Sweet and savoury Pad Thai with ALL the toppings is way easier than it looks. A fantastic street food dish you can make at home in 30 minutes.

6 oz (175g) dried 5mm-wide flat rice noodles
1 tsp sesame oil
1 3/4 oz (50g) pot of potted brown shrimp (the teeny tiny shrimp in butter) (* (see note 1))
1 1/2 tbsp vegetable oil
1/4 tsp salt
pinch of garlic salt
20 large raw king prawns (peeled and de-veined)
3 cloves garlic (peeled and minced)
½ tsp dried chilli flakes
2 eggs (beaten)
2 tbsp fish sauce
1 tsp tamarind paste
2 tbsp sweet chilli sauce
1 tbsp soft brown sugar
2 tsp shrimp paste
2 tbsp dark soy sauce or tamari for gluten free
1 tbsp Thai preserved radish (chopped (optional))
1/3 cup 40g roasted peanuts, coarsely chopped
4 spring onions (scallion (halved, then finely sliced lengthways)
3 1/2 oz 100g fresh bean sprouts (mung bean sprouts)
2 tbsp roughly chopped coriander/cilantro
2 limes (sliced into wedges)
1 fresh red chilli (sliced)
Extra chopped coriander/cilantro (spring onions, chopped peanuts and chilli flakes)

Steps:

  • Boil a large pan of water and add the noodles. Turn off the heat and leave to stand for 3-4 minutes. Drain, then rinse with cold water until cold. Drizzle on the sesame oil and toss together - to prevent the noodles from sticking.
  • Heat a large wok over a high heat. Add the potted shrimp in butter, vegetable oil, salt and garlic salt. Fry for 2-3 minutes until lightly golden.
  • Remove the shrimp with a slotted spoon and place in a bowl - leaving the oil in the wok.
  • Add the king prawns, garlic and dried chilli flakes to the oil in the wok. Fry for 2-3 minutes until the king prawns just start to turn pink.
  • Whisk the eggs together and add to the prawns.
  • Fry, stirring often with a spatula until the eggs are just scrambled.
  • Turn down the heat to medium and add the noodles, potted shrimp, fish sauce, tamarind paste, sweet chilli sauce, sugar, shrimp paste and soy sauce/tamari.
  • Toss everything together, heating for about 5 minutes, until the noodles are hot. Keep the noodles moving around the wok to stop them sticking, and ensure any pieces of shrimp paste are broken up.
  • Add the preserved radish, peanuts, spring onions (scallions), beansprouts and coriander (cilantro).
  • Toss together and cook for a further 1-2 minutes, until the beansprouts are just heated through.
  • Serve with lime wedges and top with fresh red chillies. You can also sprinkle on extra coriander/cilantro, spring onions, chopped peanuts and chilli flakes if you like.

Level up a take-out favorite by making this crispy sesame chicken in easy sticky sauce at home. Add rice or noodles for a delicious family dinner.

500 g (1lb) chicken breasts (cubed into bite-size pieces )
1 egg (beaten)
2 tbsp soy sauce
1 cup flour
½ cup cornstarch / cornflour
oil (for frying)
1 tbsp canola / vegetable oil
3 garlic cloves (crushed )
1/3 cup soy sauce
1/3 cup water
¼ cup brown sugar (You could add up to one third cup sugar if you prefer the sauce to be sweeter.)
2 tbsp rice vinegar / lemon juice
2 tsp sesame oil
2 tbsp sesame seeds
1 tbsp cornstarch / cornflour (mixed with 2 tbsp water )

Steps:

  • Place the chicken in a bowl then add the egg and soy sauce. Massage the egg and soy into the chicken well then allow to sit for a few minutes while you make the sauce.
  • To make the sauce, heat the oil in a large pan then cook for garlic for 30 seconds until fragrant.
  • Pour in the soy sauce, water, sugar, vinegar and sesame oil. Bring to a simmer then pour in the cornstarch slurry. Reduce the heat then simmer until the sauce is thick and glossy. Remove from the heat and set aside.
  • Heat enough oil to fry the chicken in a deep pan or pot. Place a wire rack over a sheetpan.
  • Combine the flour and cornstarch in a separate bowl then coat the chicken in the flour mixture, making sure each piece is completely covered.
  • Carefully add the chicken to the hot oil, cooking in batches to avoid over-crowding the pan, until the chicken is golden brown and crisp. Remove with a slotted spoon and allow to drain on the wire rack while you cook the remaining chicken.
  • Place the pan with the sauce back on the heat and bring to a simmer. Add the fried chicken and sesame seeds to the pan then toss to coat the chicken in the sauce. Season to taste with more soy, vinegar or sesame oil as necessary then serve over rice or noodles.

