CROCK POT BLACK-EYED BEANS AND HAM RECIPE

Steps:
- Place the leftover ham bone into the slow cooker.
- Add the rinsed and cleaned black-eyed beans to the crock pot.
- Next add the diced onion, minced garlic, and diced tomatoes. Add the salt, pepper and bay leaves to the slow cooker.
- Add the chicken broth to the crock pot making sure all the ingredients are covered with broth. Add more chicken broth if needed.
- With a large spoon mix the ingredients the best you can around the ham bone. Making sure all the black-eyed beans are submerged in broth and not sitting above the broth on top of the ham bone.
- Place the lid on the crock pot and set the temperature to low. Slow cook the black-eyed beans for 8 to 10 hours.
- Once done carefully remove any pieces of the ham bone from the crock pot before serving.
- Serve over white rice, with collard greens and cornbread for a traditional Southern New Years meal.

Steps:
- Add soaked and rinsed black eyed peas to slow cooker.
- Add the remaining ingredients and cook 6 hours on high (8-10 hours on low).
- Remove ham/pork hock and let cool. Reduce slow cooker heat to low or warm.
- Once ham/pork hock is cooled, separate meat from fat and bone and add back to slow cooker in small pieces.
- Stir and serve hot.

CROCK-POT SOUTHERN BLACK-EYED PEAS WITH HAM HOCK
Steps:
- Gather the ingredients.
- Place the peas in a large saucepan or Dutch oven and cover with water to at least 3 inches over the peas. Bring to a boil, reduce heat, then simmer for 15 minutes, drain, and reserve.
- Place the ham hock, onion, celery, carrots, bacon, cayenne pepper, and garlic in the slow cooker. Add 3 cups of water.
- Cover the ingredients and cook on high for 1 hour.
- Add the drained peas to the slow cooker.
- Set the crock pot on low, cover, and cook for 5 to 7 hours, stirring halfway.
- Once the cooking time is done, remove the ham hock from the pot, pick the meat, and shred it or chop it depending on your preference. Add the meat back to the peas.
- Taste for seasoning and add kosher salt and freshly ground black pepper as needed. Stir well.
- Serve the peas with your favorite sides and enjoy.

- Drain soaked black eyed peas and place in the bottom of a 6 quart slow cooker.
- Then pour tomatoes over black eyed peas and add garlic, water, bouillon, peppers and stir well.
- Nestle ham bone down in black eyed peas, season with salt and pepper and cover.
- Cook on low for 8-10 hours or until the black eyed peas are tender, stirring a few times over the cooking period.

- 1. Rinse peas. Drain and place in Crock Pot.
- 2. Pour in chicken broth. Add water to bring the liquid just to the top of the peas.
- 3. Bury the ham bone down into the peas. (If you don't have a bone I use chunks of ham and it works just as well.)
- 4. Add the chopped onion, bay leaves, can of Rotel tomatoes, and garlic powder.
- 5. Cover and set Crock Pot to low for 8 hrs.
- 6. At that time, remove bone. Remove any meat from the bone. Cut into bite-sized pieces (you want about two cups total).
- 7. Add ham to the Crock Pot. Recover and continue to cook for 2 more hours.
- 8. Remove bay leaves. Serve with cornbread and enjoy!
- 9. Note: If you do not use a ham bone and have only chunks of ham then just cook on low for 10 hrs and increase the amount of ham to about 3 cups. I use a 6 qt Crock Pot and it is full when all ingredients are added. If you are having trouble with room in the pot you can adjust the liquid to less.

HAM AND BEANS (CROCK-POT)
This is how I have been making my ham and beans for years. . .I think you either love these or hate these!!! Total comfort food for me, as I make them very similar to my dad's recipe which I had growing up. Perfect served with corn bread on a cool fall or winter day. I add 3 T of Andrea's Sauce (a savory steak marinade with flavors of worchester, garlic, and onion), but Recipezaar does not recognize it. This freezes well, so don't be afraid to serve it once and freeze the leftovers for later!

- Rinse and sort thru beans (has anyone ever really found a rock in these?). Cover with water and let sit overnight.
- In the morning, drain water, rinse again and place beans in the crockpot. Dump in all of the other ingredients (except ham bone) and give it a few good stirs.
- Put the ham bone in the crockpot, cover and cook on high for 6-8 hours.
- Remove the bay leaf, ham bone and fish out any bones that may have fallen off during cooking. Stir the beans a few times. Remove 1 cup of the beans and place in a bowl, mash them with a potato masher or back of a spoon, then return to the beans and stir; this helps thicken it up a bit.
- Take off any meat left on the ham bone, chop and return it to the crockpot.
- Stir again and serve!
