This is one of my favorite recipes. Easy to make, healthy, and full of flavor. Just put all the ingredients in a slow cooker and let the machine do the work. There are infinite variations as to how to use the finished product, and your family is guaranteed to like each one.

2 pounds skinless, boneless chicken
2 tablespoons taco seasoning mix
1 cup diced tomatoes with habaneros (such as RO*TEL® Hot)
1 cup finely chopped onion
½ cup finely chopped celery
½ cup shredded carrot
1 cup prepared salsa
¼ cup water

Steps:

  • Put chicken into the crock of a slow cooker. Sprinkle taco seasoning over the chicken. Layer diced tomatoes with habaneros, onion, celery, and carrot over the chicken, respectively; top with salsa. Pour water over the entire mixture.
  • Cook on Low until the chicken is easily shreddable, 6 to 8 hours. An instant-read thermometer should read 165 degrees F (74 degrees C).
  • Shred the chicken with 2 forks and stir with the salsa mixture.

Quick, healthy and delicious. Just pop the four ingredients into the Crock-Pot in the morning and you'll have a great-tasting meal for dinner. This would also be great for larger gatherings.

4 boneless skinless chicken breasts
32 ounces salsa (I use 2- 16 oz. jars)
1 (14 1/2 ounce) can corn, drained
1 (14 1/2 ounce) can black beans, drained
flour tortilla
sour cream
guacamole
lettuce
tomatoes
cheese
salsa

Steps:

  • Place first four ingredients in crock pot.
  • Cook on low 6-8 hours.
  • 30-60 minutes prior to serving, remove chicken, shred and return to crock pot.
  • To serve, use chicken mixture as filling inside tortillas.
  • Add desired condiments.

1 sweet onion, sliced and separated into rings
1 (5 pound) whole chicken
1 (20 ounce) jar salsa

Steps:

  • Spread onion rings into the bottom of a slow cooker crock. Place chicken onto onion layer with breast-side facing down. Pour salsa over the chicken.
  • Cook on High until no longer pink at the bone and the juices run clear, about 5 hours. An instant-read thermometer inserted into the thickest part of the thigh near the bone should read 165 degrees F (74 degrees C).
  • Remove the chicken from slow cooker, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before cutting.

We went on a trip over Labor Day with some friends of ours and they made this for dinner one night. I made it again the next weekend for our big family dinner we have once a month. I received compliments from everyone! Try it, it is so easy. These are the measurements I used. There were 6 adults (we each ate at least 2) and 3 kids (they ate maybe 1 1/2 between them) and we had tons of extras. Next time I will cut it not quite in half for that size of a group. My servings and yields are just estimates because we had so much left over-hard to gauge. I used thawed chicken when I made it.

6 boneless skinless chicken breasts (can be either thaw or frozen)
2 (14 ounce) jars salsa (if you want it a bit drier, use less-you can always add more later)
1 (15 1/4 ounce) can black beans, drained
1 (15 1/4 ounce) canned corn kernels, drained
18 -24 flour tortillas (The uncooked kind are the best-cook just before serving)
avocado
olive
shredded lettuce
instant Spanish rice, I use Lipton's Spanish Rice
sour cream
diced tomato
shredded cheese

Steps:

  • In the crock pot, place the chicken breasts and the salsa on top. Heat on high for several hours (mine took about 4 1/2 to 5 hours).
  • About 15-20 minutes before serving, shred the chicken with a fork and add the beans and corn, mixing to combine. Continue cooking until the beans and corn are warmed through.
  • Serve on flour tortillas with whatever garnishes you want to add.
  • Eat like a burrito. Enjoy!
