken is no longer pink.
  • In a small saucepan over med heat, heat reserved soup mixture to a boil.
  • Serve over or with chicken.
