16 oz pasteurized processed cheese product (cubed)
16 oz cream cheese ((2-8 oz pkgs) softened and cubed)
16 oz jar salsa
1 oz pkg taco seasoning mix
1 lb ground beef (browned and drained)
corn or tortilla chips

Steps:

Put all your ingredients in your 2.5-quart crock pot except for your chips (I used my 2.5-quart polka dot crock pot)
Cover and cook on low for 1 - 1 1/2 hours (make sure you stir it frequently)
Serve with your chips

1/2 cup taco sauce
1 teaspoons ground cumin
1 can (15 ounces) fat-free refried beans
1 cup shredded lettuce
1 cup shredded fat-free cheddar cheese
1 medium tomato, diced
1/4 cup chopped ripe olives
1/4 cup chopped green chiles
Tortilla chips

Steps:

In a large bowl, beat cream cheese and sour cream until smooth. Stir in taco sauce and cumin; set aside. , Spread the refried beans over the bottom on a serving platter or 13x9-in. dish. Spread cream cheese mixture over the beans, leaving about 1 in. uncovered around the edges. Top layer with lettuce, cheese, tomato, olives and chiles. Serve with tortilla chips.

1 teaspoon vegetable oil
1 lb ground chuck
1 (1 1/4 ounce) package taco seasoning mix (I use Old El paso)
1 (10 ounce) jar medium salsa (I use Chi-Chi's brand)
1 lb Velveeta cheese, cubed
1 tablespoon sour cream
1/4 cup red onion, chopped
1 garlic clove, minced

Steps:

In skillet, brown ground chuck in oil and chop finely with a spatula. Add chopped onion and garlic and saute' just long enough to sweat but not brown. Drain.
Put meat mixture in crock pot and add all other ingredients. Stir and cover. Heat on "low" for 2-3 hours, stirring after the first hour.
Garnish with finely chopped green onion stems, if desired.
