AWESOME CRISPY BAKED CHICKEN WINGS
Incredibly tasty variation of baked chicken wings with no marinade - just butter, garlic, and herbs. Great for the low-carb eater!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line a shallow baking dish with aluminum foil and grease lightly.
- Cut tips from chicken wings and discard. Cut between the joint to separate each wing into 2 pieces.
- Combine butter and garlic in a small saucepan over low heat; heat until butter is melted and garlic is fragrant, 3 to 5 minutes.
- Mix Parmesan cheese, parsley, oregano, paprika, salt, and pepper together in a shallow bowl.
- Dip chicken wing pieces in melted butter mixture; coat with Parmesan cheese mixture in the bowl. Arrange in the prepared baking dish. Drizzle any remaining butter on top.
- Bake in the preheated oven until skin is browned and juices run clear, about 1 hour.

Steps:
- Prepare the chicken wings and pat them dry with paper towels.
- Line a baking sheet with aluminum foil.
- Place a wire rack in the baking pan.
- Spray racks with cooking spray to prevent sticking.
- Place the flour in a large mixing bowl.
- Add the baking powder. Stir well to combine.
- Place the wing pieces in the flour mixture. Toss well to fully coat.
- Place wing pieces on the wire racks, leaving space between each piece.
- Let wings rest on wire rack for 20 minutes while the oven warms up.
- Pre-heat the oven to 400F degrees.
- Place pan of wings in oven. Bake 45-60 minutes, or until brown.
- Remove from oven when done.
- If desired, flip the wings and return to oven to brown the bottom sides.
- Toss wings in hot sauce if desired.
- Serve warm.
- Enjoy!

- Beat the eggs and buttermilk together in a mixing bowl until smooth. Mix in the chicken wings, cover, and refrigerate 30 minutes. Combine the flour and crushed crackers with the pepper, thyme, cayenne pepper, salt, and garlic powder in a large mixing bowl.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
- Remove the chicken wings from the buttermilk marinade, and discard the remaining marinade. Allow the excess buttermilk to drip from the wings, then press into the bread crumbs to coat.
- Cook in batches in the preheated deep-fryer until the breading is golden brown on the outside, and the chicken wings are no longer pink at the bone, about 10 minutes per batch. Drain on a paper towel-lined plate, and season to taste with salt before serving.

- Heat oven to 350°F.
- In a small bowl, whisk together 1 tsp. each black pepper and cayenne pepper, seasoned salt, red pepper flakes and smoked paprika. Mix 1 Tbsp. seasoning mix and crushed crackers in a pie plate and set aside.
- Sprinkle the wings evenly with the remaining seasoning mix. Cover and refrigerate at least 1 hour.
- Whisk eggs, hot sauce, mustard and the remaining black pepper and cayenne pepper in a separate pie plate. Dredge chicken wings into the egg mixture, then into the crushed cracker mixture. Place in greased shallow baking pan.
- Bake 35 to 40 min. or until golden brown and done, turning after 20 min.
- Mix remaining ingredients together in small bowl. Serve with wings.

CAMPFIRE CHICKEN WINGS

- Preheat a grill for cooking over medium heat.
- Combine the chicken wings, oil, lime juice, seasoning mix and 2 tablespoons water in a resealable bag and toss well to coat. Spread out a large sheet of aluminum foil, then pour the contents of the bag into the center. Fold the foil over in half to cover and crimp the edges to seal.
- Place the foil packet on the grill and cook for 25 minutes. Open the packet carefully, watching out for steam. Transfer the wings to the grill and cook until marked on both sides, about 2 minutes more per side.
- Arrange the wings on a plate and garnish with the scallions, cilantro and lime wedges.

- Add the chicken and toss until each piece is coated.

- For the wings: Preheat your oven to 450 degrees F. Line a rimmed baking sheet with foil and brush the foil with the oil.
- Pat the wings dry with paper towels, then sprinkle with the baking powder and toss to evenly coat in a large mixing bowl. Spread the wings evenly on the prepared baking sheet. Bake until golden brown, crispy and cooked through, 25 to 30 minutes, flipping halfway through.
- For the dry rub: Combine the brown sugar, salt, black pepper, granulated sugar, paprika, chili powder, garlic powder, onion powder, cumin, cayenne and celery seeds in a small bowl.
- Remove the wings from the oven and add to another large mixing bowl. Season well with some of the rub, and then toss to coat. (Reserve the remaining rub for another use.) Serve immediately.

I personally like my Hot Wings deep fried and extra crispy. I came up with this recipe after getting tired of the same ol' messy wings with goopy skin. Substitute with your favorite wing sauce, but I always preferred the tangy taste and slight kick of Crystal Hot Sauce. I usually mix Crystal Hot Sauce with a bit of Crystal Extra Hot or Tabasco.

- Take thawed chicken wing portions and place in ziplock bag.
- Pour hot sauce on wings for desired flavor and heat.
- Shake to coat chicken entirely.
- Marinate for at least 2 hours in the refrigerator.

- In a bowl, toss ¼ cup (30 grams) of cornstarch and the chicken wings together until fully coated. Transfer the wings to a wire rack and let rest and dry out for 20 minutes, ideally in the fridge if you have space.
- In a medium bowl, whisk together the remaining ½ cup of cornstarch, the flour, paprika, garlic powder, cayenne, baking powder, salt, and pepper. Gradually whisk in the water, breaking up any lumps and mixing until smooth. The batter should be slightly runny.
- Heat the oil in a large pot until it reaches 350°F (180°C).
- Coat chicken wings in the batter, shaking off any excess. Add the wings to the oil in batches, cooking for 8-10 minutes until golden brown. Transfer the chicken wings wot a wire rack set over a paper towel-lined baking sheet.