Crispy prawn toast is infinitely better when it's homemade. Top slices of bread with a simple whizzed up prawn mixture, coat in sesame seeds and fry to golden perfection. You can have these ready in less than 20 minutes!

200 g (7oz) raw prawns (shrimp) ((de-veined and de-shelled) see *Note 1*)
1 tsp minced ginger
2 cloves garlic (minced)
1 egg white
2 spring onions (scallions) (chopped)
1 tsp light soy sauce
¼ tsp white pepper
¼ tsp salt
3 pieces thick sliced white bread
6 tbsp sesame seeds
Vegetable oil for frying (around 1 litre)
1 tbsp chopped fresh coriander (cilantro)
2 tbsp sweet chilli dipping sauce

Steps:

  • Add the raw prawns, ginger, garlic, egg white, spring onions, light soy sauce, salt and white pepper to a mini food processor and blitz until you get to a paste.
  • Slice the bread with 2 straight cuts across each piece from corner to corner leaving you with 12 triangles of bread (no need to remove the crust).
  • Spread the prawn paste evenly across one side of each of the bread triangles. It should be roughly 1 tbsp of paste for each triangle.
  • Place the sesame seeds onto a plate or in a shallow bowl.
  • Dip each of the triangles, paste side down, into the sesame seeds so you get a nice even covering of sesame seeds on the paste. Place on a plate ready for frying.
  • Heat the oil in a wok or deep frying pan over a high heat, until it's hot but not smoking. Pro Tip: You can test this by placing a small chunk of bread into the oil, if it floats and starts to sizzle then the oil is hot enough.
  • Working in two to three batches (see *Note 2*), add the triangles into the oil, paste side down and cook for 1-2 minutes, turn, then cook for another 30-60 seconds, until the bread is golden and the prawn paste is cooked through.
  • Place on a plate or tray lined with a couple of pieces of kitchen roll to soak up any excess fat.
  • Repeat until all you prawn toast is cooked.
  • Sprinkle on some fresh, finely chopped, coriander (optional) and serve with the sweet chilli dipping sauce.

2 tablespoons all-purpose flour
2 tablespoons cornstarch
¼ teaspoon baking soda
¼ teaspoon baking powder
2 tablespoons low-sodium soy sauce
1 tablespoon dry sherry
2 tablespoons water
1 teaspoon vegetable oil
1 dash sesame oil
1 pound skinless, boneless chicken breast meat - cubed
1 cup chicken broth
1 cup white sugar
2 tablespoons distilled white vinegar
2 tablespoons dark soy sauce
2 tablespoons sesame oil
1 teaspoon chile paste
1 clove garlic, minced
¼ cup cornstarch
½ cup water
1 quart olive oil for frying
2 tablespoons toasted sesame seeds

Steps:

  • Sift flour, 2 tablespoons cornstarch, baking soda, and baking powder into a bowl. Pour in low-sodium soy sauce, sherry, 2 tablespoons water, vegetable oil, and a dash of sesame oil; stir until smooth. Stir in chicken until coated with the batter, then cover, and refrigerate for 20 minutes.
  • Meanwhile, bring chicken broth, sugar, vinegar, dark soy sauce, sesame oil, chile paste, and garlic to a boil in a saucepan over high heat. Dissolve 1/4 cup cornstarch into 1/2 cup of water, and stir into boiling sauce. Simmer until the sauce thickens and turns clear, about 2 minutes. Reduce heat to low, and keep sauce warm.
  • Heat olive oil in a deep fryer or large saucepan to a temperature of 375 degrees F (190 degrees C).
  • Drop in the battered chicken pieces, a few at a time, and fry until they turn golden brown and float to the top of the oil, 3 to 4 minutes. Drain on a paper towel lined plate. To serve, place fried chicken pieces onto a serving platter, and pour the hot sauce overtop. Sprinkle with toasted sesame seeds to garnish.

  • Whilst the oil is heating, place the egg in one shallow bowl and the cornflour in another shallow bowl. Add the flour, salt, pepper, garlic salt and paprika to another shallow bowl and mix together.
  • Dredge the chicken in the cornflour, then dip in the egg (make sure all of the chicken is covered in egg wash), and finally dredge it in the seasoned flour. Add to the wok and cook on a high heat for 6-7 minutes, turning two or three times during cooking, until well browned.
